Q: Because this is a death penalty case (Orange Park, FL), did he have no choice but to plead not guilty?

ETA
If he could have plead guilty, would the judge have been able to sentence him to death? If not, what other options would be available to the judge.

You can plead guilty in a death penalty case, and the judge can still sentence you to death (or life without parole) if you do.
