@BetteDavisEyes that is exactly what I had for breakfast! Spinach, egg, feta scramble. I buy these "Power Greens' from Costco in a big bag, they last two weeks in the fridge. I add them to everything. They are baby leaves, not big. A mix of spinach, not sure what the other ones are.

DH got the large bag of baby greens (chard, spinach, kale) at Costco this morning. I will use them as frequently as possible so the greens don't spoil. Thanks for the tip. He got a rotisserie chicken that we'll have tomorrow. I had planned to make turkey meatballs with pasta and sauce today. Maybe I'll sneak some of the micro-greens into the meatball mixture :D

I wash them, put them in the salad spinner, dry them, and put them in a Rubbermaid container in the fridge (2), with a paper towel on the bottom. They last two weeks.

We went to Costco today, we go every 2 weeks or so...
Power Greens
Spicy Asian salad
Eggs
Coffee
Berries
Zucchini

We are starting our seeds now for spring spinach and greens in the house.

There was more ground turkey than I thought was in the package, so I ended up making a meatloaf instead of meatballs. I added some of the microgreens along with chopped sundried tomatoes. The turkey loaf was moist and delicious with plenty of leftovers. I'm going to make chicken & dumplings today with the rotisserie chicken from Costco. I will add microgreens to the stock.

We could get hit with a mammoth snowstorm on Wednesday. I scheduled hair and nail appointments but will cancel tomorrow if it looks like the snow will start early in the day. We planned to go to Nino's in between my salon visits but will probably go tomorrow and stock up before the snow flies.

We’re supposed to get the mammoth snowstorm here in Indiana too. At this point they don’t know how much snow we will get, it might be more ice than snow.

A good time to plan some comfort food meals.

Has anyone ever had the famous IKEA meatballs? We love the veggie balls, and I bought some frozen this weekend. It sounds like a good time to make mashed potatoes, mushroom gravy, and veggie balls.

Had them lots of times in store when my son was young! They served them with lingonberry (I think?) sauce, a cream gravy and fries. My son used to love that.

I didn't know that IKEA had frozen foods. I used to make Swedish Meatballs frequently when DH and I were first married. It was a very popular dish in the late 60s-early 70s. Swedish meatballs were served at just about every social gathering and at holiday parties. It was difficult to find lingenberry jam as only specialty markets carried it, and those were few and far between back in those days. Maybe I'll make Swedish meatballs sometime soon. It's a nice comfort meal when served with egg noodles or mashed potatoes.

IKEA has freezer cases near their restaurant where they sell some of their restaurant specialities to take home. I’ve only ever bought their veggie meatballs but they also sell some of the other foods from their restaurants. I know they have their famous cinnamon rolls, salmon, mashed potatoes, and other specialties.

Big snow on the way to SE Michigan tomorrow!
We just spent the last 4 days on vacation in Traverse City so the fridge is empty. I am sitting down here now trying to come with some recipe ideas for the next few days so I won’t need to go out. On the list:
Broiled salmon with a salad and store baked bread from our local Holiday Market.
Homemade Bean soup with leftover bread.
Veggie loaf ( made with lentils ala meatloaf) with mashed potatoes, mushroom gravy and sautéed spinach.
Bucatini with red sauce, salad and garlic bread.

After 5 days of eating in restaurants in Traverse City, I am ready for home cooking.

Let it Snow!!

^ Traverse City is an amazing getaway any time of year :) Nice that you could have a winter respite. Your upcoming menu sounds wonderful. DH will stop at Meijer when he goes for his swim for a few items, but we are pretty well stocked for the storm. I cancelled hair and nail appointments and rescheduled for same time next Wednesday. If the snow starts in the early morning, roads could be dicey by 3:00 when I would have finished at the nail salon. We haven't had a major snowstorm like this for several years, and I'm actually kind of excited about it :D

ETA: Meijer has a nice selection of P.F. Chang frozen foods, so we will have Chinese tonight for the New Year.

PF Chang is one of our favorite restaurants. I have never tried their frozen foods. I will have to pick one up next time I see them.

Traverse City was lovely. We stayed at the Grand Traverse Resort and Spa. We traveled with two other couples. For fun one day we hired a car/driver and all went to Short’s Brewery. Good food and beer.

We've only been to P.F. Chang's once during the pandemic, but it is on our takeout rotation. Chang's took over the space that used to be Max & Erma's at The Village of Rochester.

Stay warm! Sounds like soup and chili weather. It has been a brutally cold snowy winter out west this year. Tonight, I came straight home from work, snow on top of ice! We had fried apples and onions with chicken apple sausages. Perfect cold weather food. I drizzle balsamic reduction on it. I buy the balsamic vinegar reduction now, after burning 2 pans trying to do it myself.

I haven't been since covid, but Ikea used to have one day a week where kids ate free - entree and drink. I don't think an adult's purchase was required. You just needed the Ikea Family membership (free). I can't speak to the furniture, but the store is so family-friendly - a pleasant place to wander around and grab decent, inexpensive meal/groceries.

Our latest snow update

Most schools closed in anticipation of the snow that's barely started here in metro Detroit. Snow totals have already been reduced, but the bulk of the storm isn't expected until later today and tomorrow. It's snowing lightly now, but we have a long way to go to get to the 10-12" originally predicted. I rescheduled hair and nail appointments for next Wednesday. We're all set with food and wine for a few days.

Our forecast was just updated.

We are in the 9”-12” band of predicted snow but only a few miles south of the 12”-15” band.

We are getting rain right now but the temperature is dropping and it will change to slush, then snow.

All the local forecasters have explained that the snow totals will depend on how quickly the temperature drops. If we end up with more slush we will get less snow.

The one-day snowfall record here is 11 1/2 inches so there is a potential to break the all-time record.

It’s 44 degrees outside right now. The temperature is supposed to drop 20 degrees by Midnight.

We’ve got homemade soup and fresh baked bread. If we run out we will make more.

Those in the path of the storm stay inside, stay safe and warm. Hope everyone has a back up heat source or plan.

In my wimpy, whining of cold this past weekend, I was thinking how glad I was to have food prepped. Running the oven kept me from running the heat for many hours.

Now that I’m thawed out and it’s warm, I’m going out back to measure off for my garden beds this afternoon.

Now that I’m thawed out and it’s warm, I’m going out back to measure off for my garden beds this afternoon.
I don’t have a generator and my house is all-electric. So my back up plan if we lose electricity is taking my pets to my friend’s house. She has a generator, a fireplace, and an extra bedroom:p

Question, I noticed many items were unavailable on my latest grocery buy, most I’ve seen to date.

I’m curious as to what specific items you may be seeing missing from your shelves.

I’ve heard a lot of cat food is missing - my friend says she now buys canned tuna (still at .89c per can).

I was unable to get certain chips and ice cream, frozen dinners, Parmesan cheese, green juice.

(Gotta have that green juice to offset the chips and ice cream haha)
