Canned salmon is a part of my emergency food supply. It is a very good thing to have on hand. We used to live in an area where blizzards weren’t uncommon and sometimes it would be several days before the roads were plowed well enough that we could be safely get out to the store.
Yes- we keep canned salmon around-- I always buy Demings- it is good quality---

DH got the cranberry goat cheese log at Costco on Wednesday. Thank you for sharing the photo - he knew exactly what to look for. The cranberry goat cheese is amazing - I love it! Had some for an afternoon snack yesterday with Nino's French baguette. DH is not a fan of goat cheese, so I won't have to share it :D

During the late summer when the wild turkeys were roosting in the neighborhood, we rarely saw squirrels. We figured that turkeys and squirrels did not play well together; we were disappointed to not have our squirrely buddies around. By early October, the turkeys had left the 'hood, and we started seeing an occasional squirrel. When Nino's started carrying bulk nuts for the holidays, we bought 1/2 pound each week to see if the squirrels would come to the deck for them. Sure enough, squirrels started appearing each time we put a few whole walnuts on the deck, so DH ordered 15# that arrived on Wednesday. We are happy to have the cute furry creatures back and will be providing their sustenance during the winter months.
That's so sweet: We have a bird feeder- we love to have birds at our feeder- especially the cardinals- I feel badly when we go to Florida and hope the birds are getting fed somewhere else. We get the best- the black oilers- cardinals love those- in the summer and fall the cardinal parents bring their babies to our feeder!!! We also get squirrels who feed on the seeds that are on the ground

We had grilled sockeye salmon and Brussels sprouts with freshly grated Parm. Takeout tonight.

Whenever DH goes to Costco, he usually gets two large pieces of sockeye salmon. He cuts them into two or three meal-size pieces, wraps them in foil, and freezes. We love salmon and enjoy it frequently at home.
We buy our salmon at Costco- we get the farmed because my husband does not like the taste of sockeye salmon--

I usually have a can of salmon in the pantry. DS thought once that if we cooked fresh salmon then made patties from it, that it would be better than canned. It was a lot of work and tasted the same as canned.

Cookie Detail was my job this morning. My aunt made the dough & she used an ice cream scoop to put them on the pans. I baked them, then bagged up the chocolate chip & oatmeal ones. I can’t touch the ginger snaps or peanut butter ones.

Tomorrow she’s making sugar cookies & meringue cookies. My cousin Sean made a Lemon Pound Cake.

Right now we’re assembling quiche for dinner tonight. One is ham, broccoli & cheddar. The other is spinach & bacon.

My uncle has chopped a ton of veggies! Some for the salad tonight and some for the party tomorrow. The house smells amazing!

^ Looks like a professional bakery :) I love Hershey's Kisses Peanut Butter Blossoms, and the bundt cake looks good, too.

Been there, done that! I thought the same thing. I bought some fresh wild-caught salmon and made patties after cooking it. The salmon patties made from fresh salmon didn’t taste as good as the salmon patties made from canned salmon.

Lesson learned!

I just fixed my “Ingredient Meal” for lunch. I spread leftover mashed potatoes in a skillet, stired them around until they browned a little, then made a well for a couple of eggs. Topped with bits of leftover cheese and served with leftover salsa.
Maybe I should post on Tic Toc lol

We had breaded chicken patties in the freezer. While a couple were cooking in the air fryer, I prepared chicken sandwiches from leftover salad ingredients. Sliced tomato, lettuce, bacon bits and sliced pickles. They were good and the leftovers were put to good use.

^ I don't recall having seen the Boursin commercial. Aren't you in Ontario? Maybe it didn't air in the states. Thanks for sharing.
Yes I am (you can tell it's Canadian by the french, if that makes any sense)!

I always laugh at that commercial. It's become my yard stick for measuring when the holidays have officially begun. Also, my family know what I am like so there is always extra cheese in case "someone" eats it all  I've learned to buy extra for home and my family have learned to buy extra bc they are onto me!

Ok, I am sharing another TikTok cooking "hack" (lol). But this is a good one, I promise!

Leftover rice in a waffle maker. It came out like a crispy rice cake. I haven't tried it yet but I have definitely "discovered" crispy rice after leaving the pot on the hot element.

I'm thinking it would be great with a bit of canned salmon :D Whipped with some mayo, sprinkle some green onion, dash of soya (or coconut aminos). Would probably also be great with some teriyaki chicken or beef with broccoli, just mix it into the rice and press it in the waffle maker.

Does that sound good or weird? I can't tell anymore

When I was a child , we would make potato patties from leftover mashed
potatoes. Fried them in the skillet until outside was crispy.

We always said the best thing about mashed potatoes was the leftovers.

It’s hard to beat mashed potatoes. I even love the instant roasted garlic mashed potatoes, lol.

I make mashed potatoes in my instant pot, very fast and easy to cook.

There is nothing as delicious as homemade mashed potatoes (with lots of butter!)

Making salmon patties from a can is a lot of work- you have to get a lot of (crud) out of it like the skin and vertebrae and some other not appetizing stuff. I don't know how ya all make your patties but I put in a couple eggs, onion, bread crumbs and salt and pepper. I fry it in hot oil so that they are really crisp on the outside.

This is how I make mine too. The cats love when we have salmon patties because they get the liquid from the can and all those discards too.

My recipe for salmon patties is one can salmon, one beaten egg, 1/2 cup panko or bread crumbs, 1/4 cup mayo, 1 tbsp Dijon mustard, 1 tbsp fresh squeezed lemon juice, 1 tbsp chopped fresh dill, 2 tbsp thinly sliced scallions, fresh ground pepper.

Now if I don’t have some of the ingredients it still turns out well. Sometimes I don’t have fresh dill, or scallions, but the recipe is very forgiving.

We kept our eye out for the mail carrier today and gave her a tin of the white chocolate/dried cherry/pecan clusters that have been in the garage since I made them. We will deliver Godiva chocolates to hair and nail salons next week. We used to drop off Milk Bone dog biscuits and cat treats to the local branch of the Michigan Humane Society each Christmas but learned last year that this branch of MHS is no longer an adoption site. They kept the treats because they still have a veterinary clinic and sometimes have animals in their infirmary. This year we sent a check to MHS and the Capuchin Soup Kitchen in Detroit.

Veggie pizza from Jet's for dinner tonight. We haven't had one for a while. We haven't had red meat for a while, so DH wants to grill steak tomorrow for the football game. I'll put a couple of Idahos in the oven - love a baked potato with steak.
