That blueberry banana bread sounds tasty! I can also see that flavor combination working well for pancakes or waffles.

The last dessert I baked a while ago was banana bread. Maybe I can give this a whirl and add some more spices, maybe some citrus, and a glaze on top. That can be my weekend project!

Yes, I thought that cinnamon, nutmeg, even cardamom would have been a good addition. But it was tasty just on it's own.

I didn't add a glaze, I sprinkled the top with raw sugar, that makes a crackly, crunchy top.

Let me know what else you add.

Blueberry Banana Bread

This was delicious. I am not overly fond of banana bread, it can be dense and heavy, but this one was very light. I liked the addition of blueberries. Super yum.

I am still trying to find everything from moving...ugh. never again. I have my mixer, but can't find the beaters that go with it. So, I have been mixing everything in the Vitamix. Worked well on this dough. Not so much on the mashed potatoes the other day. Glue?!
I might have to try making this! Sounds good!!

...I'm not sure what I would do with 5 lbs of beef. I've never made or had a shepherd's pie, I think that would be good. Maybe a bolognese sauce?

Both of these would be on my list of how to use 5# of ground beef, along with chili, meatballs, and meatloaf.

Adding to this for me moussaka. I dont eat lamb so cant stick to authentic recipes, but beef works ok as an alternative.

I cooked that package of ground beef, drained it, added it to a can of spaghetti sauce, added a pint of my homemade marinara, added about a cup of baby spinach, and some diced tomato. I boiled some elbow macaroni simply because I have so many bags of it. I added that in and topped it with Parmesan. It was actually very good. Normally when I make pasta sauce I add whatever veggies I have on hand, like steamed squash, zucchini, cut up green beans, etc.

I found my last little frozen dish of taco meat and put it in the fridge to thaw. So it will be tacos tonight, if I feel like eating after treatment today.

Super fun movie, "Chef" on Netflix. Very cute. Now, we are planning on Cubanos and Mojitos for dinner tomorrow.

Chef's Table on Netflix is a gorgeous show. Each episode focuses on one chef. Even if you're not interested in food, it is a beautiful show. So well done. Kids love the cooking shows so I'll have to check out Chef!

Smart lady! More ideas for ground beef I'm thinking of: stuffed peppers, meatballs, lasagna, beef and shells. I am a big fan of Asian food, so I googled some Asian-American recipes with ground beef and ground beef lo mein and Korean ground beef and rice bowls are options if you want to try going that route.

I also don't eat lamb, and I'd never heard of moussaka, so I googled it and it looks like a great use for beef as an alternative.

Do you make the taco bowls or do you buy them?

Sometimes instead of just a little frozen dish of taco meat, I'll use it in meal prep. In one side of the meal dish, is the taco meat and the other side is refried beans with Monterey Jack cheese mixed in. I put it in the fridge to thaw and that night I heat it and assemble my tacos, taco salad, burritos, etc. A lot less to clean up and less dishes to wash.

Make our own. We do corn tortillas.
Mix up the masa and use the press then brown them on the flat top.
Sometimes we put all the ingredients in the middle of the bowl and line the outside with the tortillas.

I am 59 years old and having baby goldfish crackers. They’re helping my metal mouth. That’s my excuse and I’m sticking with it.

These look v more-ish, baby or not.

Sorry you are having treatment which is affecting you like this. Hope you are on the road to recovery.

Only slept 3 hours last night so just before dawn, I made myself regular (not gluten free) blueberry muffins from scratch. I enjoyed them with my hot tea this morning. Yum!

About 9am, I made macaroni and cheese from scratch. That was second breakfast as my kids say.

Sometimes I think I make way too much food but it usually gets eaten, shared or frozen. If you stop by, I will usually send you home with a bite of something.

My friend came over for dinner to help me eat all that macaroni and cheese! I sent her home with a frozen mini strawberry loaf to go with her coffee in the morning. She squealed in delight and said “Yay, I made the cut!” Meaning I shared my food with her. I share with everyone but apparently she’d never been around when strawberry bread was made. LOL!

Parmesan Goldfish are among my guilty pleasures. I crave them occasionally but can't indulge in too many at one time due to my lactose intolerance. When we first started going to Costco, we would buy one of the huge cartons of Cheddar Goldfish almost every visit. I can't eat Cheddar Goldfish any more, but Meijer has carried the large boxes for several years.

Ha! I used to buy the big cardboard carton when the kiddos were little but I rarely ate any back then. For some reason, they just sounded good this week. They were BOGO so now I have 2 bags of them. I've tasted the cookie flavor goldfish once but they don't interest me.

Treatment for the MM is still stable altho the fatigue is annoying. Low iron, low phosphorus, low B-12. Ugh. I feel like I can't get much done because I need to take naps. I haven't even felt like cooking much.

I'm going to thaw my whole chicken this weekend and disassemble it. I bought a box of Chicken Shake n Bake because that sounded good. I haven't had it in years.

I am going to freeze the rest of the macaroni and cheese and I've already frozen half the blueberry muffins.

CSA today: red cabbage, Swiss chard, zucchini, cherries, carrots, green beans.

Last week we got chokecherries, I made chokecherry syrup. Had it on French toast, very yummy.

I am going to make some sweet and sour red cabbage.

I had never heard of chokecherries so I had to look them up!
