All the holiday food is gone save for some cookies. So I went to the big monthly food pick up this morning. They gave us a lot of things I didn’t even know existed like vegetarian bacon. Kiddo has lots to choose from for the week. My friend is going to take the things we can’t eat like mango yogurt, coconut yogurt, mushrooms, etc.

I don’t need 7 bottles of lemon aioli so I’m going to pawn those off, plus it has ginger so I can’t even eat it. The helper said she was giving me a ham. But that’s Prosciutto and I don’t think I’d eat it. Don’t you need a meat slicer for that?

There were these ladies practicing hula dancing (no idea why) and a husky was laying there. Maybe he was their security detail? Ha!
wow that is a lot of food....and 4 kinds of ice cream! Lemon aioli looks good...says to put it on "everything," so maybe you can use seven bottles... well, the girls. (Husky: "Mom, it's warm here; can we go to New England now?")

I just realised that you all probably don't know what a lamington is. I think it's an Australian thing.


The general thing is to use sponge, but my mum always used butter cake. She didn't fill hers either, but it's common for them to have a thin layer of jam and cream at the midpoint.

The chocolate on the outside isn't buttercream. The process is more like, say, crumbing a piece of meat. The cake goes into a liquid mix of cocoa powder and water, when all sides are covered, it immediately goes into dessicated coconut until it's covered in that, and then it goes on a wire rack to dry. So you have a wet hand and a dry hand, like you do for crumbing a piece of meat.
I had heard of these before but kind of "in one ear and out the other"- a day after reading your post, we were out dog-walking-met another dog named "Lamington"- his human dad was AUS so they were describing the cakes to us....

I made Hoppin John with black-eyed peas cooked with some smoked Boston butt and rice. I also made cornbread and mixed greens (turnip and collard). We added all of it to a bowl and sprinkled liberally with pepper sauce. It's our traditional good luck for the coming year meal I make every New Year's.

I hope 2025 is full of peace and love and the answer to mysteries for us all here. Happy New Year all!!!

Congratulations on the grits!

Potentially really dumb question: Are grits and polenta essentially the same thing?
Not a dumb question at all. They are both made from ground corn, but grits are softer and smoother, and they have more corn flavor. Grits are made from white corn and polenta from yellow corn.

Not dumb. They're related! Polenta is Italian whereas grits are Southern.

Both are essentially corn but grits are hominy corn which is white. Polenta is typically precooked and formed into a type of dough whereas grits are typically uncooked ground white corn. To me the white is much more bland whereas the yellow tastes more like a taco shell or corn chip.

We can get white or yellow grits here in the southern US. White are more common. We eat our grits with butter, salt, and pepper. Unless we make cheese grits. I like a splash of cream in those.

Excellent! Creamy grits are a perfect comfort food, especially on cold days.
Right?! I'm so happy lol (however they did cost me $20 :confused: )

Normally I add salted butter and garlic powder to my grits but this time I bought a stick of garlic butter. Hopefully it works out the same.

There really is nothing like a bowl of buttery grits! I like to add scrambled eggs on the side for protein if I want a quick meal.

Are shrimp and grits good? On cooking shows, they talk ALL the time about shrimp and grits. (I'm eyeing a container of Quaker grits as I type, lol)

I can't see how it would be bad?

Most of the recipes were not what I expected. They call for ham, tomatoes and peppers. I'd had assumed it was cajun shrimp with grits which seems much simpler and straightforward. Shrimp sauteed with peppers, onions, cajun seasoning over buttered grits sounds delicious though.

*I wanted to add that the grits are only a big deal bc they're hard to find where I live in Canada. At least Quaker brand is not readily available in stores.

I love shrimp and grits but I’ve never er made them myself, only had them in restaurants.

I think the shrimp and grits I’ve had are just grits made with cream, garlic, onion, Cajun seasoning, and shrimp.

I don’t follow a recipe with mine and they turn out good. I make grits. When they are done, I add garlic, cream, butter, cheese and Old Bay. I steam the shrimp to cook them, seasoned with Old bay, serve the shrimp on top of the grits. Pretty good for not having a recipe.

It is chilly here compared to normal. That blizzard coming across the country will arrive here soon too. It makes me want comfort food. Stay warm and well! A friend in GA has Covid, my aunt & uncle and 2 friends have colds. So I'm hibernating. Quilting & Cooking.

I made vegetable rice soup yesterday. The day before I made gluten free Blueberry Cream Cheese bread. Today I made breakfast casserole (tater tot crust, eggs, veggies and cheese).

My niece's baby boy is due this month. She is a Boston Red Sox fan. I'm almost done with her baby quilt. Staying in and staying warm here in SWFL!

That quilt is awesome!

I knit, spin, crochet, sew, and cross stitch, but I've never done quilting.

We are snowed in today, 9” so far and still snowing. It is rare for us to get this much snow all at once. My pup isn’t happy and it is a challenge to get him to go off the patio.

Staying home today and will be digging in the freezer to find dinner.

It is supposed to get down to 3 degreees tonight. Brrrrrr.

I made a pot full of old fashioned rice pudding. Perfect comfort food, served warm.

It uses staple ingredients that I always have on hand: rice, milk, eggs, sugar, vanilla and is easy to cook.
