Making salmon patties from a can is a lot of work- you have to get a lot of (crud) out of it like the skin and vertebrae and some other not appetizing stuff. I don't know how ya all make your patties but I put in a couple eggs, onion, bread crumbs and salt and pepper. I fry it in hot oil so that they are really crisp on the outside.
I just mash it all up. I also use stovetop cornbread dressing and egg to make the patties. They freeze well too. Just take what you want out and fry them up.

My recipe for salmon patties is one can salmon, one beaten egg, 1/2 cup panko or bread crumbs, 1/4 cup mayo, 1 tbsp Dijon mustard, 1 tbsp fresh squeezed lemon juice, 1 tbsp chopped fresh dill, 2 tbsp thinly sliced scallions, fresh ground pepper.

Now if I don’t have some of the ingredients it still turns out well. Sometimes I don’t have fresh dill, or scallions, but the recipe is very forgiving.
Sounds like a great recipe!!!!

We kept our eye out for the mail carrier today and gave her a tin of the white chocolate/dried cherry/pecan clusters that have been in the garage since I made them. We will deliver Godiva chocolates to hair and nail salons next week. We used to drop off Milk Bone dog biscuits and cat treats to the local branch of the Michigan Humane Society each Christmas but learned last year that this branch of MHS is no longer an adoption site. They kept the treats because they still have a veterinary clinic and sometimes have animals in their infirmary. This year we sent a check to MHS and the Capuchin Soup Kitchen in Detroit.

Veggie pizza from Jet's for dinner tonight. We haven't had one for a while. We haven't had red meat for a while, so DH wants to grill steak tomorrow for the football game. I'll put a couple of Idahos in the oven - love a baked potato with steak.
You really have the holiday spirit of giving!!!!!

The quiches last night were very good. I don’t even like broccoli either. We had leftovers for breakfast.

The miserable storm trying to drown FL caused the party to be postponed until tomorrow at 2pm. It’s too dangerous for people to be traveling, especially after dark.

Today we made more cookies. Some I can’t have but they smell wonderful.

My uncle made seafood chowder and beef stew. I had to pester him with questions on how to make both. I typed it on my laptop as he was cooking.

Now he’s making pork chops, corn and rice pilaf for dinner.

I am a little north of where you are now. Electric has flickered a few times. I hope you can share the chowder recipe. Stay safe.

I had my COVID vaccine yesterday and felt fine yesterday but woke up today with a low grade fever and body aches.

I’m making a pot full of creamy cheddar grits for my comfort food.

DH is making shrimp & grits for dinner today. It's probably not authentic because neither of us knows much about Southern cooking. I remember having shrimp & grits for breakfast once when we spent a long holiday weekend in Raleigh, NC for a wedding. There was a charming little cafe near our hotel that served only breakfast and lunch. We went there for breakfast twice. Other than bagels & lox, I had never had fish for breakfast and really liked the shrimp & grits. First and only time I've ever had scrapple, as well. Wasn't crazy about it, but I was game to try something new.

For all who are in the path of the storm, please be safe. We're supposed to get rain today, but it won't be anything like the storm that is moving up the east coast. Dark and gloomy here in southeastern lower Michigan.

I never had grits until a few years ago when I had shrimp grits at a restaurant. They were creamy and flavorful. I found a couple of recipes online on southern cooking sites, the recipes used cream or milk instead of just water. So when I make grits I use either all milk or 1/2 water and half milk.

I buy the old fashioned grits (Quaker) rather than the instant grits. I think they taste better, just like I always use old fashioned oats rather than Instant.

For most of my life I had thought I didn’t like grits because at some point during my childhood grits were served at a relative’s home. They were in a big bowl with pats of butter on top, and I thought they were mashed potatoes. I took one bite and thought they were the worst mashed potatoes I had ever had, but someone explained that they were grits.

On our way to church, we drove down US1 in Sebastian FL. There was a sunken sailboat floating. My aunt said there had been a sailboat tied out there. I guess the storm got it last night. That wind howled like a hurricane on Friday night and again late Sat.

This morning we set up all the tables, borrowed lawn furniture, lots of decorations, etc. We have all the party food (in containers) sitting on top of the platters. There’s 40+ people coming at 2:00pm. I’ll have to take some photos after it’s all displayed.

I took notes on the seafood chowder prep but I have to get more details when my uncle warms it up & pours in the milk stuff. I think it’s 1/2 & 1/2 and evaporated milk. Not sure tho. He put pollack, shrimp, lobster, scallops and haddock in it. I can’t eat it but I really want to know how to make it. I can make it without shellfish.

The beef stew smelled amazing yesterday. It’s cool & damp today and the sun is trying to come out. Perfect day for comfort food.

Check out all the food! The seafood chowder is almost gone. It was a huge hit! The beef stew was amazing and there’s some left but not a lot.

Those Brownie Tassies were so rich! Those white powdered cookies were some type of Mexican Cookies.

Captain didn’t eat his food today. Pretty sure he had plenty of cheese tho!

There were cookie decorating kits for the kids. They really liked that. They each had a present to open too.

Another beautiful Christmas display! What is usually on those shelves? Your aunt and uncle are real gems!
She decorates for each holiday on there. She collects bunnies and has a beautiful Easter display. Her fall decorations are very nice too. She has coordinating quilts that she’s made. This quilt has holly berries on the fabric.

I've had such a hard time finding grits in Canada.

My ex is Caribbean and he put me onto grits but the only place I've found them is on Amazon. They're really trying to sell Quaker Grits at $25 for one cardboard tub of grits.

Do you use Quaker? The only other brand I've found is Bobs Red Mill but have never tried their products.

With a little bit of butter, garlic powder with a fried egg on top = YUM!!!

I can't speak for grits specifically, but Bob's Red Mill is high quality in general, and not part of a major food mega-conglomerate like Quaker is. I would trust Bob's and encourage you to try them!

I had a nice lunch at their restaurant near Portland, Oregon, some years ago but don't have much experience with their products.

Yes, I use Quaker Old Fashioned grits. I use Quaker Old Fashioned oats too.

I’ve seen the crazy prices for grits on Amazon. Sometimes I have trouble finding tapioca pearls at local stores so I have checked prices on Amazon and they are very expensive too.

I order monthly from Azure Standard (I know they probably aren't an option in Canada).

They sell a 5-lb bag of their own brand of corn grits, organic (may well be repackaged from bulk bags of Bob's Red Mill), for around $12. Or a 25-lb bag of Bob's (also organic) grits for $44. Just for comparison.

LOL @ the disclaimer "no affiliation whatsoever" :p

I've seen their white corn, hominy grits. The only reason I haven't bought them is bc they're not quick cooking like Quaker. I've heard good things about this brand tho, a friend of mine uses their buckwheat pancake mix.

@IceIce9 I was looking at boba tea kits and thought they were expensive until I tried to put it together myself on Amazon. The tapioca pearls were almost $20 for a bag. Like, I'm not opening a boba shop! But now that I think of it, that boba shop does well selling them for $8 a pop. Maybe they were once like us!?
