I grew up on ingredient meals, always served them and continue to. I keep very few convenience and junk foods in my house. Too unhealthy and we don’t need them. I always cook enough for supper that we have leftovers for lunch the following day.

I agree, except we never knew we were eating “Ingredient Meals.” ;)

Many of the “Ingredient Meal” posts I have seen are people complaining that they can’t afford to buy snack food. So they post recipes for their snack food creations, like making nachos from corn flakes and leftover shredded cheese and chopped vegetables.

Something I have seen on social media sites, a lot of posts and conversations about “Ingredient meals.” People complain about having to put meals together from leftovers and share some of the meals they have come up with using only their leftovers.

Many of the posts complaining about “Ingredient Meals” are from college students. Heck, I would have been happy to have some good leftovers for meals when I was in college. Most of us lived on ramen noodles and generic boxed macarons cheese.

I guess I have relied on “Ingredient Meals” for most of my life, as we make many meals from leftovers I pull together from the refrigerator. In fact, I enjoy the challenge of creating a good meal using a combination of leftover vegetables from the produce drawer, bits of different cheeses, and whatever else I can find.
What a bunch of whiners! Did they not bother to learn to cook when they were home with their parents? Good grief. Leftovers are the bomb!

My oldest lived in a dorm for 4 years. I taught her how to make a full meal with a toaster oven, an electric skillet & microwave. She had a meal plan too but it wasn't 3 meals a day for 7 days. So she had days she had to fend for herself. Add to that she has to be gluten free!

Her friends, particularly the guy friends, would help her cook on the picnic table outside since they weren't supposed to cook in the dorm. They'd pool their money and fire up one of the grills to make burgers. She'd make bacon in the electric skillet outside.

She was 3.5 hours away, so on occasion, I'd get food requests. I'd make batches of GF cookies, GF mini breads, pulled pork from the crock pot, etc. Always brought leftovers for her little fridge too.

@PayrollNerd I agree, a bunch of whiners. But many younger people haven’t bothered to learn to cook. I have worked with quite a few women who never cook dinner. Towards the end of the day they call or text their husbands to decide which of them is going to pick up dinner, or to discuss where they will order dinner or where they will go out to eat.

These same coworkers always order lunch delivery or go out to lunch every day.

I’ve seen that as well. I honestly don’t understand how they afford all of the eating out. But that’s a whole other subject line.

This was my immediate thought. Not to mention, also, that restaurant portions are too big for most folks to eat all the time. If these people are dining out or getting take-out for dinner, there should be leftovers for lunch the following day. When DH and I go out to eat, regardless of the mealtime, one or both of us always has leftovers for another meal. We no longer order two meals for take-out, either, because we are satisfied to share a dinner like fish & chips or a small pizza with a small salad. Everyone enjoys going out for breakfast, lunch, or dinner occasionally, and it's perfectly fine to order take-out once in a while, but it is certainly less costly and more healthy to eat homecooked meals most of the time. My mother grew up in the depression. It was a sin to waste food in our house. If all else failed, soup could always be made with a bunch of leftover vegies. Her habits live on in me and have passed to my "kids".

We like salmon on the grill with white rice and black beans. Sometimes we'll open a can of peas also. I have 2 salmon steaks my uncle vacuum sealed for me still in the freezer. When my oldest comes home over Christmas, we are both looking forward to that meal.

I have a friend like this. She knows how to cook because we've shared recipes.

I keep thinking of spending all that money and them having nothing to show for it, literally.

We love fried potatoes too. Recently our 9 year old grandson was eating with us. We decided on hamburgers and fries. But DH was in charge of the potatoes and he made fried potatoes. Grandson had never had them. He thought they were a big deal!

I love to make hash browns for breakfast or to serve with sandwiches or salmon patties.

It is so easy to grate a large potato and fry up some shredded potatoes.

I used to squeeze the potatoes between paper towels to get the water out before frying but then I discovered that it was easier to spin them dry in my salad spinner.

I always rinse the shredded potatoes then spin dry in the salad spinner. I like them to cook up crisp and brown and it works best if all the water is spun out of the shredded potatoes.

We had grilled sockeye salmon and Brussels sprouts with freshly grated Parm. Takeout tonight.

Whenever DH goes to Costco, he usually gets two large pieces of sockeye salmon. He cuts them into two or three meal-size pieces, wraps them in foil, and freezes. We love salmon and enjoy it frequently at home.

Canned salmon is a part of my emergency food supply. It is a very good thing to have on hand. We used to live in an area where blizzards weren’t uncommon and sometimes it would be several days before the roads were plowed well enough that we could be safely get out to the store.

During the late summer when the wild turkeys were roosting in the neighborhood, we rarely saw squirrels. We figured that turkeys and squirrels did not play well together; we were disappointed to not have our squirrely buddies around. By early October, the turkeys had left the 'hood, and we started seeing an occasional squirrel. When Nino's started carrying bulk nuts for the holidays, we bought 1/2 pound each week to see if the squirrels would come to the deck for them. Sure enough, squirrels started appearing each time we put a few whole walnuts on the deck, so DH ordered 15# that arrived on Wednesday. We are happy to have the cute furry creatures back and will be providing their sustenance during the winter months.
