The cheesecake was ok. I don’t think I added enough lemon zest in it this time. We picked off that top layer. The crust was really thick. I think we could get 2 pie crusts out of the mix next time. It will get eaten I’m sure.

Tonight I tried to recreate Greek Fries that they make and sell at the Shell Gas Station. They’ve started serving food inside that is made from a food truck in their parking lot.

I baked the fries, put feta cheese on them, sprinkled basil on top and served with tzatziki. I didn’t add salt tho. They’re pretty close. I will make them again. If you have an air fryer I’m sure you could make the fries crispier than I did.

The container of tzatziki is a lot. I like chicken with it so I will make some tomorrow.

Not trying to be insulting or mansplain anything but for those who have never shelled fresh peas or beans your fingers can get awfully sore after a while. It takes a heap of shelling to feed a heap of folks.
That’s why I haven’t grown them. I wouldn't have the patience to shell enough beans. It’s much easier to buy a frozen bag of baby limas.

I put them in the crockpot in vegetable broth with onion, garlic, salt, & pepper. Then of course gluten free cornbread to go with them. Yum!

This afternoon I went with 3 friends to a Cajun seafood boil restaurant. Two of them had been there before but it was the first time I had ever had a seafood boil.

We are still very conscious of COVID precautions, so we dined in the middle of the afternoon. There was only one other table seated in the entire restaurant, so it was a good time to go.

Our food was cooked and served in large bags, full of assorted seafood, corn on the cob, potatoes, boiled eggs, and highly seasoned buttery “juice.” The server shook each bag over her head before placing it in front of us.

You could select from several seasonings that your food would be boiled in, and I chose fresh garlic, lemon, Cajun. You could also select your spice level, from no spice to extra hot. And I chose scallops and shrimp for my boil, as I am not very adventurous when it comes to seafood. But my friends selected several different seafoods including different kinds of crab, lobster, crawfish, and some other things.

The food was delicious and it was an interesting experience.

Today's food fun was Greek Chicken, modified recipe with what I had on hand, and Greek potatoes. This all started because I didn't want to waste the container of tzatziki.

For the chicken, I didn't have red wine vinegar, I decided on white cooking wine. I don't drink so that was the best I could do. I also did not have cumin or coriander. I marinated the chicken for about 90 minutes and used my grill pan. The chicken I had on hand was small strips which cooked really quickly. They were perfect for dipping in the tzatziki and were delicious. I think my daughter would make it with the other spices.

The potatoes were an odd recipe and seemed like they were just going to be boiled in the oven. There was either not enough potatoes (11x7 dish) or too much chicken broth. Anyway, I did not have paprika either. So after they baked for an hour, I strained them out of their juice and put them in the skillet. They browned up and tasted really good.

We both decided the recipes were keepers, altho modified, even if we'd had all the ingredients, it would be a good meal.

Every summer I wait for the time when we have an abundance of very ripe tomatoes, and I make tomato pie. There are quite a few recipes I’ve seen but I keep mine simple.


Slice and chop enough ripe tomatoes so they they will equal 3 cups. Put them into a colander in the sink, sprinkle lightly with salt, and allow to drain.

Chop a large onion. Caramelize the chopped onion.

Pre- bake a pie crust for approximately 10 minutes.

Shred an 8 ounce bar of cheddar. I like white Vermont cheddar but you can use any cheddar you like.

Mix the shredded cheddar with 1/2 cup mayonnaise, and 1/2 tsp black pepper. Stir in 1/2 tsp hot sauce (if desired) and minced fresh garlic.

Chop 1/4 cup fresh basil.

Poke holes in the bottom and side of a pie crust, then Pre-bake for 10 minutes.

Take the crust out of the oven and spread the cheese mixture into the crust. Layer the onion on top of the cheese, then the (well-drained) chopped tomatoes. Sprinkle the basil on top.

Place another pie crust on top, and make slashed with a knife to let steam out.

Bake at 350 until the top is browned and the pie is bubbling.


I love savory pies, and this is one of my favorites.

I had some leftover tater tots and I used them this morning in garden omelettes.

I sautéed chopped hatch peppers from the garden, and red onion, then added the tater tots and cooked until they were hot. Then I stirred in egg beaten with a few tbsp of sour cream, and cheddar cheese. Then topped with snipped green onions from the garden.

Speaking of omelets, I haven't done this for a while. "Omelet in a Bag" is a fun, fast, and easy way to cook the egg dish. You can customize omelets so everyone gets what they want :) Great cooking activity for children.

First time I ever had one of these Michigan Upper Peninsula delicacies was in the college dorm. The pasties were served with mashed potatoes, gravy, and your choice of vegetable.

:oops: The Cornish will be outraged :D

The story goes that the crimped or folded over part was used as a kind of handle, so the Cornish tin miners back in the day could eat them in the mines.

We had planned to have fish tacos for dinner last night but decided that fish & chips were in order. I will plan a proper British Sunday roast beef dinner in honor of the Queen.

So very sad for our UK members here on Websleuths. My dad was Canadian. He became a US citizen but was laid to rest in his beloved Canada (Windsor, Ontario).

Hmm, fish and chips in honor of the Queen sound good for our dinner tonight too. :) I'm still shocked by what seems like her sudden death. On Tuesday she was looking well (if frail) and smiling in photos, then gone Thursday morning, may she rest in peace.

I'm in north GA visiting my friend who made pizza from scratch tonight. When her and her son went to Italy this past spring, they took cooking lessons. She put the crust ingredients in the "bread machine" thing. Then she made the sauce. She put olive oil on the pan, then laid the crust, spread olive oil again. We added sauce, cheese, tomato slices, Italian Seasonings, more cheese on one. The other had raw sausage, which I had never seen added to a pizza! Plus cheese, Italian Seasonings and turkey pepperoni.

It was good. They don't usually save leftovers because they say it's too soggy. However, I petitioned for saving the rest of the cheese & tomato pizza for lunch tomorrow. I can put it in the oven to crisp it back up. Yum!!

Check out this cake!! We went to breakfast and they had an amazing selection of cakes. They were multi layer and huge! The turquoise one with purple inside was fascinating. We couldn’t find a dessert menu and nothing was labeled.

The fireplace wall was beautiful. I had an omelet with spinach, feta cheese and tomatoes. I think that’s the most perfect biscuit I’ve ever seen. I brought half my meal home.

We went to dinner with friends tonight at a little French bistro-style restaurant. DH and I shared a green salad with goat cheese and a bowl of mussels--delicious! Then shared a dark chocolate pot de creme for dessert--to die for! Never occurred to me to take a photo. :D
