I'm on a roasting vegetable kick. I've been roasting plum tomatoes. I eat them as snack or put into just about every dish. So easy and super delicious.

Yesterday I made a salad of roasted sweet potato, roasted corn, cucumbers, black beans, red onion, shredded kale, cherry tomatoes, raisins. The dressing was apple cider, oil, garlic, honey, mustard, lime, salt, and a dash of sriracha.
 
Mind if I talk turkey? It's a little early to think about Thanksgiving, but we have a flock of wild turkeys that have decided to roost in our neighborhood. Just this morning, nine turkeys trotted through our yard and made their way across the street. We've seen them on our deck and driveway, as well as congregating in the front yard. We've occasionally seen one or two wild turkeys hanging around but never an entire flock.

It seems that "pumpkin spice" season starts earlier each year as I've seen commercials for several weeks, and stores have been featuring pumpkin spice products since late August. I have a can of pumpkin puree that I didn't use last fall and will make pumpkin bread this weekend.

We did flower cleanup a couple of weeks ago, and DH bought a pretty purple mum for the urn on the front porch. We're beginning to see hints of fall colors locally, and DH saw some beautiful fall scenery when he played golf "up north" last Saturday. We're planning to take a drive to Frankenmuth in a couple of weeks. We used to go a couple of times a year but haven't been for quite a while. The little Bavarian town is charming with specialty shops and restaurants that serve family-style chicken dinners. I love Turkey- how cool to have all those wild turkeys around your home- once in a while we get a stray wild turkey around for a couple days.

Hubby and I love turkey so much we cook it a couple times a year besides Thanksgiving. We are thinking of making it within the next couple weeks!

I made mini pumpkin muffins a few days ago (they are gone).

Yesterday I continued my "roasted veggies" kick and made soup from roasted delicata squash, roasted chickpeas (tossed in garlic and cayenne powder), caramelized onions, garlic, veggie stock. Pureed it all, reserving some chickpeas whole to serve on top. I added a bit of yogurt too to use up the little bit I had in the fridge. Super easy and delicious.

Love, love, love this time of year, even on a rainy day like we are having here.

I had smoked wild turkey breast last year from a local turkey. It was quite good and surprisingly moist. Will definitely keep my options open during hunting season.

It’s still almost 90 in central Texas so I’m still embracing margarita season instead of warm filling pumpkin season.

I used to make a pumpkin cranberry bread that was really good. The tart of the cranberry was a good balance to the sweetness of the pumpkin bread. I’ve made pumpkin pie ice cream that turned out really well. I basically made the pumpkin custard but instead of baking it I ran it through the ice cream maker.

We just got back from a beautiful week in Door County Wisconsin. For those not local, Door County is the little thumb shaped peninsula that jets out from Wisconsin into Lake Michigan. The fall colors have started to change and the apple orchards are just opening for picking. Had our share of pumpkin products and cherry, apple donuts and strudels. We saw a few groups of wild turkeys beside the country roads too.


Several years ago, I made an amazing Turkey (If I do say so myself). I bought a natural turkey and brined it myself. I'll have to find that recipe again. It was kosher salt, apple cider vinegar, brown sugar and probably a few spices. Brined it for 12 hours, it was the best turkey we have ever had.

Thanks for reminding me because I need to get that bird ordered soon!

the turkeys can look really odd in trees- like brown beach balls

We brined our first turkey a few years ago and have never looked back. My recipe adds some Chinese 5 spice powder, star anise, and fresh orange slices and is divine. We also put a fresh herbed butter under the breast skin before roasting to keep it moist. Yum! Can't wait until Thanksgiving.

Last Thanksgiving we made turkey roulade, which made the meal different than how we usually have turkey. I wouldn't mind doing that again, but we'll decide later. My husband makes turkey throughout the year so we don't always have it on Thanksgiving. (In fact, I prefer if we don't, tbh.)

When my kids were in school I frequently roasted turkey, sliced it up, and froze it in single serving ziplock bags. Then I put a frozen turkey bag in their lunch along with bread and a mayo packet. Lettuce and a tomato slice too.

Healthier and cheaper than lunch meat. I watched for sales on turkeys, bought several at s time, and put them in the deep freeze.

I love stuffing, and always liked to try new stuffing recipes. I always bought a big turkey so we would have plenty of stuffing.

My favorite stuffing recipe is made with a loaf of white bread from the bakery, torn into pieces, chopped celery, mushrooms, onions, and a diced tart apple or two. Fresh herbs too. Then I melt a stick of butter in warm broth, then combine everything together and stuff into the turkey.

I made an impromptu pasta dish this morning. Penne pasta cooked & drained, zucchini sliced, simmered and drained, ricotta cheese, grated mozzarella and provolone cheeses, spaghetti sauce, and seasonings to taste. I layered it and baked it for 30 minutes at 350 deg.

It made 2 dishes and I'll freeze one. Yesterday Publix had the BOGO on these glass baking dishes. I have 2 already but they're more shallow and I use those for enchiladas. These 2 are the same size but are deeper so perfect for small casseroles.

I sautéed some chicken tenders to put on my Cesar salad this week. I have a bunch of peaches I need to make something with. Maybe some mini loaves of peach bread with cinnamon added. The recipe is a tad bland so I may spice it up.

BTW, what kind of Caesar dressing do you use? I haven’t been able to find a bottled one we like. Maybe I need to make it myself.
