Carrot cake! In the time of plague! What could be more welcomed? Please pass me a slice too!

Oh, HK, so sorry you can't go anywhere. However, that being said, I literally go no where. We do pick up take out, and I do grocery pick up. I still go to work every day, some things never stop.

So, I am going to use my new stove. It is a glass top stove, apparently due to the Covid appliances are limited. I am afraid I will scratch it or ruin it.

Thinking about some sort of Shrimp Scampi, ? On rice. Maybe a gumbo. Something warm and yummy. Pretty chilly here today.

Not to worry. There are specific products for maintaining your glass cook top. We're on our second glass cook top stove and have always used Cerama-Bryte liquid cleaner and pads. If you can't get them through a grocery service, try hardware stores. We usually do the Cerama-Bryte at least weekly, and use Windex with paper towel after each use of the stove.

Good information. I am afraid to touch it. All of my pans won't work, I need a new set of pans. I have mostly cast iron, my last stove was gas. Apparently cast iron can scratch the surface or gets too hot.

What pans do you have for your glass top stove?

You need thick bottomed pans so the heat is evenly distributed. I have a few “Green Pans” that are newer. They work good but are not designed for high heat cooking. I also have a few stainless steel pots & pans that the bottoms look like there’s a panel or disc attached. Then I have some like T-Fal with non stick coating that are thick on the bottom.

I use this too. I’ve found it at the grocery store and at Lowe’s. I recently bought a new bottle of it. I’ve also found that Dawn dish liquid is the best for cutting the grease splatter.

So, tonight there was a rare event in the Pirate household!

I always have hated wasting food and even more so now with Covid. Even with just two of us eating we rarely throw out food. Mr Pirate is the best, he will open the fridge and make a whole lunch out of leftover odd bits. Sometimes it’s a little scary, but I don’t judge.
Back to my story. I tried a new recipe. Maple glazed tofu with veggies and couscous. It made a ton. We both took a few bites and even Mr Pirate said it was just so so. Today we reheated the leftovers. We choked down a bowl and the rest went down the disposal. Can’t remember the last time that happened.
I won’t share the recipe here. :confused:

Ha ha! We have had a few of those!

I sautéed extra large shrimp in garlic, with a spritz of lemon juice, and a few shakes of Penzeys seasoning. We had it with bread and a few oranges.

First dinner cooked on my new stove. Worked okay. And easy clean up.

I’ve never heard of Penzey’s spices! I might need to get a few trial bags to try.

Well, now I have to tell you my favorite ones

1. Arizona seasoning, I love this one, sort of peppery and citrus.
2. Cake spice, mix of cinnamon, nutmeg, cardamon, mace, allspice.
3. BBQ 3000
4. Zatar
5. Tandoori seasoning

Enjoy. I usually purchase in bags, and refill my own spice bottles.

Zatar! I discovered zatar this summer. I put that stuff on everything! :D Amazing

During one of his trips to Meijer last week, DH found discounted holiday candies and bought a bag of Hershey's kisses. I'm going to bake peanut butter blossoms today. Below is my standard peanut butter cookie recipe. For the "blossoms", I roll the balls of dough in turbinado sugar, then place them on a baking sheet. The cookies will spread on their own, and as soon as they're removed from the oven, press a Hershey's kiss in the center of each cookie. Yummy!

I made Turkey Shepherd's pie yesterday. We ordered breakfast takeout on Friday after DH got a haircut, and I had a mani/pedi. We always tell them to skip the potatoes, but many times, we get them anyway. We put our breakfast potatoes in a storage container to save for another meal. I spread them on the turkey/vegetable mixture, sprinkled with a little kosher salt and shredded Gruyere cheese. Not as pretty as fluffy mashed potatoes on top the meat mixture, but it was delicious :)
My mom used to make Hershey cookies just like that. I loved them as a kid. What a good memory. And you reminded me to get my Shepard’s pie recipe out. :)

After reading this, I Googled carrot banana bread, and found this recipe:

Now I just need some ripe bananas!
I am gonna get as big as a house with all this good stuff floating around here!!

We had the same last summer too. This is our third lockdown, but I think it will last a couple of months at least and get v strict, v quickly. People did start to bulk buy again last week but I think that eased off.
Hang in there, HKP! I know you are going through a rough patch there. Keep that cupboard stocked and stay safe.

We got a fabulous cookware set at Costco about 10 years ago. Kirkland cookware is comparable to high end brands like Caphalon, AllClad, etc. and was specifically recommended for glass cook tops. I chose the Kirkland set because I liked the "feel" of the handles and the copper bottoms. I also have some Martha Stewart pieces that I bought when we did a complete renovation of our kitchen almost 4 years ago. New kitchen has white cabinets, dramatic black granite, stainless steel appliances, so the "cherry" red Martha Stewart pieces are perfect and practical accents.

@BetteDavisEyes mentioned great choices. I'll just throw in that I most frequently use All-Clad d5, Le Creuset enameled cast-iron (usually my big dutch oven), and two heirloom cast iron skillets. I have had no trouble with scratching the glass top, but YMMV.
