Sounds like he was into some shady stuff.

"Horse racing" wasn't legal in 1986. It was outlawed in 1937. The Texas racing commission was created in Nov 5, 1987 and tracks were open after a county election was held.

Eckert is a fairly well known name here. His Find a Grave indicates that he's a descendent of the Eckert who had a large 19th Century homestead and farm and street named after him. His mother was murdered.

“Bunny” Eckert would become San Antonio’s most prolific narcotics trafficker, pimp and legally resilient criminals known by every officer of SAPD as well as law enforcement of the surrounding communities. As with most history we can only produce the highlights, but the real story would have to be a miniseries if produced on TV due to the sheer volume of his activity. Within a decade he would be arrested 50 times, not including seven traffic citations, but serve almost no jail time. The damage he conducted on the community of San Antonio is immeasurable, his enemies included every law enforcement agency in South Texas, but also the mafia, competitors and his many victims. His mysterious end fits the story of his life.

I was trying to determine anything I could about his mother's murder and ended up in a strange rabbit hole.

Bunny Eckert's son was murdered in 1991
His mother was slashed from ear to ear
Underworld sources say gangsters kidnapped Bunny Eckert and made him listen to his mother's murder

But, it goes back further.
Sounds like Bunny had a rough life from a young age.
Bunny's father committed suicide, while under criminal charges Arthur Calvin Eckert (1912-1959) - Find a Grave...

Bunny's grandfather was murdered by his grandmother in 1938 Photos of Harry Rudolph Eckert - Find a Grave...

His grandmother died a year later. I can't find her death certificate to determine if she died of natural causes or died at the hands of the criminal justice system.

Gangsters kidnapped narcotics business rival Arthur H. "Bunny" Eckert

The Bunny Eckert saga needs a Texas Monthly article!
