This Weight Watcher post popped up on my Facebook page. So I decided I’d try to make it today.

I used 2 packages of chicken breast because it’s all I had on hand.

I used a 1/2 pack of taco mix. I don’t know the difference between chicken taco seasoning and regular taco seasoning. I don’t like a strong flavor. I figured what I had was enough.

I had a can of diced tomatoes with green chilis. Big mistake! They are too spicy.

So I mixed it, warmed it and had to have sour cream on each bite to tolerate it.

Later, it occurred to me, that I could add a can of no salt diced tomatoes to dilute the flavor.

I’m hoping the flavors will meld overnight and tomorrow, I’ll be able to tolerate the spice.

I have found that diced tomatoes with green chilis vary in spiciness from one brand to another. I usually buy Red Gold diced tomatoes with green chilis, which are very mild. But when I have used other brands some are quite spicy.

Red Gold is a local Indiana brand, and I always use their “Fresh Squeezed” tomato juice. It is not from concentrate and tastes much better (IMO) than other brands which are almost all reconstituted.

I would not buy tomatoes with green chilis but these were in the food pickup. I thought since the dish had taco seasoning it would be a reasonable addition. It probably is for most people, it’s just too much for me.

I drained the second can of tomatoes so it wouldn’t make the dish too soupy. It probably would be good stuffed inside soft tacos or maybe with nacho chips.

My kids have always raved about Rita’s an ice cream kinda shop. Their Dad took them in TN. But I had never been to one until tonight.

Well, let me preface this with a fact: I did not get the ice cream gene. I’ll eat it but rarely and usually coffee flavored. They had coffee custard so that’s what I got. I do not like custard either. But I ate it because my friend treated me to dinner & dessert for watching Neeko. (The furbaby in my profile photo)

I will likely not go back but I’m certain it’s just my genetic make up. I didn’t like anything there. My kids think I’m weird because I did not get the French fry gene either.

Rita's custard is pretty tasty to me, but not the most nutritious thing of course (fat, sugar).
If you liked creamsicles as a child, you can get orange and vanilla and relive that.

That looks so good.

If at the grocery, be sure (jmo) to check out the Blue Bunny Soft, it is soooo yummy, we love it. So far, we had the little pint size like chocolate sundae I think? It has fudge and light chocolate running through it. And we had the big size cookies n' cream. Grocery ice cream usually drives me crazy, it goes so hard in the freezer. This stuff's always soft, and we go through it so fast, it doesn't even have a chance to harden up.

At one time, I had an ice cream maker, but the little basin or pot for it cracked, so I've been out of an ice cream maker for a long time. If I get another one, I think I'll do soft serve.

Ok so a weird item in the Publix seafood case. A burger with salmon, bacon and cheddar cheese. It gave me pause because I think Monterey Jack cheese would complement the salmon better.

I bought a piece of salmon for two meals. I’ll bake it and have it with white rice and black beans. Then I’ll eat it cold the next day, maybe on a salad, maybe with scrambled eggs and toast.

No; just no. Bagels with cream cheese and lox is a delicious fish/cheese combination, but salmon with cheddar cheese? No way. We have had whitefish, pickerel, and orange roughy with panko and Parm crust, but the cheese component is minimal and barely noticeable. Bacon and salmon are a good combination: There aren't many foods that aren't better with bacon :D

I’ve never had bacon or cheese with salmon, and I usually eat salmon twice a week. So I’ve had it prepared many ways. But neither bacon nor cheese on salmon sounds appetizing to me.

JMO of course.

My oldest and her boyfriend are in London on vacation. She has to be gluten free. That child didn’t even get out of the airport this morning and had found GF cinnamon rolls! LOL! That is just so her!

They went to a GF bakery and she had a chicken handpie and a chia tart for her afternoon snack. He had a beef and lamb handpie which I think is the 1/2 eaten pastry looking thing. They got a broccoli quiche for her for breakfast.

This is where they went for dinner. They said it was amazing. She didn’t identify any of the dishes. But she said I would love the zucchini fritters. Most of it looks delicious to me.
