So, is it terrorism if a Muslim stabs himself in public and scares people? Or would he have to be a radicalized Muslim?

What is there to stop someone from taking a knife from a airport restaurant and boarding a plane? I have never thought of this,you have already passed security and there are no checks before boarding.I never eat at airport restaurants I use the sky clubs that do not use metal knives;Do the US restaurants use metal steak knives?

Do not understsnd the sarcasm,no one mentioned the man was muslim and besides the point is that he was able to obtain a weapon past security.
