Food and Recipes while under Coronavirus quarantine #8

We’ve been food prepping like it’s the end of the world over here. Ha!

I went to 2 veggie pick ups plus harvesting my garden. My youngest is home for the summer. So lots of vegetables.

I made enchiladas with refried beans, black beans, tomatoes, black olives, cheese, red sauce and queso. I added chicken to mine.

I picked 2 eggplants last night. I’ve decided I grew too many big tomatoes. 8 plants was overkill. I will do more Roma tomatoes, 4 plants is not enough. They all are about finished. I’ve read if you pick them before they’re ripe, the squirrels won’t poke them. So that’s what I’ve been doing. I’m going to grow some cherry tomatoes on my lanai this summer. They’re supposed to be ok in the heat. I’ll bring them inside the house during the storms.

The blueberries should come in soon if they’re going to. My original blueberry plant took a hit during the hurricane. It’s not damaged just the salt air seems to have shocked it. I need to prune it after it is done. I think that will help. The two new blueberry plants have adjusted nicely.

I’m on my 3rd bed of green beans. I think I’ve mastered succession planting with them. The Brussels have tiny sprouts but I’m not sure they’re going to make it. It is getting way too hot.

New this year is small sugar pumpkins! The leaf miners are trying to take over. I snipped off those leaves. I’m going to stake them up to see if that will help.

My little foster puppy Sassy inspects the garden regularly.

This is our concoction this week. Eggplant & Zucchini Parmesan. It was delicious. Then I decided to put it on top of angel hair pasta. That made it even better. It was like having lasagna but it wasn’t a heavy meal. You didn’t feel like a ton of food was just sitting in your belly.

Sassy the puppy was adopted on Saturday! Tonight Neeko is visiting. He is old and timid now, going blind and deaf. The storm spooked him so I’m out here in the living room nearby.
 
This was dinner this evening. Husband and I teamed up to make this Chinese meal. Mapo Tofu and Chinese Green Beans. Pretty good, especially the green beans!

And, you can’t tell from this pic, but the plate is pretty old, and interesting.
My aunt used to collect the pieces back in—maybe the 1960s? They would come in boxes of laundry detergent called Duz! 😄

Golden Wheat pattern.
Anyone else familiar with the pattern?

I just checked eBay, and there are several listings of Golden Wheat bowls and plates. Interesting!

I remember my mom using Duz detergent, but I don’t remember the plates.

She used to buy a laundry detergent that had a hand towel inside, and the big box had a bath towel inside. I think it might have been Breeze laundry detergent, back in the late 1960s.

I always begged her to buy the brand with the free towels inside because I thought it was so much fun opening to box to see which color towel would be inside.

Since we are allergic to nuts, no pesto. But we improvised with extra basil from the garden, paprika, extra garlic, extra salt and pepper mixed into the olive oil. Then I added more feta and basil on top.

We made this for Kiddo’s going back to vet school dinner in Jan. The two spaghetti squashes that are smaller are from the garden. Since they were small, I bought the rounder wider one so we had leftovers.

Did a hot dog hack. Oscar Mayers, air fryer. Turned out nice. Warmed buns air fryer. And then just mustard, sweet relish, diced white onion, lil celery salt. On mine, cucumber, my son hates cucumber on dogs, so none on his. This worked, honestly. I didn't miss the tomato or the sport pepper. I've tried dill relish with this combo, don't like it as much.

Also made a good solid order of cheese sticks in air fryer, got a slab of mozz, carved it up, wedges into flour, into egg, into panko w/mostly Italian spices. FROZE THEM, that worked well.

And finally got to try Rao's sauce. YUM. I got it mostly for the cheese sticks, it is quite good.
 
On my second summer cold. Started yesterday with a sore throat and dry cough. Just a stuffy head now. So I made vegetable rice soup with mostly leftovers. Then I had some….. for breakfast!

My friend makes bowl cozies and she knows I like Curious George.
