I read somewhere long ago to put a pinch of ginger powder in with the beans while they are cooking to help neutralize the gas producing effect. I always do this when I'm cooking beans, and it seems to help.


I also found this little tidbit on ehow.com:

"Add Japanese kombu, a sea vegetable, to the water when you cook beans to make them more digestible and neutralize their gas-producing effect. Some cooks also use the Mexican herb epazote for this purpose."

P.S. Cass - That British breakfast looks gross. I would never eat beans in the morning, and I hate my eggs sunny side up!!

Try a pinch of ginger and see if that helps make the beans more digestible. You can't taste the ginger, and I do think that it helps.

Every Sunday while growing up, our "brunch" looked exactly like the picture of the "English Fry up" except we had toast, not English muffins.

I always tried to keep the beans away from the egss yolks, because it was gross when mixed.

Now my family will NOT eat beans........but of course everything else.

Some people use beans in their huevos rancheros, some don't...some use black, some refried. Some use poached or fried eggs, we make an omelet, and put it atop the refried beans-on top of the corn tortilla. Omelet includes: cheese, salsa, artichoke hearts. Top with more cheese and salsa, sour cream, avocado and squeeze of lime. Yummy!

Sorry, I stand corrected, yes she did, but since we were discussing Huevos Rancheros I thought she may think they were the same type of cooking.

Actually Ranchero/Ranchera is the sauce the eggs are cooked in (tomatoes, onions, garlic, etc), just like any dish that say Ranchera/Ranchero style like when they put the sauce on top of fish or meat.
