I don't think it's been stated anywhere that she was missing for 2 hours. She called her sister around 1:30 am; according to police she's seen in footage in the lobby around 3:20 am; 15 minutes later she went into the kitchen freezer area.
I'm sure police have videos showing her and her friends (together or separately) leaving the room on the 9th floor and going towards the car, so they'll be able to work out a timeline.
I suspect her friends were with her in the lobby and that's why they haven't included that video, to protect the privacy of her friends, and possibly the action/inaction of the desk staff, who probably wouldn't have wanted a woman in that state in the lobby. It doesn't mean they're covering up, just that video surveillance isn't normally released to the public unless someone's a suspect in a crime.
As someone mentioned, some security video, at least in the past, suffers from timecode drift, ie is not completely reliable for determining time, but it could be corrected with other data, such as records of when a key was used to open a room. Some of this might be why the video is being examined forensically.

and, w/the regard to privacy, other patron's privacy as well.
I may have gotten the two hours confused with the sister talking to her two hours after she left home. This is a rather odd case. Lots of conflicts.
