Telegraph reporter Victoria Ward has spoken to Jack Applebee, 24, who was managing the family's eponymous seafood restaurant in Borough Market when he came eye to eye with the machete-wielding attackers.
"It had actually been a really good night, we had a lot of friends and family in, a lot of big tables.
"And then, from nowhere, I was outside having a cigarette and hoards of people were suddenly running down the street. There was a girl shouting 'they've got a knife, they're stabbing people, run, run, run.'
"I pulled her inside and shouted at everyone to get to the back. It's an open fronted restaurant - no door or windows, so some customers were pretty much on the street.
"I turned back to get the keys for the shutters and as I did, I saw three men standing right there on the street with machetes.
"One of them looked straight at me and then past me inside the restaurant and it was obvious he wanted to get in. He said something to one of the others but for some reason, they decided to move on.
"One of my colleagues kept a look out for me while I tried to get the shutter down. It was so slow.
"The men were still there. I had to stand right outside with the key to get it down. The key wouldn't come out. It took three or four minutes but it felt like forever.
"Eventually we barricaded the shutter with chairs and the next thing we heard shots everywhere.
"I dropped straight behind the bar and people started screaming. We didn't know who was shooting who.
"We looked out and saw three men on the ground with lasers all over these explosive vests.
"One was outside the Wheatsheaf and two were just opposite us by a fruit and veg place, three or four metres apart.
"We thought they had bombs so pushed everyone in the restaurant right to the back of the building.
"The first gunshots went on for about 20 minutes and they were on and off in separate bursts for about 90 minutes.
"A policeman then shouted at me for the keys. I threw them down and he opened up and told everyone to get out. He told everyone to put their hands on their heads and run.
"I just had to leave the restaurant open and get out of there.
"Everyone really looked after each other. They were helping themselves to drinks, there was a lot of whiskey flying around,I think it was just a way of coping."
The mother of one of the injured has told how her son has been left with a seven-inch scar from the knife attack.
Elizabeth O'Neill, mother of Daniel O'Neill, said the 23-year-old is recovering in hospital.

"He had just stepped outside the bar for a second and a man ran up to him and said 'this is for my family, this is for Islam' and put a knife in him," Ms O'Neill said.
"I'm still in shock. I can't quite believe it's happened.
"These people say they are doing this in the name of God which is an absolute joke.
"They are callous they are barbaric and they are absolute cowards. We will carry on as normal."
