Say that Mr D was shot with an unusual gun and amo and maybe the one who investigates would know this person owned that unusual gun in his collection of guns. That would be a good reason to take the head.
My feeling Mrs D was taken throw everyone off track and have people think she was the killer, it worked because the Sheriff even said they looked at Mrs D being the killer at some point.
