Just the other day I caught the middle of a TV show. It was either American Justice or Cold Case Files starring Bill Kurtis. I'm not sure what channel it was on.

The show was intriguing and I didn't catch the title or the name of the show.
The story was about Norman Baird who commited a murder in 1987 in Salinas, CA. Baird killed an off duty CDCR correctional officer that worked at nearby CTF Soledad Prison. I would like to watch this episode again. If someone could help me, I would truly appreciate it.

I remember watching that too. I believe is was Cold Case Files. I think this was the episode:

Cold Case Files - S3:E24. The Hit makers/Favor For A Friend

I looked for a "freebee" on Youtube and Dailymotion and couldn't find it. However if you have cable TV with the A&E package you can watch it here: Watch Cold Case Files Classic Season 4 Episode 4 | A&E

There's not much online about the murder, but I did find these two articles:

Norman Price Baird Jr Denied Parole For 1987 Murder Of Raymond Demel - August 5, 2011

"A Salinas man in prison for a 1987 murder was denied his request for parole this week, according to Monterey County District Attorney Dean Flippo. Norman Price Baird Jr., 52, was denied parole on Wednesday and will not be eligible again for another 10 years, Flippo said Thursday. This was Baird’s first bid for parole following his conviction in 2004 for the March 8, 1987, murder of Raymond Demel."

The next is a well written article by Dan Laidman, of the Monterey Herald:
A Buried Gun Helps Authorities Solve The 15-Year-Old Homicide Of A Seaside Man

Lastly, I found that Norman Baird is still in a California prison. You can find him here: CDCR Inmate Locator

BAIRD, NORMAN PRICE - T01263 - age 61 - 05/10/2004 - Folsom State Prison

He was given another parole hearing last year and I suspect he will soon be released.

This murder was the murder of my father, I am curious about your interest. To my knowledge there was no parole hearing as I was not informed.
