Food and Recipes while under Coronavirus quarantine #8

Dinner was a group effort tonight. I made roasted rosemary red potatoes. Robert grilled enormous steaks. Kristine made salads. It was all delicious and I couldn’t even eat 1/2 my steak or all my salad.

The big bag of lettuce was from my garden that I brought with me. I picked Romaine, Buttercrunch and baby Bibb lettuces. The spinach wasn’t ready.

Wednesday night we went to the 108 Ale House in Rincon GA. Our appetizers were fried pickle chips and onion rings. Both were good.

I had fish & chips and it was good. Kristine had a Greek wrap but wasn’t wild about it. Robert had the 108 sandwich which is their signature prime rib sandwich. He said it was great.

It’s a little hole in the wall kinda place with nice people.

Thursday we went to Charleston SC to deliver the stingray quilt in person. We visited the aquarium because that’s where she works.

On the way back we stopped at Carolina Country Store. They had some very unique items. I bought Espresso Chocolate Sauce. I think it might be good on vanilla ice cream.

I also bought a big jar of blueberry jam and two lemon blueberry cookies. Those cookies were amazing.

The drip coffee thing was cool. I loved the sewing machine coffee table.

Today we went to Bluffton SC. We had lunch at Craft Kitchen. Robert & I had their Cuban Sandwich. It was good but there was something about I felt was off. The pork had a seasoning I thought was too strong.

Kristine had a seared chicken sandwich. For dessert, they had blueberry cheesecake bites. I had the Oreo one.

The fries were the best I’ve ever had and I’m not a French Fry fan.

The dessert menu was cool. On the counter were slices of chocolate “pizza” little chocolate dipped bunnies and pretzel rods.

My last day here at my friends just outside Savannah GA. I got all her veggies planted in the raised beds. Tomatoes, two kinds of carrots, 2 kinds of lettuce, radishes, beans, cucumber and dill. Still lots to do. But I can’t stay, time to head home in the morning.

We went back to Sam Sneads Tavern for dinner. We had bruschetta again. Then soups. French Onion, Corn Chowder and mine was black bean with sour cream. Delicious!

They got fish & fries with coleslaw. Huge pieces of fish! I had angel hair pasta with creamy garlic sauce. Added tomatoes and chicken. Very rich, very filling and amazing flavor.

Then desserts to go. Coconut Cream Pie, cheesecake with raspberry sauce and mine was Lemon Berry Marscapone Cake. It was delicious.

My friend and I went to Michaelangelos for dinner. The restaurant is under new management. It has really improved!

I had chicken Parmesan that came with spaghetti and a side salad. I’ll get 4 meals out of it!

My friend got chicken cacciatore that she said was amazing. It also came with a side salad.

Mum bought a homegrown butternut pumpkin from someone at her choir for a dollar, and it is FINALLY starting to cool down now into nice autumny temperatures, so, this week, I'm making this old favourite again.


I really do love it, it's one of those rare recipes that comes out looking EXACTLY like the glamour photos (even with gluten free flour!) and it's one of the true joys of the cooler months. I can't make it continuously, though, because my partner can only eat so much pumpkin because of FODMAP issues, and my mum doesn't like cinnamon, so I'd end up eating so much pumpkin bread alone.
 
The weather has been lovely this week. This mornings garden haul. Beets, spinach, Bibb lettuce, radishes, sugar snap peas.

My spaghetti squash is exploding with blossoms. I’m salvaging my zucchini and yellow squash from powdery mildew. It’s looking better this morning after trimming some leaves off last week.

My 12 tomato plants are loaded with green tomatoes. My lavender smells amazing. Sunflowers are so pretty too.

Spontaneously decided to put a little herb garden in next to my butterfly garden. Not that I know what to do with 1/2 of these but it’s a nice addition to the garden.

My friend came over last week and cut dill, Rosemary & Basil from the herbs in the back garden.

Back row is parsley, Italian oregano, garlic chive. Front row is sweet basil, rosemary, thyme.

Gonna have lots of ‘maters soon!

Awe. Thank you for your kind words. That’s so sweet. Imma nerd, I admit it. LOL! Gardening, cooking, food prep along with quilting keep me busy.

I worked in the garden this morning. Picked strawberries, green beans and sugar snap peas. I’m going to blanch them and put them in the freezer.

Not sure what happened to my sugar snap peas. Powdery Mildew maybe. Gotta do some research and try again next year. It’s too hot here now to plant them again.

My mornings work is done!

2 bags each of green beans and sugar snap peas. The beans will continue to produce. I’m hoping to get a couple more bags worth before the flaming heat kicks in here.

Hey PN, do you blanch your beans and peas before you freeze them, or can they just be washed off and fresh bagged for the freezer?
I blanched them in boiling water for 2 min. Then dropped them in ice water for 2 min. Laid them on paper towels and patted them mostly dry. It was quick and easy!
