Food and Recipes while under Coronavirus quarantine #8

Topic of discussion at the hair salon yesterday:
"For subscriber's only" article addresses the rising cost of eggs due to bird flu. About 1/3 of the Michigan chicken population succumbed to bird flu in the last year or were euthanized. All Michigan eggs will be cage-free in the future.

Are you being affected by high egg prices where you live? $4+ for a dozen eggs in these parts - nothing fancy, just regular eggs. Free-range, extra-large, brown, Eggland's Best, etc. prices higher.

Our local Costco, Trader Joes, Wal Mart & Grocery stores are limiting to one or two cartons - per my local facebook groups. The other day I looked at the price for an 18 pack of organic brown eggs at WM, $7.75.

We have chickens, so I don’t buy eggs. We’re getting five a day right now. Girls are on their annual vacation schedule, which typically ends in April or so when days get longer and weather warms up.

We've barely been able to get eggs at all for months in south eastern Australia. It's not country wide, because mum visited Darwin and said there weren't shortages up north.

In the area where I live, Trader Joe’s actually has the cheapest egg prices. I was just there and a cage free dozen were $3.49. Costco and Aldi’s eggs cost more.

I think it will appeal to those who don't like sweets as much, but still want a snacky treat.

My partner likes sweets, but she is perpetually frustrated that easy gluten free, low FODMAP breakfast options are unrelentingly sweet, not savoury. She's been resorting to either peanut butter or miso paste spread on gluten free toast.

MOO
Have you ever had Chinese congee, or jook, as I call it? It’s something I like to eat any time of day. If your partner likes it, it might be a good savory breakfast choice, maybe?

I don’t really have a recipe, but, in a nutshell, it’s rice cooked for a long time in broth until the rice gets kind of melt-y. So, like a rice soup, but it gets like a porridge consistency from the ‘overcooked’ rice. Many things can be added like chicken, green onions, a dash of soy sauce, sesame oil, etc.

Congee can be made ahead and kept in the refrigerator—then scoop out a portion to reheat, for ease.

I found a recipe online that says it is Low FODMAP Congee, if interested. :)

In the category of “Now I’ve Seen Everything” Progresso has a new product, Soup Drops.

I heard someone who tried them said they taste like cough drops, only made from soup.

In a world dominated by on-the-go snacks and bite-sized indulgences, Progresso's Soup Drops may just be the ultimate innovation—or perhaps, the pinnacle of convenience culture. This reimagining of the classic comfort food, now transformed into a portable, candy-like format, begs the question: have we taken our love for ease and accessibility to its limit?
Yesterday, I was watching the news. Three anchors tried the soup drops on-air. Two of the anchors had to spit them out. The last anchor was able to finish hers, but not very high reviews. The look on all of their faces was priceless. On-air experiment bombed!

The idea just does not appeal to me, at all. I don’t see how it can substitute for the real deal, if that’s what they’re going for. Part of the experience of eating of soup is its hot, slurpy goodness, :p. Other than for the novelty of it, I can’t see buying this!

When I was growing up my mom used to make Mrs. Grass chicken noodle soup for us for a treat. We loved it, more than the home made chicken noodle soup she made.

Mrs. Grass used to have a Golden egg flavor ball in each packet, but around 2016 they eliminated the flavor ball.

These soup drops remind me of the flavor ball in Mrs. Grass soup.

Sky-high here, eggs are usually about $2/dozen. Now it's like over $2.50-$3.50 for half a dozen. Cheaper if we do the dozen, still over $4 (and that's from a reasonably priced grocery around here, not the one that's priced like we're in Manhattan.)

Eggs are around $7 per dozen in the stores here. I’m very fortunate to have a relative that keeps me supplied in free range organic eggs for free. Her hens are pets and she raises them for fun. She shares her eggs with friends and family for free.

I'll share it with her. She'll have to modify it a lot. While some folks are fine with small amounts of things like garlic, leek and celery, she really isn't, and that tends to be where a lot of the flavour comes from. We have a very large spice cupboard though, and we're not afraid to use it.

Honestly, when I make it, I don’t put any of those things in. With mine, it’s just chicken broth or stock and rice. I do put a small knob of ginger root in there as the mixture is cooking, to add some flavor. That’s really all I do. Oh, and strips of chicken.

For the serving, people in my household usually like to add a tiny bit of soy sauce, sesame oil, green onions, cilantro. This probably sounds funny, but I’ve even added crunched up pita chips! lol. So, to me, it’s really a plain porridge that gets more tasty by the toppings or mix-ins you put in your serving bowl.

Here’s a more basic recipe:

My great aunt used to bake a depression-era cake called “Eggless Milkless Butterless Cake.”

With the price of eggs we might be using this eggless recipe again.

I was driving through a rural area today on my way to train at a company in northern Indiana. I passed an Amish house that had a sign in the front yard that said, “Farm Fresh Eggs $3.00 per dozen”

That was a great price!

Eggs 7.29/dozen at the local grocery, and I'm in a quasi-rural area. (Just over $4 elsewhere, tho-- thankfully!)

  • #337
Well, I was going to post my local price for comparison, but as per usual right now, they're all sold out so I can't even tell you what price they'd be if I could get any.

We have enough right now, though. Mum found an eighteen pack when she went out the other day, so we're sorted for the minute unless partner gives into her urge to make lemon curd and blows though a bunch in one go.

This egg thing is driving me crazy, and we actually don't really use many to begin with, really. I put poached egg on salad, though (yummy). I'm trying to avoid eggs as much as I can while the price is so inflated, although we'll probably be able to score a dozen this week because we can go to the normally priced store. I read in an article that the prices "should" fall in I think they said the second quarter of 2025. (Checking.) Yes. That's the prediction. But only maybe. If the bird flu thing gets worse, maybe not. Saw some egg substitute ideas on here already, and grateful for those. Looking for more here... Mmm. I mean, cheese? I could do more cheese on the salad. With maybe a warm vinegarette? That could work. HMM, and warm homemade croutons. Could always try a panzanella salad, I've made things close but not authentic panzanella. OR just like do a regular salad and add breaded fried chicken crumbled up.

There's a black market for cigarettes now, so I hear. Hope we don't end up with a black market for eggs, LOL.

 They sound like a really bad idea IMO. LOL Not sure if this is the news clip you saw, but it's pretty funny. I love when the gal says at the end "It's not that bad" and the guy says... "It's not that good either". But the look on the guy in them middle's face is priceless!
