Valentine's weekend, is anyone doing anything? It's not really my thing but Mr HKP usually buys me roses so I thought I should go to some trouble for him.
Our fishermen have been hard hit during the pandemic due to the restaurant industry being largely closed. In areas such as Cornwall, its their primary means of income so they have had to adapt by selling their catch on line. I've ordered some crabs and shellfish from one of them, expecting a delivery from FedEx today. I'm going to set out a fruits de la mer type thing, with lemon mayo, soda bread etc. Prosecco and candles to crank up the romance!

We've had several tv programmes here about Cornish fishing during the pandemic and it's an area we know well, so I think Mr HKP is going to appreciate it (no pressure FedEx!)

DH and I were great fans of Anthony Bourdain and truly miss his various food/travel shows like No Reservations and Parts Unknown. We are looking forward to the Searching For Italy series on CNN. We're also enjoying the PBS Masterpiece series All Creatures Great and Small that airs at the same time, so we'll record that for future viewing.

It looks like a lovely place for a delicious dinner.Due to the weather, DH and I will cancel our dinner reservations for this evening. We picked up an inch of snow overnight, and there is much more coming tonight into tomorrow. As much as we looked forward to a special evening out, it's not worth risking our lives if driving conditions are poor. We had a very nice Valentine's Day dinner at home, and my cherry walnut oatmeal bars are delicious. If you are in the path of winter storms, please be safe and warm.

We’re getting 8-12 inches of snow today through tomorrow morning. I left work early to get home before the roads got too bad, although we already had a good 6” or so on the ground.
I made baked nachos for dinner, using up some leftover diced onions and peppers, and 3 different kinds of leftover cheese. I found black olives and beans in my pantry, and had fresh salsa and sour cream in the refrigerator.
I layered tortilla chips and cheese on a sheet pan, and baked for about ten minutes. Then I topped with diced onions, peppers, beans and olives, and more cheese, and baked until hot and melted. Then I served with fresh salsa, sour cream, and diced green onion.

Too bad you had to cancel, but staying home sounds like the thing to do under the circumstances. Frutti di mare will have to wait for better weather!

We eat baked nachos often, a good way to use up the leftover cheeses and vegetables I always seem to have. It’s always a new adventure because the ingredients vary so much. I always have fresh salsa on hand as I buy it in large containers, and I usually have sour cream too. We like black olives in our Mexican recipes so I buy the 8 pack at Costco. And I always have black beans or refried beans.This sounds wonderful and somewhat similar to the pan nacho that I made last week. I combined ground round with black beans and a taco seasoning packet, then had the worst case of heartburn everFrom now on when I make this, I will season the meat and beans myself so I can control the amount of spice. Pan nachos makes a great appetizer.

Then it is just mix and match a combination of chopped fresh vegetables. If I have fresh lettuce I chop it up and pile it on top of the nachos just before serving.
I have a picture of my oldest daughter at about 18 months old, sitting on the kitchen counter, with a black olive on each finger tip. That was how I taught her to like them. Fun food! LOL!
Today's breakfast - leftovers from Cheesecake Factory - tomato basil chicken pasta and some cheesecake.
Today's lunch - my food prep leftovers: veggie pasta and acorn squash, last of the cheesecake.
I think that is enough calories for 2 days. LOL!!!

DH went to Nino's after his swim today. He told me that he only got one thing that wasn't on my list: A half-off cannoli cream filled paczkiI'll save it for tomorrow. We're eating healthfully tonight: baked cod with spinach, scallions, capers, artichokes, lemon, tomato with rosemary roasted red potatoes.
