The cranberry-orange bread sounds great, especially when baked in that beautiful pan!
My late mother would make a molded cranberry-orange salad for the holidays, usually with pecans and grape halves in it, sometimes chopped apple. She used an old-fashioned food grinder to grind the fresh cranberries and the unpeeled orange. This was pre-food processor times. She used individual molds so we each had our own, served on lettuce on a small plate. Very tasty and refreshing!
I made it a couple times but thought it was too much work and messy to make. A food processor would make it much easier.

I don't get alerts for pages as I have too many that I follow. Instead, when I log in each day I click to one page of mine of "watched threads" and can view them all and choose! And then right click and open new tabs to view those I'm interested in (too many old cases which nothing going on, and months/years of posts I don't follow regularly)
I cannot even imagine getting alerts and how that works. Glad we all have available what works best for each of us!
Breakfast Casserole just came out of the oven and smells so good! I’ve posted the recipe before but in case you missed it, it is below. It was a cool 75 degrees this morning here in SWFL.
Spray a 9” x 13” glass baking dish with cooking spray.
Line it with flat tater tots (Ore Ida Crispy Crowns).
Mix together 14-18 eggs or use a 32 oz carton of egg mix.
Add to the eggs:
2 cups of grated cheese (any kind)
2 cups of diced veggies (tomato & spinach is my favorite)
1 cup cooked crumbled sausage (Jimmy Dean turkey sausage)
Stir gently to blend then pour over tater tots. Bake at 350 deg about 45-50 min until the edges are lightly browned and the center is almost set.

Ore Ida Mini Tater Tots work well too. When my oldest was at UVI, she couldn’t get tater tots. She’d buy hash brown patties and break them up in pieces.Also, I can’t always find the Ore Ida Crispy Crowns do I usually use regular Ore Ida tater tots, and they work fine. I have tried some store brand tater tots and they tend to fall apart so I prefer Ore Ida.
No, I never assemble it in advance. It’s so easy to make, I cook it immediately. We refrigerate it and it generally doesn’t last more than 3 days. If we need a high protein snack, we’ll heat up a square.Did you assemble the casserole this morning, or do you let it set overnight in the fridge? When I make stratas, I usually make them the night before to let the bottom layer (bagels, bread, English muffins, potatoes, etc.) soak up the custard. The best one I ever made was a bagel, lox, onion, tomato, cream cheese version - the components of a typical bagel & lox plate. "Breakfast" casseroles are great for any meal![]()

My current favorite uses sautéed onions and garlic layered on top of the tater tots, then 2 cups (total) of chopped red bell peppers and tomatoes. Then I use 3 cups of shredded Mexican cheese blend and 12 beaten eggs. I stir a tablespoon (or more) of hot sauce into the mix.
After baking I snip some green onions on top.
I serve this one with sour cream and fresh salsa on the side.
I have used raw potatoes, grated and lightly cooked, like half-cooked hash browns. This is actually my favorite way to make a breakfast casserole but the shortcut of using tater tots is much quicker.
