^ Your salmon sounds delicious! This is how we usually prepare cod since it doesn't hold up well on the grill. I make a bed of spinach on the foil or parchment, place the cod on top. Season fish with salt, pepper, and any other seasoning you like on fish. Place lemon slices, tomato slices, capers, sprigs of fresh thyme on the fish. Add other vegetables if you'd like. We usually add asparagus and/or artichokes. Drizzle with white wine. Wrap pouch tightly and place on baking sheet. Bake at 350* for 30-40 minutes until fish is flaky.
I will try your cod recipe! I love fish and vegetable combinations.
 
After 16 days of Covid, I finally tested negative. I was so excited to go to the store. That's how bored I was. I'm still tired but I feel more human again.

So my new little toaster oven is influencing my shopping habits! I bought another box of those cheese stuffed bread sticks. Now I can bake 1 at a time when I have spaghetti.

I looked up a recipe for queso that sounds like it will taste like the queso at Fuzzy's Taco Shop. I want to make enchiladas this week. I'm going to put chicken, refried beans, black beans, black olives, tomatoes and Monterey Jack cheese in them. Maybe saute some onions too since I don't like raw onions. Then, put the queso on top and bake them.

I love enchiladas, they are my fav,i might have to make them this week too :-) i like lots of peppers in mines.

I had the fam over at the weekend and I made steak and haggis pie, its was delicious! I used my grans pyrex plate and it comes out perfect every time! Served it with roasted potatoes and carrots, and buttered cabbage.
 
Dropping in to say "Hello" to my WS foodie friends. I had an appointment this morning after which DH and I went to breakfast at Shine Cafe in Troy where we had been once previously. I had the Dublin - one of the "Benedicts" on the menu. Perfectly poached eggs atop corned beef on a toasted English muffin, sliced tomatoes instead of potatoes, Hollandaise on the side. It wasn't as good as the Florentine Benedict, but I enjoyed it. We've been making an effort to go out to dinner at least once a week and mostly go to Picano's. We know that the food and service are going to be exemplary, and we avoid some venues that tend to be crowded and/or noisy. We're still waiting for the Tex-Mex place to open, but they are running several weeks behind schedule.

Whatever your plans for the upcoming holiday weekend, I hope you will be safe and enjoy good food with family and/or friends.
 
Nice wholesome sausage casserole, with Jersey Royal potatoes, cabbage and peas. I'm not sure why my gravy is so dark! But it tasted delicious.

I made coleslaw last night and added a few new ingredients. I added about 3/4 cup of chopped kale and 1 mini yellow squash from my garden. It was 2 little ones that grew together so a bit odd shaped. I think it tastes good. I was hoping to have a little zuchinni or cucumber too but they're not ready yet. I figured a few extra raw veggies would give it a bit of an update and few more vitamins. I used powdered garlic & onion, pepper and kosher salt for seasoning. I'm not sure what I'll make to go with it, maybe some kielbasa. Altho, I really want a burger.

What's everyone been cooking?
I used to make corned beef, cabbage and potatoes year round. Now I make the cabbage, potatoes, onion and garlic together in vegetable broth. My youngest and I love it. She doesn't eat meat anymore and I can't have that much salt.
 
DH made our monthly trip to Costco today. He spent almost $300 for assorted food and household products. Some items were featured specials, but most were things that we needed. We'll go to Nino's tomorrow for Memorial Day weekend groceries. Holiday specials are the usual suspects - NY strip steaks, burgers, ribs, chicken parts, chips, salsa, 7-layer dip, desserts, etc. Due to high gas prices, I think many folks will be staying close to home instead of heading "up north". My brothers will come for dinner on Saturday, but we have no other weekend plans. Be safe and well.
 
We had enchiladas verdes, with corn tortillas, lightly fried before oven, to avoid they go soggy. The sauce is mild and delicated, made with poblanos, bit of cilantro, and vegan substitute of crema. Filling is chicken, queso, oregano and some onion. so delicious

i do put less sauce over the top of my enchiladas as i like them to go crispy in the oven. Hey what is the scrpit with cheese these days, doesnt it go all melted gooeyness? I had a pizza the other week and i sliced some cheddar and added it to it, and it was the same, it didnt melt the way cheese used to ha :-) and kind of the same with the enchiladas, even though the cheese was grated. This was two different brands of cheddar btw, what is happening to my cheese :-) i suppose mozerella would be fail safe for gooeyness, but cheddar has much better flavour i think.

I use Monterey Jack for baked enchiladas, I shred it off a block.

I don’t buy shredded cheese because it doesn’t melt as well or taste the same as freshly shredded. I think there are additives in shredded cheese to keep it fresh and to keep the shreds from sticking together.

I like my baked enchiladas crispy on top too, then I serve with shredded lettuce, diced tomatoes, fresh salsa and sour cream on the side.
 
DH and I will go to Nino's in a little while, after which we'll have dinner at Picano's. It's not too warm today to leave groceries in the car for an hour or two. We're doing Memorial Day cookout "lite" - keeping it simple. Burgers, oven fries, pasta salad, 7-layer dip with tortilla chips, potato chips with Ranch dip, chocolate cake. Enjoy your holiday weekend!
 
I hope everyone is enjoying the holiday weekend. My brothers came for burgers on Saturday. Last night, we had BLTs, but we haven't planned dinner for this evening. It's going to be hot today - close to 90 - so whatever we have will not require much cooking or oven use. Maybe we'll just get takeout :D

The new Tex-Mex restaurant, Meshico: Tacos and Tequila has been open for about a week, but the official grand opening is tomorrow - Taco Tuesday. Reviews have been favorable so far. Hours are limited as they are having staffing difficulties. Maybe we'll go later in the week.

I made taco meat a month or so ago, so I took it out of the freezer. I harvested Bibb lettuce and Romaine lettuce today. Taco Salad for dinner!

Taco salad was delicious. It hit the spot. I have enough ingredients to have it tomorrow also.

I haven’t made my enchiladas yet. I was planning on making them the week I have foot surgery. That way at least 1 of the kiddos would be here. Still waiting on a date due to so many health issues that have be to be addressed beforehand.
