Baked first. Gluten free banana bread and gluten free M & M cookies. Baked off a pan for me. Froze the rest of the dough.

It is mild here in MI today but I head possible over and snow coming. I am good to make a pot of potato soup. It’s a basic recipe.


Classic Vegan Potato Soup

I use non dairy milk, but it has to be unsweetened and not flavored.
Yum. I think I have almond milk, but it’s vanilla flavored.

I would not use the vanilla. Well unless you want vanilla soup!
My mom makes this and uses regular dairy milk. She says it is very good.

My mouth is watering. That looks delicious. What time is dinner??:D
It turned out delicious! I have the one turkey piece in the broth. It is unbelievably tender. I froze the other piece whole. I would make this for Thanksgiving!

I should have cut the veggies in smaller pieces. I did put them back in for 10 minutes.

Sorry @PayrollNerd there is no way your girls will mistake that frozen cookie dough for meatballs! :D (unless you put M&Ms in your meatballs)

Bahahaha! I thought of pulling them out and wrapping the dishes in foil then marking it soup or something. Oh well. LOL!

Ha ha, my young kids went to visit my Mom, who is vegan, and they wanted "Blue Box" macaroni and cheese. She made it for them, with vanilla almond milk! They never wanted that "blue box" Mac and cheese again for years.

The game day leftovers are gone, and it was nice to have a light meal last night. The spinach pinwheels were easy to make and were a nice change from heavy meat and potatoes. Mushroom-barley soup turned out well, and we will enjoy that for a few days. Winter storm is on the way later today through tomorrow. We have a well-stocked pantry and freezer, and DH will pick up fresh veggies after his swim. Be safe if you are in the path of winter storm Miles.

I rarely make pasta dishes, but the library had a free healthy cooking class via Zoom and my 8yr old has been asking to cook. Whole wheat penne and spinach in a pink sauce. All the ingredients were provided by a lovely local organic market and pre-measured. To my great surprise, everyone enjoyed. Next time, I’ll double or triple the spinach but chop it up - good way to trick someone into eating more greens. The supplied tomato purée was fresh and delicious - I think that made a big difference.

Wow, that is a really cool idea! A great way to introduce kids to nutrition and cooking. The dish sounds really tasty too.

That is the biggest spaghetti squash I’ve ever seen.

Spaghetti squash is one of my favorites - and I don’t like squashes or pasta. It doesn’t taste like squash, and isn’t heavy like pasta. Feta & green olives with a little olive oil is my go-to but possibilities are endless! I’ve heard that is freezes well (once you fork/fluff) but never tried.

We learned this morning that one of our favorite local restaurants (mostly for breakfast and takeout) is going out of business. Honey Tree Grill is currently doing takeout only while the facility is renovated to house a new Mexican restaurant. Honey Tree has had ongoing staffing issues due to the pandemic and can no longer function with so few people. We will surely miss this option for breakfast as well as takeout sandwiches and awesome fish & chips.

Very sad. Two of our favorite regular local restaurants went out of business here. But, I don't know how some restaurants were able to stay busy with take-out. A local Chinese restaurant, had a 45 minute wait for take-out orders.

Me too :D It's like watching an episode of Chopped on Food Network. The contestants open their baskets to reveal the four ingredients that they must repurpose in appetizer, entree, and dessert competition rounds. At times, some of the ingredients are quite unusual, if not downright unpalatable :confused: PN's food pickups include traditional ingredients with which we're familiar and can easily be transformed into satisfying meals.

Well. I will say that it is difficult to think about much today other than what is happening in Ukraine. I’ve spent time in Ukraine, and in some of the areas that are under attack. Hoping that friends have been able to flee to a safer place.

Because the Ukrainian people have been on my mind I have been remembering the wonderful food in Ukraine. I loved the dumplings they made that were filled with mashed potatoes or cottage cheese, or sometimes an egg mixture. I watched as they made the dumplings by hand, it takes a long time just to prepare and stuff a small amount of these dumplings.

Also enjoyed all kinds of soups and stews made with cabbage, carrots, potatoes, and other vegetables. One of the restaurants served a breakfast soup.

They served breads, rolls, and pastries of all varieties whether I was in a restaurant or private home.
