Greek Jews are very rare and their DNA is closer to Sephardic Jewish populations than to Ashkenazi. Unlikely. Our JD had two fully Ashkenazi parents.

i'm a bit late to this thread, but has Denise been submitted as a possible match? she's one of my pet cases, and the first that comes to mind that i know for a fact is Jewish

i also think that the reconstruction of Jane Doe bears resemblance to another Denise missing from CA, specifically Denise Kathleen Anderson (i'll use DKA to differentiate her from Denise Dorfman), missing from Sacramento since 1971. however, i remember starting a bit of DKA's genealogy while trying to figure out her whole address situation, and it seems that DKA was 50% Greek: her mother's maiden name was Vassilopoulos, and here is a record showing that DKA's maternal grandmother was also Greek (both of the maternal grandmother's parents were born in Greece). however there is a very, very slim chance that the family may have been from Greece, but ethnically Ashkenazi? i haven't actually looked past DKA's maternal grandparents' generation. though the last name Vassilopoulos makes that seem even more unlikely... still, i just can't shake how much the reconstruction looks like DKA to me. (and fwiw, i haven't looked into DKA's father's side yet, so she may not be ethnically Jewish at all)
Hi! I also feel that Denise could be a possible match for this Jane Doe, and it’s so unfortunate — I really wish Denise were alive and living somewhere else. I have only submitted her as a candidate to the DNA Doe Project. They told me they received it, but nothing else.

while i believe that Jane Doe absolutely could be Denise Dorfman (and just responded to djanga over on Denise's thread about submitting) i'd like to posit another possible match:

i'll need to see what i can dig up on Ancestry, and will follow this up with confirmation once i've done that, but based on her name it very much seems to me that Rachel Hanna Ziselman was Jewish. Rachel was only 11 when she disappeared in September 1977, but stranger things have happened, and age estimates have been either further off before. there are only so many young white girls/women of Ashkenazi origin who went missing in the western US (though, yes, she could have gone missing from elsewhere) in the estimated PMI range, so even with that discrepancy in ages i think Rachel should still be considered. i also see a facial resemblance imo

Could be, leave no stone unturned. However there is quite a difference between a cranial vault of an 11 year and a 25 year old. But does not hurt to try.

There are plenty of ethnically Jewish people who left the fold and are not under anyones radar. Also if there is adoption or other complicated family dynamics, though a Jewish baby usually got adopted by Jewish families via different agencies. I believe she was never reported missing.

Denise may be a possibility but would her remains be as lost and shattered within a year? Okay, animal activity and harsh winters can do that but it seems the bones were there a longer time. Also no traces of clothing or shoes. And the distance is quite big, though stranger things have happened. For lack of a better lead, Denise should be checked as a match.
Did anyone call in Eddie Milta Segal? Also a distance issue but why not give it a try?

i agree. i think if Jane Doe isn't Denise Dorfman, then she was likely never reported missing/her file was purged. unfortunately there's only so much we (websleuths) can do without that information, so might as well look into the Jewish women and girls we do know are missing...

that reminds me. MadMcGoo has an incredibly helpful spreadsheet of missing people who aren't in NamUs. doing a simple Ctrl+F search, it seems that the only people in the list who are noted as Jewish are men, but there are likely some women on there who are Jewish. though this would take some digging
