My mom used to make tuna salad stuffed tomatoes.

I never liked the way she made baked stuffed peppers when I was growing up though. She used green bell peppers which I thought were bitter.
ditto- as a child, I used to eat the filling out of the pepper with ketchup. She did stew them in tomato sauce. Since I stopped eating meat I have missed stuffed peppers- made them with soy crumbles once and they are fine but I am too lazy to make them often.

My mom stuffed the green bell peppers with a meatloaf-like mixture and then baked them in a tomato sauce. I ate the filling but carefully avoided the bitter green pepper.

She served them with mashed potatoes, and I remember that the tomato sauce had a good flavor and we spooned it over the mashed potatoes like gravy.
