I have two loaves of Pumpkin Bread in the oven. DH is donating blood today, and he always enjoys something sweet on days that he's done this. This is my regular recipe for Pumpkin Bread, but I tweak it a bit ;)

I love pumpkin bread! I tweak the recipe too. I only use 1 cup of granulated sugar and 3/4 cup off light brown sugar. Omit the nutmeg and use pumpkin pie spice and add about a cup of walnuts.

Our tweaking is similar :D I'm running out of brown sugar that I would normally use in rustic recipes like pumpkin or zucchini bread, so I used 2 cups of granulated sugar yesterday. Brown sugar on my grocery list this week. I use pumpkin pie spice instead of the individual spices, and I also add chopped walnuts. DH deemed it delicious :)

^^ The pumpkin bread with tweaks above sounds good. Krispy Kreme usually has bags of pumpkin spice mini crullers in the local grocery stores this time of year, but on my foray into a store Sunday afternoon, I didn't see any. Probably just as well. You can't eat just one...

In my grocery pick up this week was canned salmon. I've never had it but I love fresh salmon. A friend said make salmon patties but that just doesn't sound appealing to me. What else does anyone recommend to do with it? Add it to a salad as a topping maybe?

I eat canned salmon. Usually in a salad or I make salmon sandwiches, just like tuna. Or, it is yummy just on cucumber slices with a bit of lemon pepper. I also love sardines. They are one of the best sources of protein.

I make salmon salad like tuna salad with boiled eggs, onion, both sweet and dill pickle cubes and mayo to taste.

When we have fresh sockeye salmon, we always have some leftover. I like scrambled eggs with chopped salmon, cream cheese, and dill. I also make a spread for bagels with chopped salmon, cream cheese, and dill. How about a salmon and cream cheese breakfast strata: Layer bagel halves on bottom of casserole dish. Make the custard with eggs, cream cheese, heavy cream. Add chopped salmon. Cover with plastic wrap and refrigerate several hours or overnight. Bake at 350* for about 35 minutes until browned and bubbly. Lots of recipes for breakfast stratas that are great for brunch, lunch, and dinner, too.

We get Nino Salvaggio's Salmon Cakes when they are featured at the fish counter. They are not typical "salmon patties" the your friend might be suggesting.

It’s Fall Y’all. Food prep accordingly.

Pumpkin bread mini loaves. Pillsbury mix.
Roasted potatoes, 3 types red, yellow & russet.
Roasted beets.
Roasted butternut squash.

Chicken in the crockpot. I added celery, onion, garlic, peppercorns & salt. Then poured broth over it. The 3 chicken breasts have rib meat, are bone in and were frozen. I didn’t bother to thaw them.

Soup is on! I made veggie soup for me, and ham/bean soup for him.

I got a bag of parsnips from CSA, not sure what to do with them...maybe roasted?

Leek and potato soup here tonight. Tis the soup season!

Parsnips roasted, with a dash of maple syrup towards the end to bring out the sweetness and caramelise

Yummy! I saved all the chunky broth from the crockpot. I’ll see what I feel like eating when I finish the stuff I made today. I may strain it some, put some wide egg noodles in it or maybe rice.

So, I have sort of wanted one of these "clay bakers" to bake bread in, but they are pretty expensive, and not really something I "need". Ha, found one at Goodwill, brand new, for $4!! Yay!

I bake a lot in the winter, heats up the house. Excited to use my "new" clay baker. Mine is similar to this one, a bit larger. Now, according to my "declutter" rules, I have to get rid of two things...

I know you don't eat meat, but I have a fantastic meatloaf recipe made in a clay baker. Even people who don't like meatloaf like it.

We had our first overnight frost here in southeastern lower Michigan. Fall has definitely arrived, and I am going to make my first batch of chili - a seasonal favorite. I will use Better Than Bouillon chili base that I bought after we had discussed the product here or grocery shopping thread. I make a pretty standard chili with ground beef, onion, garlic, green pepper, beef stock, canned tomatoes, red kidney beans.

That actually sounds good minus the mayo. I could sub plain yogurt sort of like Greek Tzatziki Sauce. I also got 3 regular cucumbers and some lettuce in my veggie box this week. Hmmm.
