Here’s my latest creation. I needed to use the Savoy cabbage and the turnips. So lo and behold there was a recipe that used both! It sounded rather bland so I diced up fresh garlic and fresh onion. I sautéed that with the shredded carrots first. Then added the turnips & cabbage. I cut the turnips too big so they took awhile to soften. I had parsley in the freezer so I used it. Added salt & pepper. I used veg broth, not chicken broth. I haven’t tasted it yet but will at dinner.

Well this stuff is delicious!!! I had it with my roasted chicken and cornbread muffins for dinner. Yum!

I put Lima beans in the crockpot this morning. Now I’m going to eat some of them too. I have to make up for not eating dinner last night plus yesterday was steroid day. Now I’ll probably eat too much! LOL!

FYI: I do not recommend Walmart brand lima beans. They are awful!!! Even my kiddo isn't impressed. I will stick with my normal Publix brand or the name brand going forward.

There are some things you cannot skimp on. Lima beans are one of those things.;)

Thought you guys may like this recipe. It’s Enchiladas Divorciadas, Divorced Enchiladas. It’s simple and so good. You may fill it with mashed potatoes, or cheese, or beans, for a veggie option. Instead of those sad lookin cilantro leaves for garnish, we use finely chopped lettuce, tomato, pickled carrot, onion and jalapeño.

I went to the produce pick up this morning and they did the same thing as last week. Gave me dry goods and produce. Two boxes of each!

I’m not sure why but there was only about 20 vehicles instead of a line of vehicles around the block. Please don’t hesitate if you need food.

@PayrollNerd if you don't mind me asking - is this produce pickup specific to your town or county in Florida? I have some friends that moved there from NJ a few years ago and are going through a little bit of tough time right now, they could definitely use some thing like this to help out. I would like to look into it for them, but not sure where to start. TIA

The ones I go to are in Sarasota County and usually put on by All Faiths Food Bank. I have a little card with a number on it that shows I've been approved. They pull me up in the phone app and send me thru.

Sometimes they are at a church or community center. Sometimes at the ball stadiums. Even if you don't qualify for SNAP (food assistance) the churches will help. Not all churches are connected with the local food bank. They do it on their own.

Go to this link and put in a local zip code. For example, I put in 34231 and it popped up a number of locations. Then click on the details for each location.

This link helps out the Tampa Bay area including Manatee County. I take my friend to this one. The first time, we were waiting in my vehicle and they instantly approved her for 6 months. She takes her little paper and puts it on the dash of the vehicle. Then I take her home and help her and her husband put it away.

Tell them it’s not just based on income. So if there are astronomical medical bills, etc, they need to tell them that. I doubt they’ll be turned away. All Faiths Food Bank approves you for a year. So if like my friend, who lost her job, got approved, then 3 months later, she got a new job, she is still approved until her year runs out. It’s really helping her get on her feet and caught up on her bills.

Ok so here’s a learn something new food moment, for me anyway. I’d never seen jicama prior to it being cut up and I’ve never eaten it. Today’s produce pick up had one. I had to go online to figure out if I’m allergic to it first and foremost. Then I learned about the health benefits and what to do with it.

Two more boxes of fresh veggies, fruits, potatoes, etc. Plus when I told them I was going to go home and preserve this, they asked me if I wanted more!! I declined but I can see why they asked. It had just started and there was me and another person. That’s it!

Never mind my messy counter! LOL!! I tried to burn down the house last night. Less than 3 year old GE microwave vs potato. OMG. I’m still airing out the house and cleaning.

ETA: They also gave me 2 more boxes of dry goods!!

Hope you don't turn out to be allergic to it!

It's a root/tuber more akin to a turnip or potato than it is similar to mango or other fruit. Let us know if you're able to eat it!

I had never heard of jicama until the late '90s/early 2000 when it was featured on just about every cooking show I'd watch. It also appeared as a component of salads in restaurants. I bought it occasionally, but it is so difficult to pare and cut that it's hardly worth the effort. I rarely shop the exotic veggies aisle at Nino's where they have jicama and haven't thought about getting it in a long time. Jicama has a crunchy texture and makes a nice addition to a crudites platter with a dip. Be careful peeling and cutting it!

PN, your produce and dry goods boxes always make me think of the contestants' baskets on Chopped. The baskets have four items that the chef contestants must use in a single dish, i.e. appetizer, entree, dessert. Their time is limited, so they have to think fast, work quickly, and figure out how to repurpose the four basket items into something delicious. The eggplants and yellow squash would be awesome in ratatouille :)

Peeled and sliced jícama, with some salt and lemon is great as snack.
Also good in salads.
Hope you guys dont turn out to be allergic and are able to try It safely

I can’t think of any root veg I’m allergic to. I was surprised to learn that as a root veg, it is mainly eaten raw. Ranch dressing goes good with anything plus I’m going to assemble my tzatziki today too.
