Oh gosh that’s devastating. You deserve that pizza!! I’m sorry. I will hold you in my heart and sending you a virtual (((hug))).

No idea what caused the hinge to fail. I bought this Dell Inspiron in late 2017 so it’s old but a decent computer. Online videos to replace the hinge are above my skill set. I’m not the only one that’s had this hinge fail tho. I’ll call the repair shop and see when I can drop it off.

Now to go water the garden and harvest some Buttercrunch lettuce & romaine. It helps my soul & keeps me sane.
I have a Dell Inspiron that I bought in 2008, it is very heavy and larger than newer laptops. I keep it because it plays DVDs, in fact it plays Blue Ray and has a beautiful picture.

Ny work laptop is an HP Elitebook and it is very lightweight.

I never liked Twinkies either. As you said, they are not chocolate, so what's the point?!
Actually they sell chocolate flavored Twinkies now. I have seen them in the store but haven’t tried them. Probably they still taste like an artificially flavored sponge, only chocolate flavored.

I am a hard-core cheese lover and a Southern gal as well, but I cannot abide pimento cheese in any form or fashion. Just the smell of that or blue cheese makes me feel like puking.
I’ve always lived in midwestern states but I love good pimento cheese. I’ve had some really bad pimento cheese over the years.

This is my favorite recipe, although I have been told that a true Southerner wouldn’t like it because it isn’t authentic.

Hot and Spicy Pimento Cheese

1/2 pound miniature sweet peppers, yellow, orange and red

1/2 cup olive oil

1/2 cup feta cheese crumbles

2 cups sharp white cheddar

1/2 cup roughly shredded Parmesan

1/2 cup mayonnaise, preferably Duke’s

1 teaspoon freshly minced garlic

1 teaspoon hot sauce, preferably Crystal or Louisiana hot sauce

1/2 teaspoon fresh lemon juice

2 tablespoons chives, finely diced

1/2 teaspoon kosher salt

1/4 teaspoon cayenne pepper

1/2 teaspoon smoked paprika

1 teaspoon fresh cracked black pepper

1 teaspoon red pepper flakes

1 teaspoon lemon zest

1. Preheat oven to 500 degrees or the broil setting. Toss peppers in olive oil and spread out evenly onto a baking sheet lined with parchment paper.

2. Place directly under broiler flame in broiler drawer or in oven under the flame, letting peppers blister on all sides. You’ll need to flip peppers over about halfway through cooking. Roasting time should be about 8-10 minutes per side, but check often.

3. Once peppers are roasted evenly on all sides, transfer them immediately to a bowl and cover tightly with plastic wrap. Set aside and let them cool.

4. Once cool, you’ll be able to carefully remove the skins, peeling the blackened areas off. Cut in half and scrape out seeds and membranes, then dice peppers finely.

5. Place the your cheeses into a large bowl and stir until well combined. For a creamier spread, you can use a stand mixer and mix on low for 2 minutes.

6. Once cheese is well combined, mix in mayo, garlic, hot sauce and lemon juice.


7. Mix all your dried spices together to combine well then toss in cheese mixture. Add chives and lemon zest and stir in with the spices until everything is completely combined.

8. Peppers are mixed last, so fold in gently, taking care not to overmix.

9. Refrigerate pimento spread for at least 1 hour for flavors to open up. Serve on toast, burgers, crackers, or eat with a spoon right from the container.

This is a favorite recipe for stuffed squash that is super easy and only takes a few ingredients. As you can see, this recipe I clipped from the newspaper years ago is well used.

Thanks! That sounds good! We'd have to use something other than Bulgar due to wheat allergies. Maybe quinoa. I lightened the photo a tad.

I’m on the wait list to drop it off, maybe later this week, hoping anyway!

Harvested another salad and made a Greek salad for lunch.

I went to Publix and I got white quinoa because I have had it before and liked it. The plastic bin of it was on sale too for like $7.50 or so. I've got to do better with my menu anyway. So I will find other ways to use it. I wasn't sure about the tricolor or the red. I have no idea how they're different taste wise.

After I get my Tday food pickup then I can plan our Tday menu. I'd like to do one of these acorn squash recipes. I plan to use the ground pork I have that in the freezer and had no idea what to do with it. LOL!

Can anyone guess what I'm making for our housemate? It's not food, but I'm bingewatching Nailed It while I crochet... does that count? :D

Also, my partner is cooking bacon and it smells amazing.

I like white quinoa better than red.

I bought more acorn squash yesterday, it was on sale cheap at my grocery store and couldn’t resist.

After we got our Pfizer bivalent boosters yesterday, DH and I stopped at Nino's for a few grocery items and our holiday greens. We selected four decorative evergreen swags with big red bows for our porch and garage lamps. We also got a drop-in for the urn on the front porch. DH is a little under-the-weather after his shot, so we'll hang to swags over the weekend. My arm is a little sore but I'm fine otherwise.

We had a small Nino's Margherita pizza for dinner last night. We've never seen red onions on a Margherita pizza before and picked them off. If DH is feeling up to it, he'll grill burgers tonight. We have avocado, cheese, tomato for toppings with pretzel rolls and leftover roasted potatoes.

We didn't want to spend too much time in the store after getting our shots, but I walked up and down a few aisles to see what's in stock for Thanksgiving. Prices seem high on most of the usual suspects: canned cranberry sauce, jars of gravy, pumpkin puree, stuffing mix, etc. I'm sure stores are trying to offer the lowest prices possible on turkeys, hams, and beef, but prices still seem high. I didn't make it to the dairy aisle, but egg prices have been ridiculously high - even at Meijer. Butter, too, which doesn't bode well for holiday baking.

I'm really glad that I didn't commit to cooking for Thanksgiving this year. I'd be freaking out right about now :eek:

I went to a neighborhood Piggly Wiggly this week thinking prices might be lower. Wrong. A doz. eggs was $4.78! On a brighter note, while shopping at the discount/salvage grocery last week I got a 4 lb box of Sam’s Club butter for $19.99. I plan to use that for holiday baking.

I have friends who have a dozen chickens, and they are very generous to share their eggs with me. I have always appreciated their fresh eggs, but especially now with grocery prices skyrocketing.

Fresh produce prices have gone up so much that I have been planning meals around whatever is on sale. This week I bought honeycrisp apples at one store for .99/pound, and acorn squash, portobello mushrooms, and potatoes at another store.

I have a friend that has chickens. She generously shares her girls eggs. But sometimes I run out before she offers, as was the case this week. Her eggs are so good!
