I want your honest opinion about something...Squeaks' puppy hair is frightful! LOL it tangles, knots up and looks like a frighten cat :giggle: I'm thinking of having him trimmed down to his new hair growth and leaving his top knot. I brush it daily and get all the knots out, but once he's down playing, or you hold him, his hair goes right back to the mess. It will grown back and I know from his new hair growth that the new hair is more silky and manageable. What do you think?

An Ohio Legend

Johnny Appleseed was a hermit and a wanderer who was welcomed wherever he went in the Ohio territory. Everyone loved him, in spite of his unkempt appearance. He always carried a sack full of apple seeds to plant, and walked barefoot all year round. He knew the frontier woods better than anyone. Even the Indians respected Johnny Appleseed for his courage.

When the War of 1812 began, many Indians allied themselves with the British, seeking to revenge injustices done to their people by the settlers. They attacked up and down the Ohio territory, but they left Johnny Appleseed alone. Taking advantage of his position, Johnny Appleseed became the Paul Revere of the Ohio territory, warning settlers of danger.

On one occasion, Johnny Appleseed learned that a band of Indians had laid siege on the town of Mansfield, Ohio. Johnny Appleseed ran twenty-six miles through the forest to Mt. Vernon to obtain help for the settlers. As he ran, he tried to warn other settlers along the path of the danger by blowing on an old powder horn. Aid reached the town within a day, and the settlers were spared, thanks to the bravery of Johnny Appleseed.

Haha, I had to respond to this because I am from Johnny Appleseed's hometown, Leominster, MA. His actual name was John Chapman. One of the elementary schools there is named after him.

Uhhh.... I usually love your helpful tips, coffeeJ, but with the price of coffee around here I think I will save my grounds for my selfish use.

As long as your weather is not too cold, a trim might work for Squeaks. It is worth a try.

I hear ya! I was thinking along the lines of USED COFFEE GROUNDS :giggle: Why not? It still smells like coffee and throw them in an old coffee can. Scoop as needed LOL

Not cold here (yet) and he never goes outside except the back deck. Besides, I can buy him a cute sweater!!

Okie dokie coffeejunkie, I'll post the recipe in a bit. My fav. Is Guinness stew, OMG it's so good. I love cooking and baking with Guinness.
Guinness cup cakes are over the top good.
I'll post those too.

Okay - 15 minutes until Skype with my sisters and brother! :online: I'll have to find out WHY my bro hasn't posted any of his pictures from the Song Festival and my little bro's memorial yet on FB!!??!! I want copies!! LOL!

Well kids..........this 54 year old is riding the tail end of a Red and White Poker Run this afternoon!:laughing:Seriously!
And get this, it's in celebration of Sonny Barger's 77th birthday.....which I guess is only right since he resides in Cavecreek, Az.
A bunch of grade school friends (that went through High School with me too) have been giving me a lot of support, and, it just so happens a few belong to the "South Side Pirates" :floorlaugh: It's a "group", not a "motorcycle club", not 1%'s, I'm not going to be taking any "blood in, blood out" oath, just spend time with friends on the road and spend the night down in Phoenix.

What a huge change in just the last few days!
Don't worry, I will NOT turn into a biker "mama" and abandon WS or the SB, but I AM going to wear chaps, lol!
Hopefully I can get pics. I am REALLY excited!!!!:happydance: They're calling me giving progress reports on the highway, never new a blue tooth headset could block out the wind at 70 mph........

Leek Potato Soup (Vichyssoise)
Serve hot or cold Yield 6

Ingredients
1 pound leeks, cleaned and dark green sections removed, approximately 4 to 5 medium
3 tablespoons unsalted butter
Heavy pinch kosher salt, plus additional for seasoning
4 Yukon gold potatoes, peeled and diced small
1 quart vegetable broth or substitute chicken broth
1 cup heavy cream
1 cup buttermilk
1/2 teaspoon white pepper
1 tablespoon snipped chives

Potato Ricer, Food Mill or Immersion Blender, Blender

Directions
Chop the leeks into small pieces.

In a 6-quart saucepan over medium heat, melt the butter. Add the leeks and a heavy pinch of salt and sweat for 5 minutes. Decrease the heat to medium-low and cook until the leeks are tender, approximately 25 minutes, stirring occasionally.

Add the potatoes and the vegetable broth, increase the heat to medium-high, and bring to a boil. Reduce the heat to low, cover, and gently simmer until the potatoes are soft, approximately 45 minutes.

