I get tired reading about your food prep.... why people do not eat more vegetables: labor intensive!
Isn’t that the truth! I sometimes avoid making something due to the amount of food prep involved.
I also often resort to using freeze dried / dehydrated onions, bell peppers, jalapenos , mushrooms, etc. , in some of my recipes. Occasionally I’ll buy the chopped onions from the grocery store if they’re very fresh.
 
In recent months, I have been using my mini food chopper more frequently. My vision is poor, and even with new bright light fixtures in the kitchen prep area, I still don't feel comfortable handling a knife. Prepping veggies for soups, pasta sauces, chili, etc. is definitely labor intensive, and I didn't mind it for many years. Now, I have to be cautious in the kitchen, so the mini chopper and/or food processor have become necessities rather than conveniences.
May I ask what type of food chopper you use? I was just looking at some on Walmart.com earlier. I do have a mini food processor, but have to be careful or it will turn chopped into purée, lol.

Cuisinart Mini-Prep Plus. I bought one for my niece in black; mine is red. Two different settings: Chop and grind.

Spooked by the high price of Halloween candy? There’s not much relief in sight.

For the second year in a row, U.S. shoppers are seeing double-digit inflation in the candy aisle. Candy and gum prices are up an average of 13% this month compared to last October, more than double the 6% increase in all grocery prices, according to Datasembly, a retail price tracker. That’s on top of a 14% increase in candy and gum prices in October 2022.

“The price of candy has gotten to be outrageous,” said Jessica Weathers, a small business owner in Shiloh, Illinois. “It doesn’t make sense to me to spend $100 on candy.”...

That’s partly why we always gave out mini microwave popcorn & granola/breakfast bars. We stocked up on BOGO items. It started when one little boy in the neighborhood was diabetic. So we wanted something for him. Then the other kids wanted what he had!

We go all out for Halloween, because it's our anniversary! This was not exactly planned. We were trying to find a day when our church was available for a 3:30 wedding and a reception hall that evening. The only date in the next year that fit those parameters was...Halloween. So then we decided to embrace it and have fun!

We had about a hour to kill between the church and the reception, so we had all of our friends gather at our favorite bar. People in the bar did not know whether it was an elaborate Halloween Party or whether we were actually a bridal party.

Our wedding was so fun, some came in costume and the band played "The Monster Mash". Our head table was adorned with carved out pumpkins (carved by my dad). It is also handy because my DH never has an excuse to forget our anniversary.

To mark the occasion, we always give out full size candy bars.

We've been handing out mini potato chips, but this year we'll do mini Pepperidge Farms Goldfish (assorted varieties). Best to avoid anything with nuts as so many children seem to be allergic.

We haven't had trick-or-treaters at the door in years and years. In my neighborhood, there is a parade where the candy is handed out. I haven't been to the parade since my kids were little. I buy candy every year "just in case" the doorbell rings, but it doesn't happen anymore. Wah! I used to love oooh'ing and ahhhh'ing at the little kids in their costumes.

My husband roasts pumpkin/squash seeds we save in the time before Halloween. This year we plan to listen to scary stories that night (unless I get too scared - I can follow true crime but scary stories scare me, lol!).

Where do you purchase the goldfish packets? That is a great idea to also offer an alternative to chocolate and nuts.

One of my good friends who has since passed away, Anita and her husband also married on Halloween. It was intentional on their part. They loved the holiday. We used to have great adult Halloween parties in our basement garage. Scared the living crap outta all the kids in the neighborhood. I have pictures somewhere of me being Elvira one year.....back when I had a figure. LOL!

Have you ever tried cut resistant gloves for any chopping you still do? I use them for cleaning the sharp blades of my processor. I get klutzy when tired and have messed up in the past, so I hear you about avoiding knife work.

I just ordered the white one tonight. I've been looking at these type food prep items for months. My arthritis, combined with muscle weakness from MM, doesn't let me do as much as I used to.

I was snipping a quilt edge the other day and my hand just ached from the scissors. I found the spring loaded scissors last night and now I'll have a veggie chopper. I find I need different tools as my body ages.

My partner uses spring loaded scissors a LOT, especially for crafting and sewing. Her EDS and the nerve damage in her hands from her neck means she finds stiffer conventional scissors hard to use without pain and hand strain.

She's had at least four pairs of these over the years. Don't know if you can find them or something similar closer to your location. She's only replaced them when they blunt too much to cut cleanly. She uses them for both fabric and papercrafts.

I use kitchen scissors for quite a bit of cutting food. Doesn't work for everything, of course, but can be an alternative to using a knife. Not sure if that is helpful but thought I'd toss it out there.
