Yeah this is a lot this week. It’s so weird because usually when I go to the produce distribution, I just get produce. Then the grocery distribution is just dry goods with meat & dairy. However, this week, they gave me both, at both pickups!!! I ended up with 4 boxes of dry goods and double the vegs.

Yesterday, I traded beets for Chiorzo sausage! I have another friend coming by this afternoon to get dry goods and some produce. Then whatever is left, I’ll take to my friend with 3 grandsons. We try not to waste anything unless it’s too far gone. I had to toss 1 ear of corn and a few tiny beets. Otherwise everything is usable.

We're having a heatwave here so Sunday lunch today was a kind of tricolore salad but I added some red onion, lemon dressing and various salad leaves. Currently having glass of wine with the garden birds to round off the weekend.

Pear Bread Report

Tasty tasty! Yummy! We will definitely make this again. I used my mini loaf pans. It made 12 little mini loaves. I used gluten free flour. I added just a dash of nutmeg too. GF flour can make baked goods a bit bland. Plus pears are a mild fruit. The cinnamon & nutmeg combo is nice.

I thought the batter was too thick at first so I added a teaspoon of milk. I was worried the pears would be smashed when I folded them in. But it was fine.

What type of GF flour are you using? These look fabulous! We are low carb and GF. I usually using fine almond with a Tbsp of Bob’s GF and a Tbsp of ground golden flax. Pamelas All purpose is great for cookies.

I have King Arthur GF flour right now. It was on sale at Publix. Usually I have the Bob’s Red Mill 1 to 1 flour. However, my Big Lots store doesn't carry Bob’s Red Mill items anymore. We cannot use any nut flour or nut milks due to allergies.

Against the Grain (GF) makes the most incredible pizzas and frozen bagels/baguettes. Their dough uses mozzarella (it doesn’t taste cheesy). Spouse is GF and dairy-free or else I’d experiment.

This was called an Elephant Eye where I grew up. Even on menus. ( W Ky)

As my kids were growing up I made them & called them Birds Nests. Seemed less distressing than eating an elephant's eyeball.

We had artichokes tonight - haven't eaten one in almost a year and forgot how much I love them, the delicate nutty flavor, olive oil instead of butter, along with some chicken cutlets. They certainly are a healthy vegetable, a member of the thistle family. Normally I see thistle plants while out hiking in county parks, with butterflies often flitting about these beautiful flowers, as in the photo below.

Interesting. The Toad in a hole I grew up with was simply a piece of white bread that had a round hole cut in the middle with a biscuit cutter. Then both sides lightly buttered, fried in a skillet with an egg dropped into the hole. Usually it was topped with a slice of American cheese.

As an adult I started experimenting with whole grain bread and different cheese. And added toppings like red onion, sliced avocado, etc.

I’ve even see Toad in a hole on the menu in restaurants.

I looked up a recipe for Toad in a hole - I never heard of this before! Will have to try it for breakfast.

I’m north of Boston for my brothers funeral this week. I could only find one highly rated restaurant that I could eat at. Not to be a snob but with food allergies, I need them to offer safe, correctly made items.

The Fat Greek. Well, I didn’t know some places mix the type of meats in their Gyros. I ordered the one with lamb and beef. Thought it was odd but no other combo was appealing. I was unimpressed. The two flavors together were not tasty to me. The meat was over cooked and dry. The tzatiki was excellent tho. There were 6 seasoned French fries stuffed on top inside. Ok that was weird but I pulled them off and they were tasty.

I went to the grocery store for tea and snacks. Dinner was tea, a handful of sea salt chips and 2 mini Milky Way candies. When you’re more tired than hungry.....

I like some Greek food, Greek salad, lamb, stuffed grape leaves. And of course baklava.

Fixed up my pizza today with spinach & tomatoes and extra cheese. Ate 3 pieces!

Tonight I made beef tacos and refried beans. I am stuffed like a fat taco now!

Our favorite restaurant is offering a special Father's Day menu, so we will order from that (takeout). And yay, I won't have to cook!

My big bird is a bit toasty. Now to let it sit and cool. I am not a fan of dark meat. I will give it to my friend because it is her favorite.

I did 90 minutes at 400 degrees, then turned it down to 350 degrees for another 30 minutes. The inside has a cut up navel oranges and 2 bay leaves. The outside I sprayed with olive oil then sprinkled powdered spices: garlic, onion, salt, pepper.

All those bananas I was given needed a new recipe. I really didn’t want banana bread. So I made Chocolate Chip Banana Bars. They smell good and they’ll make a nice dessert for this week. It doesn’t say packed brown sugar but I sort of smooshed it into the measuring cup. It wasn’t quite full. I don’t think it needs a full cup of mini chocolate chips either. You could probably get by with 3/4 cup. I used gluten free flour.

Oh yeah we got that last summer. My kiddo made a stir fry with it. This week we got a Savoy cabbage. I had to look up how to use it. It seems like regular cabbage just wrinkled.
