Rent a chicken! I heard a guy from this company in an interview today discussing this, prices vary depending on location but he said in the Cincinnati area you could rent 6 chickens for 6 months, including feed and equipment, for $600 total. Each chicken lays 4-6 eggs per week.

I always thought eggs had to stay warm or they wouldn’t hatch. Maybe I should buy some fertilized eggs and hatch them!

But don't just go on my advice. My only experience with chickens is when we lived out west, our neighbour kept chickens, ducks and geese in the yard beside ours, but she lived offsite. We'd occasionally care for them when she was away, but we also dealt with the trauma by proximity of fox incursions because we were right there, so sometimes, if she forgot to put them away, we'd discover this very late at night when a bird was already gone, and one very memorable night a fox actually got in the chicken enclosure.

So my memories of that time is having plenty of fresh eggs but also trauma. I am a conscious consumer of animal products and buy the highest welfare I can but I think if there was no option but to be intimately acquainted with the animals I'd have to go vegan pretty quickly. Which would be bad, because I trend to anaemia very easily without regular animal protein. There's just no way I could eat enough spinach, as a doctor kindly explained to me when I ended up on iron supplements yet again, when we'd dropped most of the meat for budgetary reasons from our diet about ten years back.

A teacher at our elementary school conducted an experiment with her 5th grade class last year. Bought a dozen eggs from TJ and put them in an incubator. Five out of 12 hatched.

Two years ago, I only wanted chicks from my easter and olive egger hens. I needed 28 eggs for my incubators. Took me 3 weeks, I refrigerated to prevent development, then when I reached 28 put them in the incubators. Had eight that I pulled after 1st and 2nd candlings. The rest hatched, but I got seven roosters!

So could this actually be possible? Because in order to incubate eggs successfully they have to be kept warm until they hatch.

According to the TikTokker@thecaliforniahome, a case of one dozen fertile eggs bought 24 days ago from the market eventually hatched after just three weeks in an incubator.

one reason I think this could be possible is that wild birds often lay eggs one at a time and do not "sit on them" until they have a pile of them. TJs says they are refrigerated.... that said, in elementary school, when we tried incubating eggs, I remember getting non-viable sad looking, and smelly partial chicks that were not OK...pretty amazing if they got 11 or 12 healthy chicks.

My only experience with fertile chicken eggs was years ago when I lived in the country. An elderly neighbor gave me a dozen farm fresh eggs. As she handed them to me she said, “These are farm eggs so crack with care.”

I asked what she meant and she told me they had lots of roosters, and she didn’t get out to the barn as often to collect eggs now that she was older, so sometimes when you crack an egg into a skillet you might get a partially formed chick instead of an egg.

The thought of cracking an egg in the skillet and finding a partially formed egg was enough to convince me to buy grocery store eggs, always.

I do have friends now who have chickens but I know they check the coop every day, and they don’t have roosters.

I’m so grateful that the farm eggs we get come from a flock of hens only.

We went to Costco this morning for various things, one of them being eggs.

We noticed a line starting from one corner of the rear of the store. My husband asked me to check if this might be for eggs (eggs are usually at the back side of the store, but on the other corner of the warehouse. Went partway to check, and told him yep, I’m pretty sure it was! But, the line moved along fairly quickly.

Costco employees were standing by the eggs and handing them out to facilitate matters. The 2-doz container was $7.69. This is in Southern California.

As we were going back to our car to load up and go home, I saw there were at least a couple shoppers who only came in for the eggs, apparently, as that’s all they had! Must have been a limit of 3 cartons, as that’s what they had in their cart.

FWIW Liquid and powdered eggs are an option! Maybe not the most economical or tasty but in an egg crisis I'd feel better having some stashed away. You can also freeze whole eggs.

I've been wanting an air fryer but have a feeling I'd become dependent on it lol.
I'm watching all the stuff on the incubators and eggs and find it fascinating, I've always wanted to raise chickens. But have been on a hiatus with... my air fryer!! Yippee!!! It's a hybrid toaster oven/air fryer. I spent Valentine's Day with my air fryer! lol

Here's some stuff I have made so far/am trying out a lot of junk food in there to see if it will enhance for quick meals, but also doing some cook/cheffy stuff, too:
broiled burgers, pork & beef mix, made the mix
broiled burgers for loco moco/did loco moco w/gravy & fried egg & rice, but only burgers in air fryer (this was my most successful loco moco effort so far)
pork egg rolls with cabbage (made these/not frozen)
pork dumplings (made these/not frozen)
baked eggs (probably better in oven)
toasted bagels (actually like to do the "bake" setting for these, don't want them THAT toasty)
fries (ok, but I need to freeze them on the next batch and use a different oil & cook slightly longer)

frozen Jack's pizza sticks (they do well in there)
lil breakfast egg rolls, not sure of the brand (they did well in there)
frozen Uno pizza (did well in there but crust pretty doughy, this is one of first things I made so probably didn't do the right setting)
frozen Guy Fieri crab rangoon (SO good, did well in there)
frozen chicken pot pie (better in the micro)

Hot dogs and chicken next!! And chile rellenos! LOL.

