DH and I stopped at Nino's after my appointment with the orthopedist. I got a cortisone injection for trochanteric bursitis in my right hip. I will start doing the exercises and stretches that I learned in physical therapy again so the inflammation in the bursa eases.
I planned to make Succotash sometime this weekend to go with swordfish. My mom used to make the veggie dish in the fall with fresh corn, tomatoes, and peppers from my dad's garden. She added lima beans that were nowhere to be found at Nino's. There weren't even canned lima beans, so DH stopped at Kroger after his afternoon swim. Nino's also did not have frozen okra which I sometimes add to my succotash. Fresh okra isn't common around here and is difficult to find. I didn't tell DH to get frozen okra, but he said Kroger had it along with the lima beans. My succotash will have fresh Michigan corn, Michigan grape tomatoes, scallions, and lima beans. Mom used to include green peppper, but I'm not crazy about it in this dish. I season with salt, pepper, smoked paprika, a little chopped garlic, and a pinch of red pepper flakes. Succotash is a wonderful accompaniment to most meats, poultry, and fish.
We're doing California BLTs on pretzel rolls tonight. Swordfish with Succotash tomorrow, dinner out on Sunday. Not sure about the holiday, but we got several NY strip steaks in case my brothers don't make other plans.