Turn off the heat and puree the mixture with an immersion blender until smooth or use a *ricer or *food mill for a silky texture. Stir in the heavy cream, buttermilk, and white pepper. Taste and adjust seasoning if desired. Sprinkle with chives and serve immediately, or chill and serve cold.

*Alternate Method:
To Finish With a Ricer (Recommended): Remove potatoes from soup using tongs and transfer to a bowl. Set aside. Transfer remaining soup to a blender. Slowly increase blender speed to high and blend until completely smooth, about 2 minutes. Return soup to a clean pot.

Press potatoes through a potato ricer or food mill into the pot with the soup. Whisk in buttermilk and heavy cream. Whisking frequently, bring soup to a simmer over medium-high heat.
Serve immediately, or chill and serve cold.

A blender is not recommended for the potatoes, as it can give the soup a gluey texture.

Beef and Guinness Stew


Yield: 6 servings
Ingredients
2 pounds stewing beef
3 tablespoons oil
2 tablespoons flour
Salt and freshly ground black pepper
Pinch of cayenne
2 large onions, coarsely chopped
1 garlic clove, crushed
2 tablespoons tomato puree, dissolved in 4 tablespoons water
1 1/4 cups Guinness Draught
2 cups largely diced carrots
Sprig of fresh thyme
Chopped parsley, for garnish

Directions
Trim the meat of any fat or gristle, and cut into 2-inch cubes. Toss beef with 1 tablespoon of the oil.
In a small bowl, season the flour with salt, pepper and cayenne. Toss meat with seasoned flour.

Heat remaining 2 tablespoons oil in a large skillet or dutch oven over high heat. Brown the meat on all sides.
Reduce the heat, add the onions, crushed garlic and tomato puree to the skillet, cover, and cook gently for 5 minutes.

Transfer the contents of the skillet to a dutch oven and pour half of the Guinness into the skillet.
Bring Guinness to a boil and stir to dissolve the caramelized meat juices on the pan.

Pour over the meat, along with the remaining Guinness. Add the carrots and thyme. Stir and adjust seasonings.
Cover the dutch oven and simmer in a 300 degree F oven until the meat is tender, 2 to 3 hours. Garnish the beef with parsley and serve.

Chocolate Stout Cupcakes

Ingredients
3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
Pinch fine salt
1 bottle stout beer (recommended: Guinness Draught or Stout)
1 stick butter, melted
1 tablespoon vanilla extract
3 large eggs
3/4 cup sour cream
1 (8-ounce) package cream cheese, softened at room temperature
3/4 to 1 cup heavy cream
1 (1-pound) box confectioners' sugar

Directions
Preheat oven to 350 degrees F.

In a large mixing bowl, whisk together the cocoa, sugar, flour, baking soda, and salt.

In another medium mixing bowl, combine the stout, melted butter, and vanilla. Beat in eggs, 1 at time.
Mix in sour cream until thoroughly combined and smooth.
Gradually mix the dry ingredients into the wet mixture.

Lightly grease 24 muffin tins. Divide the batter equally between muffin tins, filling each 3/4 full.
Bake for about 12 minutes and then rotate the pans.
Bake another 12 to 13 minutes until risen, nicely domed, and set in the middle but still soft and tender.
Cool before turning out.

To make the icing:
In a medium bowl with a hand mixer, beat the cream cheese on medium speed until light and fluffy. Gradually beat in the heavy cream.
On low speed, slowly mix in the confectioners' sugar until incorporated and smooth. Cover with plastic wrap and refrigerate until ready to use.
Icing can be made several hours ahead and kept covered and chilled.

Top each cupcake with a heap of frosting and dust with cocoa.

Hope you do know something about Huz's condition today, Niner!

Busy week ahead here. Walnuts are falling in huge amounts from the recent windy days. Ouch! Do we hurt from picking up...... 12 buckets and 10 bags filled in the past few days. Getting things put away for winter, appointments, paperwork..... work seems never ending.

Nore, I don't know how the "Book Club" works, and I don't know how to share a book purchased through an iPad :shame:
 
1997 - Singer/songwriter John Denver, piloting an experimental, amateur-built Long-EZ airplane, crashed into Monterey Bay, California. Witnesses said the plane, made of fiberglass with a single engine and two seats, was flying about at about 500 feet “when it just sort of dropped unexpectedly into the ocean. When it hit the water it broke into numerous parts.” Denver, age 53 and the only occupant of the plane, was killed.
