^ Carrot cake is a favorite, but I don't necessarily like the fuss of baking a cake. I've made carrot bread using a zucchini bread recipe and substituting carrots for the zucchini. Here's a recipe for carrot bread. Much easier than baking a cake and no need to frost. Freezes well, too.

Thanks for this! I absolutely love carrot cake but I've never made it. I'll try this out.
I have found that Honeyed Carrots freeze well. I peel them, then cut them in strips about 3” long. This allows seasonings to reach the bitter center. I roast them at 400 deg. I stir them 1/2 way thru and add a little real butter to keep them moist while roasting. When they are fork tender, I drizzle a little honey and stir them.
Honey isn't something partner can really have anymore because of FODMAP issues, but I see there are a lot of similar recipes that use maple syrup. I might try one out, see if it's any good. Thanks!

This years Thanksgiving will be a first. I normally host Thanksgiving, but this year my daughters decided they will host. I am happily passing on the baton!

Their original plan was to get a Whole Foods prepared turkey and just reheat it. Then my daughter made an executive decision, we are going to get a Popeye's deep fried turkey. At first I thought she was kidding, but she was dead serious. The bird is deep fried and flash frozen. You defrost it for several days and reheat on Thanksgiving. After I got over the shock I started googling reviews on the Popeye's bird. Surprisingly it got good, I'll even say rave reviews. I'll give you my review after Thanksgiving

I am making swiss carrot casserole - carrots, swiss cheese, a little sherry and breadcrumbs. I am taking Rhodes dinner rolls to bake there. Also making my favorite pumpkin pie - the secret is the pecan crust and Green beans with slivered almonds.
I'm sure I'll end up making more last minute.

I told my husband about your post yesterday. We both thought it was hilarious! Popeye's must be regional as I have never seen one here. There are some Church's Chicken restaurants in Detroit but not in suburban areas. I hope the turkey is delicious and that your daughters have a successful family Thanksgiving feast.

We went to Nino's yesterday for the rest of the food items that we need for our post-Thanksgiving dinner next Saturday. We scooted around the store quickly and didn't look for anything not on my list. The only thing that we didn't get were dinner rolls for the turkey meatballs because the sell-by date was the 27th. DH can pick them up on Friday when he goes swimming. The store shouldn't be crazy busy after Thanksgiving like it will be today through Wednesday. We went to Mexican Village for dinner and have leftovers for tonight.

I have mostly seen Popeye’s in city locations but we recently got one in the suburb where I live.

I had no idea they had turkeys! Cajun style!

We have no shortage of fast food chicken here….KFC, Zaxbys, Popeyes, Church’s, and Bojangles, can’t forget Chik fil a either.

Fast food chicken places are super popular in the area where I live. We have all of the above plus a couple of new ones they opened within the last year: Raising Cane and Slim Chickens. A few Joelle’s hot chicken too.

There are SEVEN Chick fil A locations within 15 minutes of my house.

I seldom eat fast food but I do observe all the drive-thru lines and parking lots as I travel around.

Even with 7 Chick Fil A locations in fairly close vicinity to each other, the vehicles in the double drive-thru lines usually wind through the parking lot and sometimes out to the right lane in the street, waiting to turn in. The parking lots are completely full.

Raising Cane seems to be the next most popular, but possibly because it is new. Some of the other chicken places are rarely busy. I think KFC is the least popular.

The only fast food within 100 miles of my town is a Subway the next town over. And a small coffeeshop attached to our hotel that is a Starbucks affiliate.

I stopped eating beef over twenty years ago and soda is only a very rare treat but the non-beef options at fast food places would certainly tempt me (my tastebuds, not my brain 😄 ) if they were close by. When I travel (maybe once a year) I indulge my craving for chicken sandwiches/tacos etc. I tried Popeye's once when I passed one on a trip, thought it was pretty good!

It's true. There aren't many chicken places in metro Detroit. A few KFCs and two Chick Fil As that I know about - not really close to me.

We have a couple of sit-down restaurants that have amazing fried chicken. They fry the chicken in huge cast iron skillets that are over 100 years old, and they claim that the secret to their fried chicken is these cast iron skillets, well seasoned after frying chicken daily for 100 years.

They serve the chicken, as well as delicious mashed potatoes, chicken gravy, old fashioned green beans, and all their other homemade sides “family style” in large serving bowls to pass around your table.

We have a local gas station here with a restaurant in it. It’s a meat & 3. They have the best fried chicken I ever ate. Everything they cook is delicious, our thanksgiving dressing and gravy will be from there. They cater.

I have found some excellent restaurants attached to gas stations, or inside gas stations, in my travels.

My second attempt at beef stew turned out ok. I needed to add more carrots & potatoes. I added 1/2 an onion and fresh rosemary. When I browned the meat I used garlic, butter and flour in cast iron.

I froze half of it for the next cold spell. I bought the most inexpensive beef I could find. It is more flavorful and tender with a higher quality of beef.

We’re getting a cold front Friday morning. Might bake some biscuits to go with it then.

Not travelling anywhere! Not a holiday weekend here, either. Just staying in. Right now, watching Lord of the Rings and playing Assassin's Creed Valhalla, so, a lot of virtual travelling if not physical. :)

I'm being chauffeured to Yard House Restaurant by my best friend to celebrate Thanksgiving. I'll likely not get the $30 special meal as that is pretty pricey for me. Plus I cannot have some of the foods.

My beef stew was so much better today than last night.

Beef stew always tastes better the next day!

I wouldn't order the turkey special, either. I don't like foods all mixed together on a plate - doesn't look appetizing to me. This is probably one of the reasons why I've never been a "casserole queen". Enjoy the dinner with your friend.

Stew, and any kind of spice cake. There's a reason good fruit cakes are baked weeks to months in advance.

Many, if not most fruitcakes have some type of booze in them - usually brandy or rum. That might be why they taste better :D
