This is the one I‘ve used for decades. I use a deep dish shell so the pie tin isn’t filled so high and doesn’t slop everywhere. I also put a cookie sheet on the oven rack below the rack the pie is on. (Not under the pie tin itself.). That way if anything does spill, I don’t have to clean the oven.

I am going to make pumpkin bread today. It is so cold and snowy outside, that a warm, cheerful kitchen with the smell of yummy cinnamon, ginger spices is just what we need today.

Will post a picture later. I am using my new Nordic Ware pan.
I made pumpkin bread a couple weekends ago. I love the way it makes the house smell of cinnamon all day!
It is chilly and gloomy outside today. Hubby is going deer hunting this afternoon. So, I think I will make some chocolate chip cookies with pecans. I have been wanting to make chocolate chip cookies for about two months. I think today will be the day!

Who needs Panera Bread?! Not me! Yummy egg sandwich for brunch. Toast, 2 eggs, cheese, bacon, spinach, tomato.

Now to get back to playing pick up sticks from my falling down broken tree.

Speaking of pumpkin, Katie Lee made this chili on last week's episode of The Kitchen (Food Network). The only savory pumpkin dish I've made thus far is beef stew in a hollowed out pumpkin. IIRC, I shared the recipe here previously. When I made pumpkin bread a couple weeks ago, I bought two 15 oz. cans or pumpkin puree and only used one. I'll get more, of course, closer to Thanksgiving, but I might try this recipe sometime soon. It looked yummy!

Same here, we like the cornbread made into muffins so we have more crispy crust. :)

Well it's a little bit under and the pastry isnt perfect but it tastes really good. Mr HKP approves too. That's (overwhipped!) vanilla cream on top.

I am done baking my chocolate chips cookies. Hubby requested peanut butter cookies before he went hunting. He is diabetic so when I bake for him I cut the sugar required in the recipe. The recipe called for 1/2 cup brown sugar and 1/2 cup granulated. So, I decided to make peanut butter oatmeal cookies. I used 1/2 cup brown sugar and used a individual pack of Quaker lower sugar instant oat package (cinnamon & spice flavored). They turned out pretty good. I think the cinnamon & spice may have overpowered the peanut butter. I will see what he thinks.
I am sure they will be good with a cold glass of Almond milk!
Off to find a good beef broccoli stir fry recipe. I have some pieces of beef tenderloin I thawed and need to make use of.

My Lima beans are done. I was so busy I forgot to add spices. They were a tad bland with just the veggie broth. So I took them out of the crockpot and added salt, pepper, onion and garlic. I will let them sit overnight in the fridge and they should be tasty. Then tomorrow I’ll make my cornbread to go with them.

So, I cooked today, first time in weeks. I made a meatloaf for my husband. First, it fell apart, then, when he was eating it, it was not done. Meatloaf fail.

I had also made mashed potatoes, and for some reason they turned into Elmer's glue. Potato fail.

The glazed carrots were perfect. Win. The roasted butternut squash was perfect. Win.

Somehow, I managed to mess up every kitchen appliance, pan, pot, counter in the kitchen with this disaster. How?! Whatever.

Tomorrow, I will just use the meat for tacos or enchiladas for him, I finished cooking it on the stove, messed up another pan. This is why I hate cooking meat, it is always a disaster.

You sound something like me. I overcook all meats for DH, so that first one doesn't apply.

All the rest does (he has fortunately taken over potato production).

Aren't you vegetarian or vegan? Perfect reason for meatloaf fail.

There is a seafood market less than a mile from me that opened up in February. Just as COVID was starting. I thought it was going to be doom for them, but it's been the opposite, until September 16, 2020 when Hurricane Sally wrecked him. The power going out did something to his walk-in freezer and he ordered parts three times before it was fixed. We always keep a lot of stuff from there in our freezer, and while our power was out we were able to cook some of it on our gas stovetop, but we lost the rest of the contents of both fridge and freezer. He opened yesterday, and I spent WAY too much trying to support him. Yummy!

Last night we had broiled crab legs and a salad. Tonight we're having shrimp scampi and a stuffed artichoke (pre-stuffed from there). Tomorrow night we're having crawfish pie (also prepared, from there). SOO happy.

I hate cooking fails. I remember some from decades ago that were so awful I'll never forget them.

Just curious: Who cleaned up? At our house, the spouse who does not cook the meal does the cleanup chores.

At least the non-meat-or-starch dishes turned out great! :)
