I have Covid (recovering well) and have mostly lost the ability to smell and taste. Tonight's dinner was very simple based on leftover beef stew. I added some vegetable soup, leftover lima beans, and beef stock, and we had it with sourdough bread. DH said it was good.

Not sure what we'll eat tomorrow. It doesn't much matter much to me what I eat!
Sorry to hear you got Covid- do you know how you got it? Wishing you a belated Happy New Year-- Glad you are recovering well!!!

I don't know, but possibly at a church choir rehearsal on Dec 22 or the Christmas Eve service. The choir been singing maskless for some time. I haven't heard of other choir members getting sick, but that doesn't mean no one did. I wore a mask as usual when out shopping.

Well however you got it, at least you are not feeling too ill, and are on your way to recovery!!!!

Merry Christmas to my favorite foodie friends. I have read and enjoyed all of your Christmas dinner posts.
My sister hosted our annual family party on Christmas Day. This year it was dinner for 21!! Thank goodness she has a big house, complete with a “Butler’s Pantry”. There is no hired butler or cook, just us sisters, moms, grandmothers and daughters cooking up a storm. Among the delights were salmon, beef tenderloin, lentil roast, butternut squash risotto, roasted asparagus, garlic mashed potatoes, baked Mac and cheese, stuffing, green salad and rolls. It was a wonderful day.

What an amazing picture, thanks for sharing! I just cant imagine 21 people being in my house, I dont think it would be possible ha! My dining table fits 4 comfortably, 6 at a push. what a party you must of had. I hope the brothers, dads, grandfathers and sons done the washing up :-)

A great hearty, comforting dinner tonight, mince, tatties, cabbage and peas. It was amazing!

This week I made pulled pork. I put a lot of it in the freezer. But I still have 6 buns so I may take a package out for this week. I made the package of scalloped potatoes but they’re runny, have too much onion and bits of bacon. Not a fan but I did eat some. I made baked beans to go with it instead.

For dessert I made Pumpkin Cream Cheese Bars. I gave away half the pan because they’re so delicious. Entirely too tempting. I used a 9 x 13 dish but should have used an 11 x 7 instead. I could have swirled it better if it wasn’t so shallow.

I also harvested bush beans and spinach today. I still have more beans to harvest but a storm came in.

Brekkie this morning, I'm stuffed hahaha, it was brill. Its bacon, scrambled egg, square sausage, beans, black pudding and tattie scones.

We had brekkie for dinner on Thursday :p . Mr HKP bought some bacon and chipolatas in our local farm shop so we had them with eggs and toast for dinner - he’s working until next weekend so not sure when he thought he was going to have them for breakfast!

I am making a real effort now to stick to a more economical food budget so I’m meal planning around that.

Last night I made crab linguine, using a tub of fresh white crab meat (£5), garlic, chopped chilli, Parmesan and cream. Put some rocket on top for greenery as a garnish. Only takes 20 minutes too which is great.

No I always do it in a crockpot with the seasoning packet. It turns out perfect every time.

I love seasoning packets. I find them really useful in a lot of my cooking.
I especially like the Lipton onion soup mix for my roasts or short ribs.

ie: ranch, taco, chili, hollandaise etc.

Today I learned that "rocket" or rocket greens are the same thing as arugula. Thank you for another new term!

Have we done eggplant/aubergine yet? Or cilantro/coriander?! :p

Yesterday I made an apple crumble cake using a US recipe. I do have measuring cups but oh my word, that was a challenge! Our recipes are in grammes so we just measure everything out on scales.

Beef casserole, parsley mash and veg. I bought a parsley plant as I did pretty well with a basil plant last year. Can't say I tasted it much in my mash though.

Meal prep today was Zucchini Quiche which I overcooked a bit. It’s still good tho. I didn’t even look up a recipe. I used white mixed cheese, sautéed onion & garlic, 10 medium eggs and 4 large eggs because that’s what I had on hand. Kosher salt & white pepper too. I had 2 medium zucchini’s and 2 small zucchini’s. I layered the ingredients to get the flavor throughout.

After I finished I noticed recipes with milk or ricotta cheese. I don’t think I’ve ever put milk or soft cheese in them. My youngest said that would dilute the zucchini flavor anyway. We think they’re delicious.

Next I made low sodium yellow rice from the package. The enchiladas are 3 meatless and 3 with chicken. I had sautéed up a package of chicken so have 4 pieces left. I’ll used them for chicken Cesar salad. I need to go harvest some romaine & more green beans.

We couldn’t decide on a dessert for the week. We want something sweet but not too sweet. Maybe a cobbler not sure. It’s chilly here for FL and comfort food is a must.

I have 3 packages of ground meat. One is white meat turkey, one is chicken and one is pork. If I thaw all 3 and combine them, would they taste weird? I'm thinking chili & taco meat. I hate meatloaf.

I think they would taste great together. I'm thinking maybe a Chili Verde.
