COVID Is most definitely on the increase in the area where I live. I’m stocking up on some of the staples we use in case the grocery stores begin to experience shortages.

It might get to the point that we avoid grocery stores as much as possible. I hope not but want to be prepared in case it becomes necessary.

Saw a report yesterday about a shortage of Clorox wipes and thought, "Here we go again!"

DH and I have started to compile a list of basic staples that we'll purchase so we're prepared for winter and/or Covid, perhaps both. We don't have a lot of freezer space, but we have a large pantry and can stock up on non-perishables that we always have on hand when we can't get to the store. Stocks, canned beans and tomatoes, pasta sauces, rice, noodles, pasta, gnocchi, etc. As long as we have these basics on hand, we can always put together a decent meal that doesn't necessarily have to include meat, poultry, or fish.

I have been entirely too busy to cook anything fun or exotic. We made steak tips again with bok choy because that was easy. Apparently I have yet to figure out how to make the appropriate amount of rice (either too much or not enough) so it was fried rice with veggies and leftover steak tips diced up in it, again super quick and easy. MIL is back so she’s going to make chicken parmesan for us tomorrow. We are trying our hardest to do the finishing work that we can on the barndo. I’ve been staining and sealing cabinets every night. Definitely not quitting my day job.I have electricians, plumbers and trim guys lined up for early October so we have to get all that we can done. Painting walls and ceiling, staining and sealing wood cabinetry and still need to figure out tiling. Not sure if I would ever build again, maybe if I didn’t feel like being cheap and could pay someone else to do it.

I see more people in our area starting to mask again. I always stock up on the cooking essentials in the fall, mainly because there are winter days I don't want to leave the house in the cold and snow!

The one thing I never quite understood is why people would stock up on water during the Pandemic. I get you need to stock up on water during a regional disaster like a hurricane. I don't know about you, but my faucet and electricity worked just fine during the Pandemic:)

I don't know why water would so important either. Unless there was a risk of contamination or your well running dry. Maybe in the winter if your pipes freeze I guess?

Due to my health I cannot drink well water. Apparently it's not filtered to the level my body needs for my disease. Some of my meds are powdered and must be mixed with water. I actually keep a case of water bottles and at least a few one gallon jugs on hand all the time. When we have a hurricane, my kids will fill their camping containers (5-6 gallons each) for me. We put 5 gallon buckets in the tub and fill them too.

Be careful what type of bottled water you use. There is a difference between 'spring', 'purified' or 'drinking' water.

IMO, only purified water is filtered for PFA's

With gallon water you have a choice between the three. Very few smaller water bottles are made with purified water. I know Dansai is purified. I noticed last week at my COSTCO the Kirkland Brand water bottles were purified water.

IMO, only purified water is filtered for PFA's

We buy Kirkland water. Our tap water, while safe to drink, tastes bad, at least IMO.

Distilled water was in very short supply during the height of the pandemic. Our grocery stores would have completely empty shelves where their distilled water should have been.

It was my birthday recently, and instead of a cake, I made myself brownies.

It was a new recipe I hadn't made before, and they turned out very well!


I don't have the premade spice mix they used, but I did have a jar of pumpkin spice mix I made a couple of years ago from individual spices to a recipe I don't know if I have any more, so I just used that and it worked great. I also didn't bother converting the US tablespoons to Australian - they're different, our tablespoons are FOUR teaspoons, not three - so it may have been overspiced to some folks, but we were just making it for me and my partner, and we put ten heaping teaspoons of ginger in our gingersnaps, so we were absolutely fine with more pumpkin spice and more coffee flavour. Naturally, this was made with gluten free flour, too. We use White Wings Gluten Free Flour Blend, generally, if we can get it.

As per usual, given my SLOOOOOW oven, I had to cook it ten or fifteen minutes longer to get the centre to be not completely raw, but that was fine, because it made the edges chewy but didn't burn them, which my partner loves in a brownie.

Luckily, when I remodeled this house I had the plumber add a filter under the kitchen sink. I have county water which tastes fine.

But first, the sink water goes thru the filter. Then to my refrigerator. It gets filtered again by the GE filter, then makes ice and dispenses water. He also set it up to filter the water before it goes to my InstaHot.

We try not to use any bottled water but I can’t risk not having it on hand for emergencies.

DH was using distilled water for his NeilMed sinus rinse kit and had to boil tap water sometimes when he couldn't find more distilled water.

You and @IceIce9 bring up an interesting point. This article explains the difference between Purified and Distilled Water.
Distilled Water is Purified Water after it has been even more purified. The cleanest Water.

ETA - do you anywhere near South Bend? Most disgusting water I have ever tasted.

I don’t live in South Bend it I do work there frequently. I agree that the water tastes awful.


I live in Hamilton county and while our water doesn’t taste quite that bad it still doesn’t taste good IMO.

For several years in the country and we had well water from a very deep well. Everyone who visited us would say they loved the taste of our well water, they always said it tasted refreshing. I didn’t like it at all, it had a very strong metallic taste, like drinking iron.

Regarding distilled water, we have a home distiller. I'm not into it but my husband likes distilled water so he distills a jug at a time. Distilling takes out everything (even the good stuff like minerals).

That is why I don't drink distilled water- it takes out minerals

I made a new zucchini quiche recipe tonight. This one called for grating the zucchini instead of slices. I had 4 small zucchini and didn't measure anything. Just put the 12 eggs in a big bowl, blended them, stirred in the undrained zucchini and kept adding cheese (probably 12 oz total) until I thought it was thick enough.

It said to use cheddar cheese but I actually used Monterey Jack and Medium Cheddar. I was concerned that all cheddar would be too strong.

It did not have any form of milk. Just grated zucchini, cheese, eggs and spices. I used garlic, onion, kosher salt, parsley and pepper. They're cooling now and smell really good.

That sounds like so many flavors mixed together that it would be overwhelming. Spices, pumpkin, chocolate...... glad you all loved it!

The corner pieces of the brownies is my favorite too.

I use a brownie pan with a divider so every piece is like a corner piece.

Yum….These look and sound so good. I’ll have to get DH to grate the zucchini for me then I could do the rest.
