We got a lot of food prep done. My oldest is headed home with a side stop to drop off food to her sister.

This morning we made egg cups / casserole. We couldn’t find any flat tater tots for the crust but they’re still delicious. My oldest has to be out in the field tomorrow. That’s means up early and on the water by 8:00am. So she is thrilled to have egg cups on hand.

I grilled a ton of chicken breasts. I marinated them in Zesty Italian dressing for a full 24 hours. We will have wraps and Cesar salad this week.

I grilled kielbasa too and that will be my protein snack this week.

Yesterday I made low sodium bacon. I kept 3 pieces and sent the rest home with the oldest. I always end up tossing what’s left because it’s too much. I was glad to have someone to share it with.

The unbaked gluten free cookie dough also went with the kiddos. I seriously doubt either of them will bake it. They’re famous for eating it right out of the container. Ha!

It is finally enchilada day! I’m making cheese enchiladas with Texas red chili ‘gravy’. We’ll have refrained beans and guacamole/shredded lettuce salad with them.

Everyone stay warm out there.
Oh what type cheese do you use for the enchiladas? They sound so good.

Oh I had enchiladas last week, they are my favourite, much better than fahitas. I serve mines with salad. And use cheddar cheese -

Oh what type cheese do you use for the enchiladas? They sound so good.
I use a Mexican blend (cheddar, colby, monterrey jack) and for creaminess, I add a little shredded Velveeta.

We don't eat a lot of fried food, and almost never fry things at home. I hate the grease smell. But, my husband had something a couple of years ago at his friends house that he really liked; Chicken fried, country style pork ribs. They were on sale the other day so I grabbed a pack. I'm going to try them. But, I think I'm going to use the propane burner outside.

I've only ever grilled them, so I've been looking at recipes online. Hope they turn out as good as he remembers.

Unctious, Umami and Nom sound like nails on a chalkboard to me. I must watch too much Food Network. :p

Guy Fieri's pet word is unctious. I cringe whenever he says it :eek: Many of the FN personalities overuse umami. I'm sick of that word, too.

Now that I have room in my fridge, I made the chocolate cream pie. I’m going to share with a friend.

My daughters coworkers took all the produce I sent her with. I was glad it didn’t go to waste. I still need to parboil my cabbage and get it in the freezer.

My friend made beef veggie soup too and is sharing with her Dad. He’s lost weight since his wife passed away. She is going to make French Onion soup with Swiss cheese next.

I am going to sort all the dry goods, take photos and text them out to my crew. I have way too much. Canned veg, soups, fruits, boxed milk, many types of pasta, brown rice, dry milk, jelly, etc. My kids will let their coworkers know and see if they need anything.

I'm on the "do not fry" list, too. I sautee foods in small amounts of olive oil or canola oil but have never actually fried anything. Fried or greasy foods seem to run right through me, so I've avoided them. DH and I used to enjoy going out for breakfast but don't do this anymore because the food tends to not agree with me. Most breakfast foods are cooked on a flat top where grease from everyone's bacon, sausage, eggs, hash browns, etc. accumulates and is passed on to other orders. Just the thought of hot grease makes me cringe :eek:

Same here on the fried food basis, not a big fan and we dont have a deep fat fryer.

We use rapeseed oil here (sometimes olive oil) which is supposedly a healthy option for low carb and low sugar eating plans.

Canola oil in the US is a type of rapeseed oil.

Loved it!

I agree especially with Yummo! So tired of hearing it.

I don’t know why it became popular to add an O to words. When I was working in clinics parents would call for an appointment for their “kiddo.” Then in the exam room they would say “doggo” as in, “The kiddo was playing with the doggo and tripped, spraining her ankle.” Or something similar.

One of my coworkers always said, “kiddo” and “doggo” and I asked her once why people did. She gave me a puzzled look like why didn’t I know and said, “kiddo” is short for “kid” and “doggo” is short for “dog.”

Ah thats interesting I thought it was sunflower for some reason.

So many restaurants use “handhelds” now. Guess “sandwiches” aren’t classy enough.

My mom used to make a recipe back in the 70s she called “spinach bars.” She served it like a side dish but it is also a great appetizer. I think she found the recipe in Parade magazine that was in with our Sunday newspaper.

I had been searching for her recipe card and hadn’t been able to find it, so I tried several similar recipes I found online. Finally I found one that tastes just like the “spinach bars” she used to make.

Baked Spinach Casserole



SERVES: 8-10

INGREDIENTS

DIRECTIONS
  1. Preheat oven to 350 degrees. Lightly grease a 13 x 9 inch baking dish.
  2. Drain spinach well. Saute onion and garlic in 2 Tbsp of the melted butter.
  3. Mix spinach with eggs, cottage cheese and cheddar cheese, additonal 6 Tbsp butter, and flour. Add sauteed onions and garlic and mix together. Season with salt and pepper.
  4. Pour into prepared dish and bake for 1 hour. Cool slightly and cut into squares.

We do have a fryer and use it rarely since we got the air fryer/convection thing.
I’m not the kitchen gadget collector, that is hubs domain.
We used to do a fish fry with a few couples after a morning of productive fishing.
We eat a lot of fish - grilled, broiled, sautéed. Mostly trout, redfish, flounder.
