I couldn't find any information about the infant boy's hair color, eye color, weight and height anywhere online. I also tried looking though TBayNewsWatch and the Chronicle Journal's online archives for any more information about this case, but couldn't find anything else. (the archives appear to only go as far back to 2008)

I don't think baby doe's stats would help much anyways. The mother is quite likely the only one who knew about the baby. Even things like hair and eye colour that might help identify parents might be misleading. I was born blonde but my parents both have brown hair, and my hair darkened too as I got older and now it's dark brown (my mum's did the same thing.) A lot of newborns have blue eyes that darken to their real colour in a few weeks.

Hmmm not sure about the approach of focus on the mother. Surely DNA testing and genealogical research would double the chance of ID-ing the baby since they could potentially identify the father and mother and either could lead investigators to the other party....

Do you think I should remove baby doe’s stats, then?

No not at all. The more data the better. My aim was at LE’s methodology. Though of course we never know the full story.
