Interesting….What is the chia seed pudding? I mean…. not sure how to ask, but if not desert what is it for? Is it like a meal replacement? TIA
It looked like speckled pudding in the bowl and she eventually added fruit. I suspect her goal was to replace her Greek yogurt that she puts fruit in for breakfast. Maybe she just wanted something different for a change.

This weeks dessert. Lemon cheesecake with strawberries & blueberries on top.
Mmmmm,that looks delish !

Eta- I’m usually partial to cheesecakes of the chocolate or peanut butter variety, but this one looks like it would just hit the spot in the summer.

Chia seeds are very nutritious, they are antioxidant and high in fiber.

Many vegetarians eat chia seeds because they are high in omega 3 fatty acids, instead of taking fish oil capsules.

Chia pudding is an easy way to add chia seeds to your diet, but some people just mix them in water and drink first thing every morning.

You can add them to smoothies too.

Oh ok. I wish I could eat yogurt. I have heard and read about chia seeds in the past but have never tried them.

When I saw the gastroenterologist last winter about my intermittent digestive issues, I told her how much I missed eating yogurt due to lactose intolerance. Since I discovered yogurt in college, I had it almost every morning for many years until I started having problems digesting dairy. She asked if I experienced the problem with Greek-style yogurt, and I said that I gave up eating any type of yogurt because I was afraid that it would cause digestive distress.

A few months ago, Nino's was featuring Chobani Greek yogurt, so I got four cartons of nonfat, plain Greek yogurt to see if I could start eating yogurt again. Turns out that the gastroenterologist was right: Greek yogurt does not cause digestive problems! I have been enjoying plain Greek yogurt with fresh fruit and/or nuts several mornings a week. I haven't had chia seeds for a while and added them to this week's market list. I will add chia seeds to my plain Greek yogurt instead of nuts for added variety and nutrients in my diet.

Interesting! It's nice that you can eat the Greek yogurt without digestive problems.

I wonder what is different about greek yogurt? Great that you can eat that !! I love Chobani but have to admit I take mine with some sugar!

DH remembered that I mentioned getting chia seeds and got a package when he stopped at Nino's after his swim today. I will put them in my Greek yogurt for breakfast tomorrow. We're having mini Naan pizzas tonight: fresh mozzarella, Roma tomatoes, black olives, and basil pesto.

Gluten free pear bread and gluten free banana bread today. Did one batch early before the heat cranked up. After we had a little rain, it cooled off slightly. Then I did the second batch. They’ll go in the freezer.

My oldest will be 30 y/o in 2 weeks. She’ll be visiting St Pete for a long weekend. Her friends annual party just happens to fall on her birthday. She has requested gluten free brownies. I will make them the day before & package them.

During the holidays we used to make goodie bags with individually wrapped cookies, brownies and mini breads. I’m going to do that for the party. There’s a few others who have to be gluten free also. This way they can have treats to take home.

Gluten free spicy chicken sandwiches in the air fryer, made from scratch and easy enough I’ll make again. Also made a cucumber ginger salad that was big hit. Fresh watermelon for dessert. Tomorrow will be grilled ribeyes, fried potatoes and grilled zucchini. I used the leftover spicy bratz and hobo potatoes to make a breakfast taco with some eggs. They were pretty good. Made those in the air fryer too. Need to figure out how to prep those for the week, maybe make a bunch and freeze them.

I like to put chia seeds in my overnight oats. Oats, fruit, chia seeds, milk and yogurt. Put it in jar and store overnight in fridge and it’s ready to go in morning. I change up yogurts or sometimes I can get flavored milk from a nearby dairy.

Well, I don't know what you did with your lettuce, @PayrollNerd , but my partner spontaneously decided to do savoury mince tonight, so I got my mince in lettuce that I'd talked about a few days ago. :D

It was beef, with a bunch of spices and condiments and herbs from the garden, cooked off with carrot and broccoli and zucchini cut up small, eaten on lettuce with microwave packet brown basmati rice, and in my case, with a little sweet chilli sauce.

Just for a moment, I read "savoury mince" as "savoury mice"! Eeek!

It was time for takeout yesterday, so we decided on P. F. Chang's since we hadn't had Chinese for several months. Very disappointing. I usually enjoy dim sum selections because the entrees are too much to eat. My favorite, Veggie Spring Rolls, were very greasy, even after I blotted them with paper towels. Same with the Crab Wantons that DH and I shared. His Shrimp Fried Rice was quite bland; he has leftovers for lunch. We enjoyed the New York Cheesecake which is plenty for two. Not sure we'll get takeout from Chang's again. We look forward to dinner at Picano's later this week. They reopen tomorrow following 10-day closure for July 4 holiday.

Ok last batch of mini breads for the freezer. Banana Pumpkin Bread

This is a new recipe. Gluten free flour (King Arthur). I can’t use pumpkin pie spice. (Ginger allergy) I sprinkled nutmeg & allspice in along with the cinnamon. They sure smell good. No doubt the girls will gobble them up!

Dinner was chili without meat & biscuits. The rain came pouring down & dropped the temperature right before we ate. That was perfect timing. We’re full & comfy. Now the dish fairy needs to arrive & wash up the dishes!

I made a frittata for dinner tonight, trying to use up odds and ends. It was for only the two of us, so I had to reduce the amounts of ingredients in the recipe I used, and it would have been better if I'd used a smaller skillet. I stir-fried sliced onion, yellow squash, and partly cooked red potato in olive oil first, then took them out of the skillet and cooked the squash. I had only 3 eggs so beat them with some half and half. I added the onion and potato to the squash in the skillet and poured the egg mixture over the vegetables, then added some small pieces of cooked bacon. Oh, I forgot to add the grated cheese! Oh well. Put the skillet in the oven for a short time and flipped the frittata onto a plate. We ate almost all of it.

Pulled some papusas out of the freezer that were made by a friend. They didn’t work so well in air fryer so I will hang onto rest until it’s not too hot to cook. Getting close to being out of the camper. Drywall and texture should be done this week. It’s too hot to paint so I’m going to have to get AC hooked up to start on finish work.

We’ve been cooking first thing in the morning and after the sun goes down. It definitely takes more planning.

Tonight is some venison tacos for dinner. I need to figure out some recipes for the medallions. I used to make them in red wine glaze but it’s been so long I have no idea how now. Will have to find some internet inspiration. This weekend we are smoking some ribs and salmon on the grill and I’ll pair it with some cold salads.
