That is quite beautiful! But is it cornbread? We'd call it cornmeal cake. I'm sure it's as tasty as it looks but too sweet for corn"bread".

But so yummy. We didn't even put honey or butter on it.

I can believe that with no doubt. Again, it looks absolutely beautiful! Any kitchen magic we do with our hands is reason to celebrate and support each other. Not my piece of "bread" but nevertheless, well done, mickey2942, very well done. I salute your creation!

The most important thing with anything that we all actually cook is that it is found to be delicious by either us or our fam members/significant others. Cooking to please oneself and getting it exactly right to taste is no small accomplishment. I, for one, have to be stirred by my own kitchen muse. Then it is absolutely a must that I get it the way I want it to taste. Sometimes easier said than done. Salute to all the kitchen magicians here who try so hard!

Is that a photo of your cornbread? I'm intrigued by the snowflake design.

It is a Nordic Ware pan, I love this one because it is a "pull apart" treat. You don't even have to cut it. It is on sale on Amazon. I love Nordic Ware, and have actually a pretty decent collection.

Oh, no! I haven't gotten a new Nordic Ware pan in forever. So addicting. I just got that one and the honeycomb one. If my other half asks, I'm blaming you!

ETA: WHOOPS! And a holiday pancake pan. I'm resisting the Sweetheart Waffler, though.

"HMMM, should I buy this new skull pan?"..why, yes, of course! You should buy two!

I have a Nordic Ware shortbread pan. Haven't used it in years. In fact, until Nordic Ware was mentioned here, I hadn't even thought about the shortbread pan :oops:

Thank you for your kind thoughts. I have enjoyed this thread during the pandemic and look forward to new posts daily. I try to avoid the doom and gloom of coronavirus statistics and the controversy about whether or not folks need to wear masks, practice social distancing, open schools or not, open bars/restaurants or not, etc. The circumstances surrounding COVID already cause enough anxiety and depression for many of us, and I do my best to avoid additional stress.

It sounds good, but more like a sweet treat, yummy. :)
That’s actually the same cornbread recipe I’ve used for 50 or so years, except I only use one Tablespoon of sugar.

I woke up at 4:20am. I have no earthly idea why. I put my time to good use. By 7:00am I had our Taco Tuesday fixings ready!

Saffron Rice - Vigo brand yellow rice.

Enchiladas - 3 different versions due to food allergies & preferences.

6 gluten free flour wraps.
1 can vegetarian refried beans
1 can black beans drained and rinsed just a little.
1 bag of cooked shredded chicken (2 cups?)
1 can mild red enchilada sauce
1 can sliced black olives, drained
Chopped tomatoes (1 cup?)
Chopped onion - 1-2 tablespoons
Mozzarella cheese (2 cups?)

I spread the refried beans on first. I layered the rest of the ingredients on top. Added shredded cheese, rolled them and placed in the pan seam side down. Poured the red sauce over them.

Bake at 350 degrees for 20-25 min. Add more grated cheese on top when done. Serve with sour cream and additional chopped tomato and olives if desired.

Looks really good! I have to say, Payroll, you truly inspire me to get in the kitchen. :)

Thanks for the recipe - looks yummy. I remember when Tuesday was Prince Spaghetti Day :D We're having our Meatless Monday dinner tonight - quinoa and mushroom stuffed acorn squash based on this Martha Stewart recipe:

Tomato basil salad:

2-3 Campari tomatoes
Handful of fresh basil leaves

Wash the basil leaves thoroughly then lay out to dry on paper towels. When dry, arrange them in a petal formation on a small plate.

Slice the Campari tomatoes in wedges. Arrange them in the center of the basil leaves.

Add your favorite dressing and enjoy!

I use a vinaigrette for mine.

I was really tired when it was time to fix dinner, so I ended up just cooking scrambled eggs with cheese and bacon and serving it with arugula and tomato salad. It was good. Nothing wrong with breakfast for dinner once in a while, in my opinion!

Nothing wrong with scrambled eggs. That's one of my quick go-tos and one I get compliments from the Huzbun on invariably. My egg secret is I whip them with a splash of water then scramble them in butter with only Mrs Dash for seasoning. Good for breakfast or a fast supper.

We often have breakfast food for supper. It is quick and easy. I love breakfast food.
