Food and Recipes while under Coronavirus quarantine #8

Last night we went to 108 Ale House in Rincon, GA. I had the club sandwich that they put on Texas toast. It was so much bread, I took 1 slice off and used the remaining piece as a 1/2 sandwich.

I asked for fried pickles as my side. But they gave me fries and brought a basket of fried pickles with ranch dressing.
Kristine & Robert couldn’t eat all their burgers they were so big!

So between the fried pickles, and all those French fries from lunch, we have enough to snack on! Robert wants to grill pork chops tonight. I’m not even hungry!

That does sound like a good deal. Is the special every Tuesday, or was it just for yesterday?
Think it's every Tuesday. I hope it's every Tuesday in here with me, too, LOL.

Thinking on it, it has been awhile, but Albertsons supermarket’s deli has fried chicken that I found to be pretty decent in the past. And I am guessing the price might be for around the same price? But I’m not sure.

Tonight we went to Romanos Grill in Rincon GA. Our waiter was brand new, young boy still wearing braces. He had a lot to learn but he seemed like a nice kid.

The chicken Parmesan had breaded chicken. But he spoke to the cook, and they made it for me with grilled chicken. I could not eat 3/4 of the pasta nor the breadstick. I wasn’t wild about the type of Cesar dressing on my salad but I ate it.

I got a slice of chocolate cake to share. It is huge!

Kristine had the 10” margarita pizza and it looked good. She could only eat 1/2 of it.

Robert mowed the 3/4 acre in 85-90 degree heat so we brought a medium meat lovers pizza back for him.

Oh darn, I was looking forward to the peach cobbler! But the brownie sundaes sound good too. :D

Me too, looking forward to the peach cobbler recipe from Bette!

Made ranch dressing! I was delighted, I've wanted to make it myself for a very long time but find some of the recipes intimidating, seriously.

So I got a pretty basic recipe and kind of improvised on it. Used as base: mayo, lil sour cream, plenty plain yogurt. I know I've got dried dill in here but have no idea where it is, so just did a splash of pickle juice in there. Dried and fresh parsley, heavy onion powder, lil garlic powder, some dried ground thyme, dried chives, lil kosher salt, lotsa black pepper, mixed it all up, added a good big squeeze of lemon juice. It's good! Gonna use that as wings sauce. Gonna make that again for sure.

I love homemade ranch! Several of my favorite restaurants serve house-made ranch.

A year or so ago I was traveling and saw reviews for a restaurant that featured a salad bar and a “Ranch Bar.” The reviews said were over 20 varieties of house-made ranch that you could put on your salad, baked potatoes, appetizers, fries, etc.

I wanted to try it but was on a quick road trip and didn’t have time for a sit-down meal at an upscale restaurant.

I wanted to go back to that restaurant when I had time to dine in, and I usually bookmark restaurants so I can find them when I’m traveling in that area again. Unfortunately, I guess I forgot to bookmark this one and I haven’t been able to find it again. I don’t even know what state it is in because I was in about 10 different states during those couple of weeks.

We went to Picano's last night after our day of "beauty" - manis/pedis, hair, then dinner. We don't go to Picano's frequently during the summer because it is just too much food in warm weather; during the winter, we'll go 2 or three times a month. While we were enjoying our pedicures, I told DH that I hoped one of my favorite pasta dishes was featured on the daily special's menu. I love the stuffed shells and spaghetti Napoli and hoped one of the dishes was available. Turns out that both of my favorites were featured specials :) I had settled on the stuffed shells when DH said he planned to order them. I went with Spaghetti Napoli instead - it was wonderful, as always: Long pasta tossed with garlic, olive oil, fresh spinach, and sliced Italian sausage. I had Pasta Fagioli soup instead of a salad. DH got the stuffed shells with Minestrone soup. The shells are filled with a meat and cheese mixture topped with tomato and Mornay sauces. Delicioso!

No need to wait until I make peach cobbler. Here's the recipe that I use. I've never made the cobbler with canned peaches and only make it with fresh.

Last night we made bean soup using a bag of Hambeens 15-bean soup dried beans, using the Instant Pot. Kind of an odd choice since we are having a heatwave! But it turned out extra yummy, for whatever reason. Maybe it was using tomatoes from our garden instead of canned?

I smash some of the beans when done, to make a thicker soup broth. Followed the Instant Pot directions mostly, but squeezed one lemon at the end, like the original recipe says.

Thank you!! Will try to make it this weekend, depending on the quality of peaches I can find.

I bought a box of Great Value Pumpkin Spice Quick Bread and Muffin mix at Walmart earlier this week. I haven't used it yet and was wondering if any of you have used it or a similar mix. It calls for combining the mix with 2/3 C water, 2 eggs, and 1/2 C vegetable oil. The mix contains "dried pumpkin flakes," but I'm considering adding some canned pumpkin and maybe raisins, and either chopped walnuts or pecans.

Thoughts? It's been ages since I baked something like this and I'm hoping it will be good with some non-pumpkin spice coffee!

I use the Pillsbury Pumpkin Bread mix. I love it and make mini loaves with it.

Thanks! Do you ever add ingredients like I am considering?

Tonight we went to Noble Roots in Pooler GA. The food was excellent. The liquor lockers were really neat.

Robert had She Crab Soup, snapper and fries. The round slices of potatoes were fried. I’ve never seen them done that way.

Kristine had the 8 oz filet, garlic mashed potatoes and Cesar salad. She said the steak was very tender and the croutons must be homemade because they were very good.

I had the Cuban Sandwich on Naan Bread with house made chips. It was excellent. I couldn’t eat it all.

I head back to FL tomorrow. It’s been such a nice break from the blazing soul sucking heat. Of course chilling with Bri the wild Frenchie has been fun.

No because it would make it so dense it wouldn’t rise.

Ah! Perhaps I will reconsider my additions and just try the mix as-is.
You could probably add some finely chopped nuts, maybe 1/4 cup.

Made Tomato Beef Chow Mein for dinner tonight. Used our homegrown tomatoes again. I haven’t made this in a long time.

I’ve never had this in a restaurant, so have no idea if it tastes like how it is *supposed* to taste, but I like it. I believe it’s a Cantonese Chinese dish.

We love 15 bean soup. I always save my Christmas hambone to make a pot. I toss the artificial ham flavoring and cook it with the hambone. I save lots of bits of lean ham, add a shredded chicken breast, conechuh smoked sausage, rotel, onion and garlic.