Okay, continuing on here. Frozen fries and tater tots in the air fryer are awesome, seriously. They're not like raw in some places like in the oven, they're like perfectly cooked. This is a lesson to me that if I make my own fries, get the starch out of there by freezing and use really good oil, and I should get a really good result.

Made frozen Rosati's pizza in here, 12", it would fit, but the thing is, I'm afraid it'll drip onto the heating elements. So I used a pizza cutter to carve into fourths and cooked that way. I thought it was way better than oven, but my son likes it whole from the oven, which means I'm going to have to get an air fryer safe pizza stone.

Gonna try nachos in here, I think. I can't get the hot dogs yet because I can't get to the reasonably priced store yet, grumph.

Price of eggs continues to soar, at about 4.50 now for a half dozen. Whoa. Diners and breakfast joints must be taking this pretty hard, this may be worse than Covid for them. Yipes.

I’m coming out of the fog of a head cold. I didn’t cook much but I finally made up for it the past couple days.

I picked fresh strawberries and put them in my oatmeal.

I made “upscale beanie weenies”, also known as kielbasa and baked beans with biscuits.

Yesterday was Spaghetti and meatballs. I used Target brand frozen turkey meatballs. I baked them like it said to. Then I put them in the sauce on the stove and simmered them while I made angel hair pasta.

Today was a Mediterranean kinda, salad like you can get at Cava. I picked Romaine from my garden and played with my new salad spinner. I sautéed chicken breast, made yellow rice, diced tomatoes, added Greek olives, feta cheese and tzatziki.

I have ripe pears and bananas so I’ll probably get some mini loaves made up for the freezer.

I need to thin the Bibb lettuce now that it’s big enough to get my big fingers in between the plants.

I was on my own for a few days as I was house and cat-sitting. 😊 🐈‍⬛ (isn’t it fun having all these new emojis?)

So, since I was just cooking for me, I made something simple I like to make once in a while. I call it cottage cheese pasta. Does that sound weird, or does the pic look yuck to you? 😆 I love it. 😋

Here’s how I make it:
Use any kind of pasta, boiled to doneness. I often use farfalle (bowties), but this time I used rotini (corkscrew) pasta.
I usually dice up a bit of regular yellow (brown?) onion, but I forgot it at home, so this time I used green onion. 🤷‍♀️ It works, too.
Put a bit of butter in a skillet, and stir and cook the onion til translucent.
Add the cooked pasta. Stir it all to blend in the butter and onion with the pasta. Dollop in some cottage cheese (I have no measurements, sorry!) with lowered heat (I don’t want to totally ‘melt’ the curds). Then I like to add in some fresh grated Parmesan (I use the one from Costco, Kirkland Parmigiano-Reggiano. It’s a huge block, but so good!) Lightly mix everything til warmed through and blended. Lastly, lots of pepper, salt to taste. Done!

It’s kind of like a mac and cheese thing, maybe?

But, I believe this is it, from YouTube? It says bake cottage cheese with shredded cheddar for 10 min at 400° to get heathy, high protein Doritos. Interesting! Was it real crunchy? Ha! Who da thunk this would work? 😄

Oh sorry, glad you found him! Yes, they are crunchy. Just put a small teaspoon of cottage cheese though, generous with the cheese (they spread alot). I put my oven on convection roast at 395.

I’m still trying to shake this head cold. I guess it’s really a virus because I’ve been on antibiotics since Oct. I’m at my friend’s new house NW of Savannah.

Yesterday we went to El Real Mexican and it was very good. I had beef enchiladas with rice and refried beans. I had the leftovers for lunch.

This morning we laid sod, my friends are in their mid 70s and they need help. We found lots of dormant muscles.

So we went to Ramano’s for dinner. I had a 10” Mediterranean Pizza and a Greek salad. It was delicious! I have 1/2 a pizza left.

I fixed strawberry shortcake for dessert.

I've been tweaking a Thai salad I had in Barca when visiting my kids:

Grated white or pale green cabbage
Grated or guillotined carrots
Small cubes cucumber
Thin slices of mango (must not be very ripe)
Sliced raddishes
Unsalted peanuts
Lemon vinaigrette (last version added juice of a mandarine)
Parsley
Black sesame seeds

Add a little ginger syrup or chili flakes.

Today is the 29th anniversary of Kristine & Roberts first date. We went to Sam Sneads Restaurant & Bar for dinner. Our appetizer was bruschetta. It was to die for.

I had salmon with mashed red potatoes (didn’t like them) and spinach. I got apple pie to go. They got cheesecake to go. I took a bite of the pie and it is ungodly sweet. So it’s in the fridge. When I need a sugar rush, I’ll take a bite. Ha!
