Food and Recipes while under Coronavirus quarantine #8

It snowed lightly all night and all morning today. The snow is so light it looks like powdered sugar as it is falling, deceptive because it is definitely piling up with at least 8 inches so far. We haven’t seen a snowplow yet.

Overnight temperatures here are going to fall well below zero and it is supposed to stay bitter cold for days, so this snow is going to be around for awhile.
SO bad here. Freezing, snow, the bathroom pipes almost froze, someone upstairs, I think one DID freeze, and water was pouring down onto our floor through a light fixture, yipes! (And that was after it shut down our power, thankfully only briefly (at least for most areas.)

Thankful we got prepared to the extent we could, didn't have to cook much today, had frozen cheesesticks waiting with Mezzetta marinara, love Mezzetta. Love their jarred peppers especially, like the sliced hot cherry peppers, great on sandwiches.

VERY bad on the weather this year.

When it gets this cold I have to keep the water running in one of my upstairs bathrooms or the water pipe freezes. We had the unfortunate experience of water pouring down through a light fixture the first year we lived here.

I’ve had a plumber, a contractor, and an insulator out to look at that plumbing to see what I can have done to keep it from freezing. Nothing had worked. Everyone just agreed that since that bathtub was against the front wall of the house on the 2nd floor and the house faces NW it is just probably going to freeze if the temperature gets below zero, esprit the wind is from the NW.

Our water is trickling out of every faucet in the house right now, LOL. And just happy to hear it trickling. Once the pipes freeze entirely, it's really, really difficult to thaw them. We caught it this year with still just a little trickle managing out of the bathtub faucet, so those pipes were almost frozen solid in the bathroom-- but not quite. Much easier to get it thawed with any, any kind of movement, jmo. Because one year, they froze all the way through, and that was a much lengthier and laborious process in "freeing things up."

I helped my friend, help her daughter move into an apartment today. I have a Honda Pilot, big & boxy vs her little sedan plus my friends Jeep.

So we are meeting up at Demetrios for dinner. She said we’re going for burgers! But that menu is mighty enticing….. might need some pasta.

we have lots of snow.... I tried to shovel it for about about hour but it kept snowing and drifting so I never felt that I was making any progress. outdoor birds were starving. took Mr. Dog out 2x.... the so -called main road had been plowed, which meant there were some tire tracks with only 4" of snow but the other parts of the road were maybe 12"...also sleet bits hitting the small area of my face that was exposed. It got to a balmy 15F so I was OK but not enchanted with the outdoors. During the day, had a bad-for-me apple turnover, tofu and broccoli, cheese and crackers, mac n cheese with high protein high fiber chickpea pasta, and a bit of potato salad and cole slaw.

Lol I have been snacking all day. I made a big pot of healthy vegetarian chili, chopping up lots of fresh red, yellow, and orange bell peppers, onions, tomatoes, etc. But then I snacked all day while watching the snow fall.

We are making satay beef, which is a favourite of our housemate who just got back from interstate.

It is in no way authentic to anyone's cuisine but our own.

The main flavour ingredients are peanut butter, soy sauce, curry powder, a little sugar for balance, and sesame oil.

We're using beef stir-fry strips, carrot, broccoli, zucchini, and pineapple for the bulk ingredients. (Pineapple cuts through the peanut butter, but it also helps housemate absorb the iron from the beef, which she needs because of a blood disorder.)

Basmati rice for the carb.

I ordered the chicken Parmesan which came with spaghetti, a small salad and garlic bread. I ate all of the salad, 3/4 of the chicken, about a 1/2 cup of the at least 3 cups of spaghetti with marinara. Tossed out the garlic bread. So many carbs!

I haven’t eaten there in years and now I remember why. I don’t care for their sauce/marinara. It’s as if they tried too hard. Marinara is light but this was heavy almost like a meatless sauce.

I haven’t ordered lunch for tomorrow!

I wouldn't look much farther than that beautiful bowl of mussels in wine sauce :D

We went to bed shortly after 10:00PM last night after watching local news headlines and weather. Channel 7 was already running the school-closing crawl with more than 500 closures at the time. I must have fallen asleep immediately but was awakened when DH heard noises on the front porch. Snow removal crew was here clearing driveway, steps, and porch. Bright and sunny today but still only in the teens. City plow has been up and down our street a few times this morning. If life hadn't gotten in the way (DH back issues), we'd have been in Fort Lauderdale getting ready to ride the hotel shuttle to the ship for a 10-night cruise. We had booked the Ultimate Balcony Dinner for my birthday tomorrow but instead will have dinner at Ruth's Chris Steakhouse. Stay safe and warm!
