(The heck? Who ISN'T nervous on the stand at a murder trial!? I was nervous when I sat for jury duty and the defense lawyer asked me what I did for a living.)

Only if they provided their phones. Any of them could have deleted texts on their phones, which would mean unless they had them backed up somewhere, LE can't see them. I'm sure the person testifying provided his phone with the texts for evidence.
