We've been raving about it for months, and now the New York Times is, too.

Freya, a new restaurant that opened in Detroit's Milwaukee Junction neighborhood in late 2021, is the only Michigan business named on the New York Times list of "50 restaurants we love most in 2022."...

I looked at their website and the menu. It looks like fancy food!

Today was a big foodie day for me. I bought Mr HKP lunch for his birthday, and we went back to a beautiful place we haven’t seen since pre lockdown. The restaurant is a 16th century coaching inn, a favourite place of his from “before”. Because of the long Covid, I had to prep by seriously pacing for days before to recharge my battery and it all worked out fine. I was able to walk around the village shops after lunch and it was a fabulous sunny autumnal day. Did snooze on the hour and half journey home though

We ate crayfish and prawn salad, followed by beef Wellington. My dessert, coconut, pineapple and mango panna cotta. Oh and ofc I had a margarita. Lychee, that was a first (I should say he does all the driving these days poor thing). V expensive day, but v special memories so worth every penny.

Sounds like a wonderful birthday for Mr. HKP. I am glad you were able to enjoy the village shops on a beautiful autumn day. I always love a good Margarita!

What a lovely day for you and Mr. HKP! The food sounds fabulous.

I came home from treatment today and my oldest had baked a chicken dish I was given from the food distribution. It was stuffed with a mixture of cream cheese, feta cheese, spinach and spices. It was gluten free too. She made Greek fries with feta, spices with tzatziki to dip them in.

She was upset that she overcooked the chicken. I told her it doesn’t matter, it tasted good.

After going days without power thru Hurricane Ian, we are blessed to have a hot meal.

Please let us know when/if you make it and how it turns out. It looks very elegant and delicious.

Oh apple cake must be the newest thing to catch our attention online today. Probably because it is Fall!! I found this recipe and it sounded good. I downloaded it into a PDF.

I don't have oat flour and I would use all gluten free flour anyway. I wouldn't add the nuts either. I would put it in my little bread pans so I can freeze them. I like a cream cheese drizzle, not a powdered sugar only one.

My oldest is moving to Panama City, FL tomorrow. If I had time, I would have made it today. But we've spent 2 days getting her organized and packed to move.

Ingredients

  • ½ cup butter softened
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2¼ cups flour
  • 1 cup oat flour
  • 2 eggs
  • 1 tsp salt
  • 1½ tsp baking soda
  • 3 Tbsp cinnamon
  • ½ tsp ginger
  • 2 cups unsweetened applesauce
  • 3 cups diced apples
  • 1½ cup chopped pecans
  • 1 cup powdered sugar
  • 2 Tbsp milk
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350 degrees.
  • Grease 9 x 13 inch pan well.
  • In a mixing bowl, combine butter and sugars.
  • Add in eggs, one at a time, and mix well.
  • Add in salt, baking soda, cinnamon and ginger. Mix well.
  • Add in flours, a little at a time, and mix well.
  • Add in applesauce and mix well.
  • Add in apples and pecans and mix lightly, just until incorporated.
  • Spread into pans.
  • Bake for 50-60 minutes, until toothpick inserted in center comes out clean.
  • After the cakes are cooled, mix the powdered sugar, milk and vanilla until smooth. If it seems too thin, add more powdered sugar. It if seems too thick, add more milk.
  • Pour mixture into a plastic baggie or a piping bag and pipe onto cakes.
  • Enjoy.

We enjoyed our first Michigan acorn squash of the season earlier this week. Simple preparation: Butter, salt, pepper, and freshly ground nutmeg. Sometimes I add a splash of maple syrup. Acorn squash is my favorite fall food. I like pumpkin anything, too.

Nino's was featuring boneless rib roasts, so we had a 3.2# roast that rendered several nice slices for each of us. Along with mashed potatoes and salad, it was a very nice dinner for two. Yesterday, I made mushroom barley soup with onion, carrots, mushrooms, barley, and the rest of the roast beef. It's delicious, and there is plenty left for a few more meals. This was my first soup of the season, and I'm looking forward to making many more.

Halloween is coming up soon. What's your favorite Halloween treat? Growing up, my favorite was Snickers, so that is what we usually hand out if we're home for trick-or-treat. I also like Reese's Peanut Butter cups. Least favorite Halloween treat: candy corn. Yuck!

I don't like candy corn either but I do like the fall harvest corn because the bottom is chocolate. I will buy them, freeze them and eat them frozen in the dead of winter. I am weird, I know. LOL!!

I've never seen this candy. Doubt that I'd like it, even with the chocolate layer. Candy corn is sickeningly sweet - that's why I don't care for it.

I love candy corn. I didn’t when I was a child. My favorite Halloween candy was the chocolate candy. We live out rural so we don’t get trick or treaters. But I buy for the church trunk or treat and I always buy the good chocolate candy.

Candy corn and those orange Circus peanuts are abominations.

Hershey's miniatures, Krackel and Mr. Goodbar, were my favorites. Then came Hershey's Dark Chocolate and I never looked back.
