Hickory Chicken update:

We thought it came out delicious! It started pouring rain with lightening so I made them in the oven. I lined a 9 x 13 pan with foil and added a meat rack. I baked them at 375 deg for 30 minutes. Added the sharp cheddar cheese and baked for 5 more minutes. I served them with diced tomatoes on top.

I didn’t need the toothpicks to hold them together. I tucked the bacon under the ends of the thighs, rolled them slightly and set them on the meat rack.

I used boneless chicken thighs, low sodium bacon and Sweet Baby Rays BBQ sauce. On the bigger thighs, I used a full slice of bacon. On the smaller thighs, I used a half slice of bacon. The bacon cooked well but was not crispy. However, when the thighs are re-heated in the microwave, the bacon will cook quickly and likely crisp up.

Our side dish was mashed potatoes that I had added sour cream, butter and Colby jack cheese to. I mixed it together and baked it.

Looks great! Almost everything is better with bacon...and cheese!

The Duke's Mayonnaise Cookbook
This is a new cookbook by Ashley Strickland Freeman. There was an article about it in the Pittsburgh Post-Gazette in August (it was in today's News & Observer but I don't find it online) that I think will be accessible. The story includes three recipes: Tarragon Crab Cakes with lemon shallot tartar sauce, Bananas Foster Bread, and Buffalo Chicken Sliders.

What’s the secret to preventing the bacon from getting overcooked & cracking off? Do you wrap after chicken almost done? I’ve made a mess out of everything I’ve tried to grill with a bacon wrap. Clearly I’m screwing some step up!:confused:

I haven't ever made bacon-wrapped chicken thighs (will try soon), but I make bacon-wrapped shrimp. I put the bacon strips on a sheet pan with rack, put it in a 375* oven for 5-6 minutes - just until it starts to brown and crisp. Take bacon out of the oven and let it cool enough to handle. The bacon will be pliable enough to wrap around the shrimp. Bacon gets crisp while shrimp roast for another 5-6 minutes. Serve with cocktail sauce or Remoulade. Fabulous appetizer!

Cant help with the bacon MJ, dont think I've heard that over here.

Autumn has arrived in England, rained all day. Fire is lit and on the menu tonight is smoky sausage casserole (added smoked paprika, brown sugar and a dash of Worcester sauce).

Apparently there is also English bacon & Chinese bacon among others!

I always think of Canadian bacon as the pre-cooked round ham you eat on eggs benedict.

And regular bacon the juicy, fatty strips to eat on a BLT. Or anything. All day long, every day. This would be the only meat that would make me fail vegetarian lifestyle.:D

Canadian bacon is more like a thin round slice of ham. It is one of the components of "Eggs Benedict", a popular brunch item. Canadian bacon comes in a tube or sliced in a deli package. My dad was Canadian and always brought home Canadian and/or peameal bacon when he visited family across the river. Peameal bacon is smoked (I think) and has a mealy crust.

Made apple butter last night in the crock pot. Today, we woke up to the best smelling house! I canned the apple butter in small jars, for Christmas gifts. (Canned same as applesauce).

My mom didn't make homemade apple butter, but we always had apple butter (honey butter, too) when we were growing up. We spread it on toasted Bays Buns (English muffins). Thanks for sharing the recipe. I have lots of apples and have been debating about how to use them.

Thank you for your description. You know, I have never seen bacon in a tube, or sliced in a deli package. Maybe it's a regional item that just has never hit the stores in these parts. We have peameal bacon. What a dreadful way to ruin perfectly good bacon.

But wait ... we have something we call "ham" in a tube or sliced in a deli pkg, so maybe that is what is called Canadian bacon on the south side of the border.

Here's something you can make with your apple butter.

Apple butter pork tenderloin.

I don't add any spices since my apple butter is already nicely spiced up. So it's just a matter of slathering apple butter on your tenderloin, wrapping it with bacon, and slathering some more apple butter on top.

Bake until the centre reaches 145 degrees F (65 degrees C), about 30 minutes.

Let it sit for a bit, and then slice and serve.

I have an apple pie recipe that has custard in it. I’ll have to dig it out.

I found the apple pie recipe I mentioned earlier. Not exactly "custard" but close enough.

Apple Pie with Creme Sauce

Pastry for double-crust pie
3/4 to 1 C sugar
1/2 tsp cinnamon
1/4 tsp salt
1 tsp grated lemon rind
2 tbsp flour
6 cups pared, sliced apples
1 tbsp lemon juice
2 tbsp butter

Oven 450

Combine sugar, cinnamon, salt, lemon rind and flour in mixing bowl. Arrange apples in layers in 9-inch pastry-lined pan, sprinkling cinnamon-sugar mixture over each layer. Sprinkle with lemon juice. Dot with butter. Roll out remaining dough. Cut slits for escape of steam. Moisten rim of bottom crust. Place top crust over filling. Fold edge under bottom crust, pressing to seal. Flute edge. Bake at 450 for 10 minutes, then at 375 for 40 to 50 minutes, until apples are tender. Serve with following creme sauce.

Creme Sauce:
Combine 2 slightly beaten eggs, 1/4 cup sugar and 2 tbsp lemon juice in saucepan. Cook, stirring constantly, until thick. Add 3-ounce package softened cream cheese and 1/2 cup dairy sour cream.

You can also make "French Apple Creme Pie" by cutting a 1- 1/2 inch to 2 inch hole in center of the top crust and pouring the creme sauce in the hole after the baked pie stands 10 minutes. Cool completely.

Corn Polenta With Baked Eggs Recipe

I am going to try this. I have all of the ingredients. The reviews are interesting, from, "Wonderful" to "awful".

I will try this polenta recipe sometime in the near future. With its many optional ingredients, the polenta recipe seems easily adaptable to one's personal preferences and tastes.

I would also like to make Shakshuka that is quite popular on newer cooking shows, and I have seen many articles about this vegetarian dish in food magazines in recent months.

We smoked chicken yesterday and pork carnitas. Homemade freshly ground wheat waffles for breakfast. Tacos and pintos for lunch. Dinner is leftovers on nachos. I decided to just make all the meals but breakfast revolve around the smoked meat till it was gone. No one is complaining. lol
