My uncle taught me to make a spaghetti squash dish tonight. I’ve never really liked it because to me, it’s bland. But this was delicious. Now I know what I’ll make!
He cooked 1 lb of sweet Italian sausage. He used a little olive oil and there wasn’t a need to drain it. It was very lean. In another skillet he sautéed a green pepper, an onion, 1 teaspoon crushed garlic and 3 stalks of celery. When that was done, he added a can of diced tomatoes with green chilis and the cooked sausage.
He put the spaghetti squash in water and baked it 40 min. He pulled the squash out of its shell, mixed all the ingredients together. We sprinkled Parmesan cheese on it.
