@BetteDavisEyes that dinner sounds delicious. So many restaurants here have gone out of business, glad your favorite place is still open.

Places here, are either out of business, or closed due to lack of staffing.

It's so sad to see the closed places. Some favorites near us didn't make it. Staffing is going to be a problem for quite a while, I'm afraid, with omicron all over the place.

I made smashed potatoes and the garlic turned GREEN. Apparently it’s safe and due to a chemical reaction when using older garlic. I’d just bought it, and from Mom’s - which tends to have the best produce. I couldn’t serve potatoes with green clumps, though. Remade with garlic-infused olive oil and a little Parmesan.

That is very interesting about the garlic turning green and I definitely just learned something. Thank you for a valuable PSA.

For Christmas dinner we had Cornish hens. I had never had them. They were good but I don't know that I'd ever cook them. I liked the cornbread stuffing. It was from the Honey Baked Ham store. The spiral sliced ham from Costco was delicious. We've had ham sandwiches for lunch on ciabatta bread - yum! I made pumpkin cream cheese bars. Donna made zucchini brownies but they fell apart. So I put the icing in a pastry bag, inserted the tip, cut a hole and dotted icing on top. They looked just fine and tasted good too.

The high today is going to be 25 so we are planning on making ham and bean soup. We will need to pick up some bread to go with it. Yum.

It will feel good on my sore throat and help my stuffed up head drain. I’ve managed to catch a cold even as careful as I’ve been. It’s not omicron because the symptoms are different.

What is everyone planning for NYE?

We like to do a party of appetizers. Usually cheese, dips, crackers. It will just be the two of us. A very small, exclusive party. My husband likes to drink champagne. Maybe I will have a glass or two this year.

The high today is going to be 25 so we are planning on making ham and bean soup. We will need to pick up some bread to go with it. Yum.

It will feel good on my sore throat and help my stuffed up head drain. I’ve managed to catch a cold even as careful as I’ve been. It’s not omicron because the symptoms are different.

I'm going to make ham and navy bean soup today, too. DH couldn't find a ham steak anywhere, so he got two large, meaty smoked pork chops to flavor the soup.

So sorry that you are not feeling well. Feel better soon!

NYE might end up being just DH and me because my brothers haven't let us know whether or not they'll come for dinner and the Michigan game. I originally planned to have Prime Rib with mashed potatoes, salad, a veggie, and chocolate pound cake for dessert. I will bake the cake today but won't shop for other meal items until my brothers confirm. If it's just the two of us, we'll figure something out. Maybe just appetizers like you suggest, or something simple like BLTs. We have a bottle of bubbly chilling in the garage :)

Unfortunately, Mr HKP has just been in close contact again so we will again be on the testing rollercoaster we had last week running up to Christmas. Luckily it will just be us two anyway (plus master dog ofc) but I wont spend out too much just in case. I feel like doing a rich fruity tagine, with dates and pomegranate. I dont eat lamb tho so will chance it with beef. Couscous and minty yoghurt on the side. And that ginger cake I posted before, havent made that yet. I have a delivery coming on 29th, so I dont need to go out.

Well hopefully my flight will get me home on NYE / NYD. I’m supposed to land at 12:14am. Our normal dish is an appetizer we call nacho dip with nacho chips.

1st layer is a big can of refried beans. 2nd layer is 1 lb cooked sausage, crumbled and drained of grease. 3rd layer is a medium sized jar of salsa. 4th layer is 8 oz shredded Monterey Jack cheese. I bake it in a 8” x 11” glass baking dish at 350 degrees about 20-30 minutes until it is hot & bubbly. We scoop it out with nacho chips and our toppings are diced tomatoes, sliced black olives and sour cream.

Don't forget the black eyes peas for good luck on New Year's Day. Also greens for more cash in the New Year.

I got a half a bowl in. I’m going heat it up again in 20 minutes and try to finish it.

I've been reading/hearing about the many flight cancellations, delays, pax stranded in airports. Your cousins are taking good care of you, but I'm sure you'd probably like to be at home when you're not feeling well. I hope your flight goes as scheduled.

That nacho dip sounds awesome, but I would probably not be able to have much because of the cheese. Nino's has their own 7-layer dip that is chilled and has no meat. In the 70s, I made a dish called "traveling taco" that was similar to 7-layer dip and served with tortilla chips.

Thanks for the reminder. I first learned about these traditions on this thread :) I wonder if there is something that we can eat to get rid of Covid...

Just put chocolate pound cake in the oven. It's dense and very chocolatey. This is the recipe I use: Chocolate Pound Cake Recipe | Trisha Yearwood | Food Network

Still haven't confirmed NYE, but my brothers don't want anything fancy. One brother offered to buy a spiral sliced ham for ham sandwiches. That's easy enough, and I will supplement with pierogis, shrimp cocktail, mini bagel pizzas, and beer. I'll be making soup with the ham bone next week. On New Year's Day, DH and I will probably have beef tenderloins (in freezer) with baked potatoes, salad, with a nice bottle of red wine. Maybe I'll do the black eyes peas with kale concoction that I made last year :D

Our New Year’s Eve will be Mr Pirate and I. We will go out somewhere local to eat and be home early. New Year’s Day the family will get together for our traditional dinner. My dad was Macedonian and so his mom made a traditional Peta. It is much like a spinach pie, with phyllo dough. Made from scratch, layer after layer. My grandma passed the recipe down and now my mom makes it. There will be 16 of us this year so she will make 2! We also have lemon rice soup, a big green salad and dessert. I am bringing the dessert. Maybe a couple of cakes. We have a big crowd so I can even do two different things. Any ideas? It is my next favorite day after Christmas!
